Community Supported Agriculture

Agenda Item 6.1a

Information

The Community Supported Agriculture program (CSA) has an average of 20 participants per week. A majority of our participants have been CSUN staff and faculty. We market our CSA program via our website, Facebook, Instagram, and bulletin board as well as during our on and off campus tabling events. To sign up for CSA participants must visit www.underwoodfamilyfarms.com and go under their CSA program tab, where they will find the link CSA sign-up. Our MMC Interns Cynthia Chow, Demitria Kupershmidt, and Alexandria Zuniga were handing out the produce boxes during the Summer 2016 semester. Our MMC Interns for Fall 2016 are Kennedy Johnston, Zaira Prado, and Daniel Silvestre. Our MMC Interns for Spring 2017 are Frances Lee, Talia Raviv and Laura Horwitz. Interns have developed nutrition education handouts and interactive games that are implemented each week during CSA pick-up hours that involve a produce item of the week selected from the items “in the box”.

Information

The Magaram Center hosts a table at the CSUN AS Farmer's Market on Tuesdays from 10am - 2pm. The Center disseminates general nutrition information and information about the Center's services and resources. MMC in collaboration with CSUN Dining coordinates a monthly Food Demo at the Farmers Market. Diet & Recipe Analysis Agenda Item 6.1e

Information

MMC Interns utilize the Genesis Food Processor software to conduct nutrient analysis of food records for diet analysis, and they also utilize the software to conduct nutrient analysis of recipes that includes a nutrition facts label, ingredient list, nutrient analysis, and food safety guidelines. Analyses may also be completed for recipes provided by outside food manufactures. For Summer 2016, Student Assistants Andrew Pacleb, Katie Rawson and Jose Serrano complete the diet and recipe analysis. All interns have taken or currently taking FCS 321, which introduces them to the Food Processor software. In Fall 2016, MMC Interns Brandi Clouet and Alyssa Linscheid also helped to complete the diet and recipe analyses. Spring 2017, MMC Interns Alexandria Conway, Brandi Clouet, Da Chun, Joya Johnson, Zaira Prado, and Giavanna Palmisano. From July 2016 to March 2017 we have completed 0 diet analyses and 68 recipe analyses.

Cooking Matters® - Grocery Tour Grant

Information

The Marilyn Magaram Center received a grant from Cooking Matters® to help support coordinating and implementing grocery store tour for low income communities. Dietetic Interns and MMC Interns are trained in the Cooking Matters® curriculum and prepare to conduct the tours. We are working with grocery stores with whom we have already developed relationships and MOUs through past grocery store tour programs. Weekly grocery store tours take place every Wednesday morning at Albertsons in Northridge and every Wednesday afternoon at Vons in Northridge. All tours follow the Cooking Matters curriculum (i.e. reading food labels, comparing unit prices, finding whole grain foods, and identifying three ways to purchase produce), followed with a short cooking demo where participants can take samples as a snack. This collaboration draws awareness to the importance of purchasing fresh vegetables and fruit and a greater understanding of healthier food items by the low-income families with children ages 0-5 within local communities. MMC Student Interns Jennifer Gomez, Kennedy Johnston, Jacqueline De La Torre, Angela Mendoza, Mai Spaulding, Anthony Cabadas, Sara Magdalin, and Laura Horwitz are responsible for promoting and leading grocery store tours. In Spring 2017 semester, we have Christel Bowen, Tania Menachegani, Kennedy Johnston and Mitchell Theisen leading the tours. Total number of participants to date: 56

Information

In this MMC Internship, MMC Student Interns volunteer at Glendale Adventist Medical Center (GAMC) in the Clinical Nutrition Department. Under the supervision of the Clinical Nutrition Manager, volunteers work with GAMC staff to collect diet orders according to the information obtained through patient visitation and screening, taking into account allergies and functional needs. Additional tasks are assigned as needed by the Clinical Nutrition Manager.

For July 2016 to October 2016 there have been 3 MMC Interns at GAMC: Joey Gerardi, Sara Alamdari and Varduhi Niksalyan. In Spring 2017 we have Madeleine Hoeks volunteering at Glendale Adventist Medical Center.

Calahan Elementary Agenda Item 6.1h

Information

This internship was developed in honor of Dr. Christine Smith, who worked closely with Calahan to provide a bountiful garden program. MMC Interns provide nutrition and garden education to students and parents at Calahan, as well as maintain and improve the existing chicken coup.

From August 2016 to March 2017, our student leader who is also a Master Gardener, Frida Endinjok, and our Let’s Grow Healthy Interns have been reviving the garden and coordinating the gardening classes.

For this semester, we have been at Calahan Elementary School reviving the garden, and leading classes for about 90 students, 3 teachers.

For Summer 2016, MMC Interns Tania Khachatourians, Julie Jordan and Abdul Alsaqer managed the MMC social media and marketing, and in Fall 2016 Eirenel Eclevia and Alyssa Linscheid are responsible for marketing and social media. For Spring 2017, MMC Interns Nourah Shaishtar and Lorraine Vivar are responsible for marketing and social media.

