Chocolate Chip Cookies

• Ingredients• • 3/4 cup sugar

• 3/4 cup packed brown sugar• 1 cup butter• 1 large egg• 2 1/4 cups all-purpose flour• 1 teaspoon baking soda• 1/2 teaspoon salt• 1 cups semisweet chocolate chips

• Directions • Preheat oven to 375 degrees. Mix sugar, brown sugar, butter and egg in a large bowl by hand. Stir in

flour, baking soda, and salt. The dough will be very stiff. Stir in chocolate chips. Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until light brown. The centers will be soft. Let cool for one minute then remove from cookie sheet and place on wire rack to finish cooling.

Coffee Cake Muffin

• FILLING:• 1/2 c. brown sugar

2 tbsp. flour2 tbsp. cinnamon2 tbsp. melted butter

• Mix filling and set aside.• MUFFINS:• 1 1/2 c. all-purpose flour

2 tbsp. baking powder1/2 c. sugar1/2 tsp. salt

• Mix dry ingredients. Cut in 1/4 cup butter. Mix:• 1/2 c. milk

1 beaten egg• Add egg and milk to dry ingredients all at once. Swirl in filling. Pour into paper-lined muffin tins. Bake at 350

degrees for 20 minutes. Makes 12 muffins.

Pancakes

• INGREDIENTS• 1-2/3 cups all-purpose flour • 1 tablespoon and 1 teaspoon baking powder • 1 teaspoon salt • 1 tablespoon and 1/4 teaspoon white sugar • 1-1/3 cups and 1 tablespoon milk • 1-1/8 egg • 3 tablespoons and 1 teaspoon butter, melted • DIRECTIONS• This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe

yield of 8 servings.• In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the

milk, egg and melted butter; mix until smooth. • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using

approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

• Ingredients:• 1 ¼ cup warm water (105-115 F)• 1 tsp. of sugar• 3 c. flour• 1 tsp. salt• 2 ¼ tsp. yeast• • Directions:• Preheat oven to 400 F. Add sugar to water, stir until sugar is dissolved, sprinkle

yeast on top, stir until dissolved. Let it sit for 5 min. In mixer pour out yeast mixture & 3 c. flour & salt mix until boil forms. Make into pretzel and bake for 10 min.

• *Do not add too much flour at a time.

No Fry French Fries

• -vegetable cooking spray• -3 large baking potatoes • -1 Tbsp. vegetable oil• -2 teaspoon garlic powder• -1 tsp salt• -1/4 tsp ground black pepper• • • 1. Heat oven to 450 degrees.• 3. Coat pan genourously with vegetable cooking spray.• 4. Scrub potatoes; pat dry.• 5. Cut each lengthwise into ½ inch thick slices, then into ½ inch wide strips. • 6. Toss potatoes on baking sheet with oil, garlic, salt and pepper until well coated. • 7. Bake 40-45 minutes, turning once or twice with spatula, until potatoes are crisp and golden.

Bacon Cheesburger Roll-up

1 pizza crust• 1 lb. ground beef• 4 slices bacon, chopped• ½ cup chopped onions• 1 cup shredded cheddar cheese• Preheat oven to 400 F.• Cook bacon until crisp. Drain fat and break into pieces.,• Cook ground beef and onions in large skillet on medium-high heat until ground beef is evenly

browned, stirring occasionally. Drain all the liquid. • Roll out pizza dough onto baking sheet sprayed with cooking spray. Press into a rectangle. Top

evenly with meat mixture and bacon sprinkle shredded cheese over the meat. Roll up dough starting at one of the long sides.

• Bake 20 to 25 minutes or until golden brown

Taco Seasoning

1 Tablespoon all purpose flour• 1 Tablespoon corn startch• 1 Tablespoon dried minced onion• 1 Tsp. beef bouillon granules OR 1 beef bouillon cube-crushed• 1 Tsp. garlic powder• 1 Tsp. Ground cumin• 1 Tsp. Paprika• 1 Tsp. Chili powder• ½ tsp. onion powder• ¼ tsp. cayenne pepper• ¼ tsp. granulated sugar• 1tsp salt• Notes: To make taco meat, brown 1 lb. ground beef in a skillet over medium. Add seasoning mix and ¾ cup

water. Bring to a boil; reduce heat to medium, uncovered for 10 minutes, stirring occasionally.

Snicker doodle Cookies

• 1/2 c. butter3/4 c. sugar1 egg1 1/3 c. flour1/2 tsp. baking soda1 tsp. cream of tartarDash of salt

• ROLLING MIXTURE:• 1 tbsp. sugar

1 tsp. cinnamon• Cream butter and sugar in mixing bowl. Beat in egg. Sift together flour, soda, cream of

tartar, and salt; add to creamed mixture. Roll dough into 1 inch balls. Roll in sugar-cinnamon mixture. Place 2 inches apart on ungreased baking sheet. Bake at 400 degrees for 10 to 12 minutes. Makes about 2 1/2 dozen.

