October 24th at 2 p.m. Montana Crunch TimeMontana Crunch Time debuted last October as a way to support Farm to School initiatives in Montana. On October 24, 2013, approximately 11,000 kids around the state crunched into a locally or regionally-grown apple at 2:00 p.m. The event’s organizers, the Montana Offi ce of Public Instruction, MT Team Nutrition, NCAT, and others, are hoping to increase the number of participants of Crunch Time this year by expanding the scope to include any Montanan, not just students. This event is a great way to introduce local products into your school or institution, as well as educate people about the importance of healthy eating. Swanson’s Mountain View Apple Orchards CORVALLIS, MONTANA
Like their ancestor Charles, who established the orchard near Corvallis in 1909, the Swansons remain diversifi ed. They continue to produce 22 apple varieties on 23 acres–McIntosh is their major variety–along with running a cattle and cider-making business. They produce 12,000 to 15,000 gallons of cider a year, mostly from small, misshapen, or hail-damaged fruit. There are also plans to start a distilling business to make apple brandy, converting a perishable product, for which there’s little demand, into an imperishable product that can be marketed year round.

CIDER CHICKEN WITH APPLES & MUSHROOMS5 tablespoon butter 3 Spartan apples, peeled, cored, quartered 1 tablespoon olive oil 2 pkgs Just Bare Chicken Thighs or BreastSalt & pepper ½ chopped onion ¼ cup Calvados (apple brandy) ¾ cup apple cider 4 sprigs thyme 2 bay leaves ½ cup chicken broth ½ cup heavy whipping cream½ pound crimini (baby bella) mushrooms, trimmed, halved
• Heat 2 Tbsp butter in a large pot over medium heat. Add apples and cook until golden in spots, ~10 mins. Transfer to a plate and set aside.
• Increase heat to medium-high, add oil and 1 Tbsp butter. Season chicken with salt and pepper and cook until browned, ~5 mins per side; set aside.
• Add chopped onion to pot; cook until softened, ~4 mins. Remove from heat, add Calvados and ignite with a long match or lighter. After fl ames die down, return to heat and add cider. Bring to a boil. Reduce and simmer ~3 mins.
• Return chicken to pot; add thyme, bay leaves, and broth. Bring to a boil; reduce and cover pot. Simmer for ~20 mins, until chicken is cooked through, and add apples back to pot halfway through.
• Meanwhile, heat 2 Tbsp butter in a skillet over medium-high heat. Add mushrooms and cook ~8 mins; season and transfer mushrooms to a plate.
• Transfer chicken and apples to a plate and re-move pot from heat. Temper the cream by slowly stirring in some broth, then add tempered cream to remaining broth in pot. Simmer to reduce slightly, then mix in chicken, apples, and mush-rooms. Serve immediately with crusty bread.

Pre-heat oven to 375° Spray 9X9” baking pan or muffin pans. In a medium bowl, combine

well. Add sweet potato and mix well again.Bake in the middle of oven, 25 to 30 mins. Done when the edges darken, get a little crusty
looking, and a toothpick inserted in center comes out clean. Muffins will likely take 15 to 25
minutes depending on size. Make sure a toothpick inserted in center of muffin comes out clean to
indicate doneness.

Ingredients• 1 cup Farmer’s Market Pumpkin• 1 cup whole wheat flour • 1 cup all-purpose flour• 3 tablespoons brown sugar• 2 teaspoons baking powder• 1 teaspoon baking soda• 1/2 teaspoon salt• 2 cups coconut milk (or fat free milk)
• 1 egg• 1 tablespoon vinegar• 1/2 cup semi-sweet chocolate chips• 1/4 teaspoon vanilla extract• 1 teaspoon cinnamon• 1/2 teaspoon ground ginger• pinch of nutmeg• pinch of ground cloves
Preparation & DirectionsIn a large bowl mix together the dry ingredients: flour, brown sugar, spices, baking powder, baking soda, chocolate chips, and salt. In another bowl mix together the wet ingredients: milk, pumpkin, egg, vanilla extract, and vinegar. Slowly add the wet ingredients to the dry. Pour the pancake batter into a heated pan coated with nonstick spray or oil. Cook pancakes for about 2 minutes on each side.Serve immediately with extra chocolate chips, strawberries, or powdered sugar.