Information

Compusense is a sensory analysis software program that enables us to provide research data in the field of food science. Students assist and coordinate with the Marilyn Magaram Center Food Science Coordinator to create Compusense learning opportunities for food science and nutrition students as well as be able to provide contracts to local businesses in the future. MMC Interns for Summer 2016 are Diane Chun and Amy Meyer, and Fall 2016 interns include Julie Jordan, Vedrana Bosnac, and Valerie Mok. MMC Interns for Spring 2017 are Carlos OValle, Valerie Mok, and Michelle Perez. Interns are currently helping finalize procedures and guidelines for our Compusense/sensory lab.

Matador Marmalade Agenda Item 6.2b

Information

MMC Interns are working on the ongoing product development project, Matador Marmalade. Matador Marmalade is a student based project utilizing our on campus orange groves to create a delicious marmalade product to be produced and sold on campus. This project includes but is not limited to recipe development, sensory analysis, product labeling, UPC coding and marketing. MMC Interns for Summer 2016 are Julie Jordan and Jennifer Raj, and Fall 2016 interns include Charleen Hsieh and Jessica Ignacio-Vasquez. MMC Interns for Spring 2017 interns include Afsoon Hemmati, Dayna Middleton and Gabrielle Allard. Our interns are currently working on a low sugar version of our matador marmalade. We have also received approval to sale the matador marmalade on campus.

Spicy Matador Agenda Item 6.2c

Information

MMC Student Interns assist and coordinate with the Marilyn Magaram Center Food Science Coordinator with the development of Spicy Matador, a spice blend created with herbs grown from the CSUN Sequoia Hall garden. This project includes but is not limited to recipe development, sensory analysis, product labeling, UPC coding and marketing. MMC Interns for Summer 2016 are Dayna Middleton, and Fall 2016 interns include Dayna Middleton, Kirsten Maddux, and Lindsey Bundrant. MMC Interns for Spring 2017 are Afsoon Hermmati, Dayna Middleton and Gabrielle Allard. Our interns are currently working on a low sodium version of our spicy matador. We will be visiting a manufacture that could potentially help mass produce the spice blend.

Women Infant & Children (WIC) Center on Campus

Agenda Item 6.4

Information WIC is a Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) that provides Federal grants to States for supplemental foods, health care referrals, and nutrition education for low-income pregnant, breastfeeding, and non-breastfeeding postpartum women, and to infants and children up to age five who are found to be at nutritional risk. Marilyn Magaram Center has been awarded a grant from Northeast Valley Health Corporation (NEVHC) to open a WIC Satellite Clinic on CSUN campus. The clinic is located in Santa Susanna Hall Room 104. Erin Manlulu, NEVHC Clinic Supervisor, oversees the clinic on Thursdays. The Clinic is open to all CSUN students who are low-income, expecting a child and/or have children ages 0-5. The CSUN WIC is a pilot, with a few challenges during the year. The satellite was not able to schedule appointments for the CSUN WIC office since it was not a full service (approved) WIC site at this time - there were no dedicated appointment templates. This will be discussed and based on the number of participants we are able to reach in the upcoming year. The next phase of the CSUN WIC has started in which the participant can now satisfy the education requirement with a group class worksheet or single contact counseling (when feasible). The participants will then be able to receive their food instruments (checks) via mail. Different weighing scales for the participants (infants, children, and adults) are now available in the office. Lactating moms have access to personal manual pumps provided by NEVHC WIC Program. With these changes, we hope to see an increase in participation. In Fall 2016 there was a time change from morning to afternoon to accommodate participant needs, and there have been several outreach efforts discussed to help with participation rates. In Spring 2017 the hours of the satellite changed back from 9am-1pm. We currently have a meeting scheduled with WIC and the Institute of Health and Wellbeing to discuss the WIC satellite on campus, and how we can overcome some of the challenges.

Information Let’s Cook and Grow in Schools is a program developed to increase physical activity and healthy eating behaviors among elementary school students and their families in low income, predominantly Latino serving schools in Los Angeles. Thank you to our funder: Kaiser Permanente Panorama City Community Benefit Grant Program. Within the past year, we contracted with 3 LAUSD elementary schools, Anatola, Gault, and Napa Street Elementary, and implemented Let’s Cook and Grow in Schools. Each school received Parent Education Class, My Plate: The New Food Guide Musical, garden/nutrition education and creating a parent/staff/teacher committee to help make policy change. Fall 2016, we went to Napa Elementary School and implemented the MyPlate Musical for the parents in addition to the train the trainer model. We also went to Anatola elementary to help guide and follow-up on the train the trainer model. The MMC is currently collaborating with Rochelle Levy & Associates, Inc. They specialize in menu, recipe and product development. They are a full service food consulting and marketing agency that provides food styling, consulting and specialized programming to corporate clients throughout the world. Their customized programming for our food clients includes recipe development, menu concepts and planning, feature writing, food styling, promotional products, new restaurant concepts, catering, wine and food special events and promotions, merchandising materials, on-line training, product prototype development and evaluation of nutritional requirements and ancillary educational materials. They work from coast to coast, and internationally in Mexico, Canada, Australia, United Kingdom and Brazil. Some companies and restaurants they have worked with are Shakey’s Incorporated, Rose City Diner (Pasadena, California and Honolulu), Penguins (Santa Monica, California) and Market City Cafe (Pasadena, Burbank, Beverly Center in West Hollywood), Gelson’s Markets, Safeway, Inc., IHOP and Quizno’s Classic Subs among many others. Athletics Partnership and Research