Chicken Pot Pie

1 chicken breast1/2 cup frozen peas and carrots

1/2 cup sliced celery1/4 cup butter

1/3 cup chopped onion1/4 cup all-purpose flour

1/2 teaspoon salt1/4 teaspoon black pepper1/4 teaspoon celery seed1 1/4 cups chicken broth

1/3 cup milk

1. Preheat oven to 425 degrees F (220 degrees C.)

2. In a saucepan fry chicken, carrots, peas, and celery in 2 tablespoons butter.

3. In another saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper. Slowly stir in chicken broth (add two boullion cubes to 1 ¼ cup water) and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.

4. Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top.

Cook for 20 minutes or until golden brown.

Stuffed Chicken Breast

• Ingredients:• 1 chicken breast• 2 T. butter• 2 T. water• ¼ Italian dressing• ¾ c. cube stuffing• • Directions:• Preheat oven to 375 F. Put stuffing, water, and butter in a bowl & melt in

microwave for 1 min. or until butter is melted. Pound out chicken, then add stuffing mixture. Roll chicken breast and top with Italian dressing. Bake in oven for 45 min.

Manicotti

• Package manicotti noodles• 1 cups ricotta cheese • 1 1/3 cup shredded mozzarella cheese, divided • 1/3 cup grated Parmesan cheese, divided • 1 egg • 1 tablespoon basil • ½ teaspoon ground black pepper • ½ teaspoon salt • 1 1/3 cup spaghetti sauce• Directions:• Place noodle in large pot of boiling water, cook 12 to 15 minutes stirring occasionally; drain. Put in colander and

run cool water over shells. Heat oven to 350F. spray square baking pan. • In large bowl, stir together ricotta cheese, 1 cup mozzarella cheese, egg, basil, pepper and salt; spoon into

cooled pasta tubes. Arrange filled pasta in single layer in prepared dish. Pour spaghetti sauce over pasta. Sprinkle with remaining 1/3 cup mozzarella cheese. Bake 35 minutes or until hot and bubbly.

French Toast

• 4 eggs • 1 teaspoon sugar, optional • 1 teaspoon salt • ¼ cup milk • 10 to 12 slices white bread • butter • maple syrup or other syrup• Preparation:• Break eggs into a wide, shallow bowl or pie plate; beat lightly with a fork. Stir in sugar, salt, and milk. • Over medium-low heat, heat griddle or skillet coated with a thin layer of butter or margarine. • Place the bread slices, one at a time, into the bowl or plate, letting slices soak up egg mixture for a few seconds,

then carefully turn to coat the other side. Soak/coat only as many slices as you will be cooking at one time. • Transfer bread slices to griddle or skillet, heating slowly until bottom is golden brown. Turn and brown the other

side. Serve French toast hot with butter and syrup. Recipe for French toast serves 4.

Chicken Vegetable Stir Fry• 2 Tbsp cornstarch• ¼ tsp ground ginger • 1 teaspoon chicken bouillon granules• 2 Tbsp soy sauce• 3 Tbsp oil• 1cup water• Chicken breast cut into strips• Fresh vegetables • 1 celery cut julienne style• 1 carrot cut julienne style• ¼ onion cut julienne style• 1 clove garlic, minced• 2 cups hot cooked rice• 1. In a small bowl, stir together cornstarch, ginger, chicken bouillon granules, garlic, 1cup water and soy sauce. Set

aside.• 2. Heat 2 Tbsp. oil in skillet over medium high heat and cook chicken until browned. Remove chicken and set aside.• 3. In the same skillet, heat the remaining 1 Tbsp. oil and stir fry the vegetables and garlic under tender crisp.• 4. Reduce heat to medium. Stir in the chicken and broth mixture. Cook until mixture boils and thickens, stirring

constantly.• 5. Serve over cooked rice.• Cooked Rice• Combine 1 cup rice, 2 cups water, and 1 bouillon cube in a 3-quart saucepan and bring to a boil. Reduce heat and cover

tightly. Simmer 15 to 20 minutes. Fluff with fork and season as desired.

Sausage Egg Pizza

• Ingredients:• ¼ pk. Sausage (cooked & drained)

1 pizza dough crust (look at pizza, to make crust)• 1 c. frozen hash browns• 4 oz. cheddar cheese• 2 eggs, lightly beaten• 2 T. milk• ½ tsp. salt• ½ tsp, black pepper• 2 T. parmesan cheese• 1 green onion• Directions:• Preheat oven to 375 F. Roll out pizza dough. Sprinkle cooked sausage evenly over crust. Top w/ potatoes,

green onions, sprinkle cheddar cheese. Combine eggs, milk, salt, & pepper in bowl. Pour egg mixture over pizza. Sprinkle w/ parmesan. Bake 15-20 min. or until eggs are set and crust is golden.
