    All this information was getting real heavy for my head.slight head ache and guess what time it was

    only 1230 and we are going for lunch .

    After lunch we had the history about tequila,pulqueh, mezcal.

    The gusano caterpillar is the legendary worm that many believe that has medicinal properties but

    actually it was just clever marketing.

    Jimador,the farmers who look after the agave.(they train to cut the plant fast as they are paid per

    plant if it was by the hour they will take thier time-makes sense)

    Pences, the sharp leaves of the fruit.

    Coa de jima,the shovel like tool is used to cut the pences off the fruit..

    Pine cubiza,the fruit

    Is the agave edible? Nope . Unedible as it is very hard.

    Aquamiel,honey water after fermentation it is called musto

    1st distillation ordinary 2nd distilled tequila.

    Mezcal is fermented agave fruit pulque after distillation it is called mezcal.

    Two category of tequila 51% mixto and 100%agave.

    Mixto is bad tequila as it is not pure the other 49% is the reason behind the headache or bad

    after taste of drinking tequila.

    joven abocado young and smooth ,blanco with added caramel.

    Reposado 2month to 1 yr

    anejo atleast 3yrs

    Extra anejo,(just made in 2006)more then 3yrs.

    Highland los altos sweet.

    lowlands tequila spicy.

    Agave nectar.

    By this time i was slightly dizzy and before the day was over another test then we called it a nite.
