THANK YOUAt our November meeting, the lodge completed a critical act that assures us a smooth succession as an organization. Handing on the batons of responsibility and filling all 39 of ficer and lead positions, is a major accomplishment. Check your Membership Directory. This does not include all the people that actually work with the supporting, program, special activities, and event chairs. Anyone who has served on the nominating Committee knows it is NOT an easy task!In addition, we should personally thank those who have stepped forth to take a named positionand to fill that position to the best of their ability. There are no small jobs in keeping Stein Fjell viable. It is also signi ficant that there are new names appearing on the list of players. A special thank you to those handing on their batons and working to make smooth transitions.Plan on coming to our Anniversary Lunch in January to celebrate our transition into a new year when we swear in the new Board of Directors and the many supporting of ficers.A special thank you to everyone that said “YES” when asked to step forward in 2020.

THIS RECIPE COMES FROM A FRIEND AND IS GREAT FOR WHEN YOU NEED TO WARM UP ON A COLD DAY.

KING RANCH CHICKEN CASSEROLE

Ingredients

5 Cups of Chopped Cooked Chicken,

(I use fresh and cook it first, it makes the meal tasty)

2 Cups Sour Cream

1 Large Onion,peeled and Chopped

4 Cloves of garlic, peeled and minced

1 tablespoon butter

16 Ounces jarred tomatillo salsa verde, mild or hot

13 ounces Chopped Green Chilies, mild, med, orhot.

Half cup of Cup Cilantro

2 teaspoons ground Cumin

4 Cups Shredded Mexican Style Cheese

20 white corn tortillas

INSTRUCTIONS:

1 Preheat oven to 400 degrees F. Place a skillet over medium heat and add the butter, onions, and garlic. Saute for 3-5 Minutes to soften.

2.In a large bowl mix the sauteed onions and garlic, chopped cooked chicken, sour cream, salsa verde, chopped green chilies, cilantro, and cumin.

3.Cut the Tortillas into 4ths and spoon filling in the bottom of a 3 qt baking dish. Top with 1 cup of shredded cheese.

Repeat layering filling, cheese and tortillas spreading last of chicken filling and cheese on top.

4 Bake for 20- 25 minutes until golden and bubbly. Once finished let it rest for 5 min.

Serve warm.

I have made this recipe several times. Personally I do not care for cilantro but it comes out just as tasty as the original. Hopefully on this cold day if you are able to make it to the store and this is of intrest to you, give it a try. I don't think you can go wrong-

Angela S. Callow-Mosher
