l Statistical Quality Control With the new SQC-XP Balance

Where complicate handling is part of the SQC process, Excellence Plus XP balanc-es will be a revolution. With a big color touchscreen display and the possibility to operate the balance hands-free, thanks to the SmartSens or the ErgoSens, SQC-XP balances allows to store up to 100 articles. The configuration of up to 8 users enables you not only to choose your favorite lan-guage but also to personalize the display. XP is so intuitive that you can quickly use it without any instruction manual. The weighing range of SQC-XP stand-alone system goes from 1µg up to 64kg!

As required by authorities, the process has to be fully documented and trace-able, which is easily done with the SQC-XP offering error-free documentation. By using the optional Bluetooth interface, you can use a wireless bar code reader or even print your results wirelessly. With violation check, the balance will verify for you if your sample is within defined tolerances and gives a warning for each measurement out of tolerances - for more data security.

The transparency of the filling process al-lows immediate reaction and assures that unnecessary overfilling is avoided, which helps save cost. SQC-XP is the most com-fortable way to have minimal overfilling and no underfilling while random sample series and their statistical values are com-pletely documented.

To meet regulatory requirements, statistical quality control (SQC) is required for net con-

tent control of pre-packages. These checks have to be fast, reliable and easy to carry out.

The Secret of Crispy French Fries – an Optimal Moisture Content

Nowadays, potatoes are consumed in many ways. In terms of popular-

ity, French fries clearly are first choice. The Swiss company KADI

knows all the secrets of manufacturing mouth-watering fries.

Besides top quality ingredients and controlled processes, the

right moisture content is key for perfectly golden and crispy fries

– a good reason for KADI to rely on METTLER TOLEDO moisture

analyzers.

Fast results for maximum crispnessThe process of turning potatoes into frozen French fries starts with washing, peeling and cutting. The potatoes then undergo various heat treatments includ-ing blanching, drying, pre-frying, cool-ing and freezing. For taste and texture of French fries the moisture content plays a crucial role and is analyzed at several points during processing. Quality manag-er Niklaus Meyer explains the importance of moisture analysis: “Depending on the moisture content, the frying temperature is adjusted. Only optimized conditions give good quality fries. Potatoes contain-ing excess moisture would absorb too much oil and come out soggy.”

Liquid Fractionof Palm Oils

Palm oil and its liquid fraction, palm ole-in, are consumed in a wide variety of food products from instant noodles and crisps to cake mixes and snacks. The main sup-ply of palm oil is from Malaysia with a production level around 50% of the global demand. The use of palm oil accounts for over 25% of the total global supply and demand in the oil market.

Palm oil is readily digested, absorbed and utilized in normal metabolic processes. Like other vegetable oils, it is cholesterol-free. Having a moderate level of satura-tion, it does not require hydrogenation for use as a fat component in foods and as such does not contain trans-fatty acids.

Fractionation of palm oil Fractionation is a physical process that uses the crystallization properties of triglycerides to separate a mixture into two or more fractions. The two fractions obtained from the fractionation of palm oil after crystallization at controlled tem-peratures are palm olein (liquid oil) and palm stearin (solid form).

The DSC heating curves shown in Figure 1 were measured using the DSC823e and evaluated with the STARe software. The liquid fraction was calculated by partial integration of the melting peaks.

Differential scanning calorimetry (DSC) is a powerful

tool to characterize palm oil used in food products

and for processing. The following example highlights

how detailed information on crystallization and

melting behavior can help maintain product quality.

Palm oils of different origin and fraction-ated palm oils such as palm olein and palm stearin exhibit different melting and crystallization behavior. The results show that the DSC823e can be used to charac-terize such oils and to obtain important information such as the liquid fraction at user-defined temperatures – to guarantee and maintain optimal product quality.
