This 2015 Blue Ribbon winning recipe comes from Susan Rossi-Wilcox.
The recipe MUST be followed exactly as printed, with no alterations or changes
permitted. Entries will be displayed on plates provided by the fair. An entry is
four (4) cookies.
794. ORANGE COCONUT MACAROONS
4 cups grated coconut, unsweetened*
1 cup condensed milk
Zest from 1 large orange
¼ teaspoon salt
½ teaspoon cinnamon
½ teaspoon almond extract
2 teaspoons vanilla extract
1 Tablespoon orange liqueur (or orange juice concentrate)
Combine all ingredients until well mixed. Use a tablespoon to scoop out the
mixture and form it into balls or haystacks. It will be sticky and crumbly. You
may have to pinch each macaroon together slightly to make the haystack shape.
Place them on a well-greased cookie sheet about 1 inch apart.
Bake at 325˚ for 13-15 minutes (until the edges are brown).
Be careful, these will burn easily.
*Unsweetened coconut can be bought in health food stores. Sweetened coconut
makes these too sweet.
CHOCOLATE DECORATION
4-5 ounces dark chocolate, melted
The melted chocolate can be put into a sandwich bag; snip off a little of the
bottom edge to make a small opening for a thin stream of chocolate. Use a
cross-hatched pattern to drizzle the chocolate over the macaroons.
