Baked Fillet ofCod, Vine Tomato & Spinach Salad with Red Onion Chutney (serves 4)

Ingredients:4 cod filletsHandful of fresh chives, sageand oregano, finely chopped4 vine tomatoesSmall bag of baby spinach

For the chutney:250ml white wine vinegar250g brown sugar4 red onions4 vine tomatoes

1. Roughly chop 4 tomatoes and the onions, place in saucepan with the white wine vinegar and brown sugar, and simmer on a low heat for 2 hours. Remove and allow to cool.

2. Preheat oven to 180 C, and bake the cod for 5 minutes

3. Remove the cod from the oven, coat with the chopped herbs, and bake for a further 5 minutes.

4. Thinly slice the remaining 4tomatoes and arrange on 4 plates with the baby spinach.

5. Once the cod fillets are cooked, place one on each plate, with a tablespoon of chutney on top of each one.

Since its launch in October 2013, Jabberwocky Market has enthralled visitors of all ages with its unique offering of world-class theatre, played out twice yearly in venues across Darlington.

This March, the popular festival is returning with four days of new performances, all designed to put audiences at the heart ofthe action, as producer Caroline Pearce explains.

“This year we’re bringing together a diverse mix of stories that you simply wouldn’t get to see anywhere else,” she said.

“The line-up has been chosen very deliberately to appeal to a wide age range, from families looking for a quick introduction to live theatre, to the older people and students who frequented events at the former arts centre.”

“What all of the shows have in common though, is their ability to draw the audience in and, in some cases, make them an active part of the story. It’s a unique experience and one we’re delighted to be bringing back to Darlington town centre.”

The Jabberwocky Market, organised in partnership with the internationally-renowned Battersea Arts Centre and with core funding from Arts Council England and the Esmee Fairbairn Foundation, will run from Thursday March 26 to Sunday March 29.
