Half an academic year CONTENT Hygiene and Safety: Equipment used in Food Technology. Using the cooker. Knife skills. Weighing and Measuring. Washing up. Using Flowcharts. Sensory Evaluation. Star profiles. Subject specific vocabulary. Vegetables – the parts of the plant. Safe use of the food processor. Savoury salads – design and make your own salad. Practical lessons: Cheesy Scones, Banana Bread, Crunchy Chocolate Flan, Cheese and Onion Turnover, Pizza, Macaroni Cheese. Salad project: Coleslaw, Roasted Vegetables and Couscous, pasta/rice salad. ASSESSMENTS Evaluations of practical lessons. Use of flowcharts. Practical work. Research project – vegetables. HOW PARENTS CAN SUPPORT LEARNING

The Nutrition Program (Computer program to analyse the nutritional content of food). Main meals – meat replacement foods, cereals and pulses. Practical lessons: Chocolate Chip Muffins, Rock Buns, Savoury Pinwheels, Chilli Con Carne, Bread rolls, Vegetable Pasta Bake, Vegetarian main meals. ASSESSMENTS Presentations on SMES (Social, Moral, Environmental and Sustainability) Issues. Design of Savoury Pinwheels. Special Dietary Needs research. Evaluation of practical work. Practical work. CONTENT Nutrition Equipment used in Food Technology Sustainability e.g. seasonality, organic Vs GM, Love food Hate waste campaign, food miles Social, Moral and Environmental Issues in food production Cooking Skills – Main meals; practical lessons based around fruit and vegetables and link to adapting recipes to suit the season, how to use left overs effectively.
CONTENT Food Hygiene and Safety Food Commodities Special Dietary Needs Cooking Skills – Practical lessons support theoretical knowledge on hygiene and safety. Linked to cross contamination, high risk foods, food storage etc. Practical lessons also ensure students can develop recipes to suit special dietary needs.