Information

In partnership with the athletics department, we have our Sports Dietitian, Simona Hradil, training and working with our Health Assess Interns on the BodPod. On July 15th a cooking class was provided to all new freshman athletes. There were 27 in attendance. Since July 2016, there have been 125 Bod Pod tests from the Athletic Department. These number reflect all Athletic Bod Pods completed from July 2016 to March 2017. Our Sports Dietitian, Simona Hradil, is working with MMC interns to complete research on eating habits and nutrition knowledge of athletes. In addition, Simona and the MMC interns are completing research comparing multiple body composition measurement techniques with athletes, including Tanita scale, Omron hand-held device, and Bod Pod. These projects are currently in the data collection phase. The CSUN athletics department just opened their doors to the Matador Fueling Station. Our Health Assess Interns are able to help Simona make smoothies and other recipes if needed.

The Marilyn Magaram Center at California State University Northridge (CSUN), and California State University Long Beach (CSULB) are worked together to utilize NIH BUILD PODER student research assistants to provide nutrition education and cooking classes to adults with children in low income, high need communities. This research project examines whether significant changes occur at pretest, posttest, and follow-up regarding: (1) cooking and eating habits of the participants and their families; (2) physical activity of the participants and their families; (3) participants’ knowledge of nutrition and cooking, (4) participants’ knowledge of physical activity; and (5) body weight, body mass index (BMI), and percent body fat of participants.

Feeding Therapy Clinic Agenda Item 6.13

Information

The Speech, Language, and Hearing Center at California State University, Northridge works to provide the San Fernando Valley community with access to early intervention for children with diagnoses that interfere with their speech, language, and hearing. The health care professionals at the Speech, Language, and Hearing Center have expressed a need for Registered Dietitians to work with their patients in order to address selective eating. Selective eating is defined as selectivity of food that severely limits dietary intake, resulting in compromised nutrition status. The Feeding Therapy Clinic will be designed to address selective eating by providing patients with nutrition assessment and intervention plan. In addition, the clinic will provide education and tools for families, so that they may be able to provide their children with support needed in the home to increase nutritional intake. The program is currently in the creation process, and we are working on creating guidelines and procedures.

Educational Theater Project Agenda Item 6.14

Information

The MMC and the CSUN Theater Department have joined forces and have begun collaborating on a theater project. Programs utilizing theater, such as the Kaiser Permanente Educational Theater Program, have shown to be beneficial for education and we hope to provide the same to our community. The goal of this project, as well as future projects is to enhance and promote health and wellbeing through the medium of theater. The focus of their first collaboration is to assist in the prevention of eating disorders in adolescence. The first workshop was held in January 2017 at Canoga Park High School. There were 25 high school students who attended and participated in the workshop. Our very own Dietetic Interns, Dannielle Trafficanda and Paige Handler, lead a few activities.

Information The MMC participated in a number of on and off campus events, providing tabling, nutrition education, information about MMC services, and opportunities to win prizes to all participants.

From November 2016 to March 2017, the MMC participated in 25 total events.

6.15a Grocery Store Tour with CSUN Dining & CSUN Housing, Wed 11/2 MMC provided a pop-up grocery store tour for CSUN Housing students. The followed the Cooking Matters curriculum (i.e. reading food labels, comparing unit prices, finding whole grain foods, and identifying three ways to purchase produce). 6.15b CSUN Health Education Student Organization (H.E.S.O.) Meeting Workshop, Thu 11/7 MMC provided a pop-up grocery store tour for the Health Education Student Organization (HESO) club meeting. The followed the Cooking Matters curriculum (i.e. reading food labels, comparing unit prices, finding whole grain foods, and identifying three ways to purchase produce). 6.15c Diabetes Expo (VCCC), Sat 11/12 MMC participated in the 2nd Annual VCCC Diabetes Expo. The expo was located at the San Fernando Recreation Park, and offered free health screenings, flu vaccines, and nutrition information for community members. The MMC provided information regarding diabetes and health eating flyers, promoted MMC services, and coordinating/implementing a food demo. 6.15d Holidays on a Budget, Thu 11/17 This was an Education Lecture Series for our students. Student discussed the importance of eating healthy and budgeting during the holidays. 6.15e CSUN HR Workshop, Thu 11/17 & Wed 2/22, 2/29 In collaboration with CSUN HR, providing a creative cooking and wellness series for CSUN staff and faculty. Topics range from a variety of health topics. 6.15f “Taking Charge of your Diabetes” workshops, 11/18, 12/2, 3/8, 3/19 (collaboration with NHMC) Student volunteers lead a grocery store tour for community members recruited by Northridge Hospital Medical Center as they were identified to have a family member or themselves diagnosed with prediabetes/diabetes. The tour followed the Cooking Matters curriculum (i.e. reading food labels, comparing unit prices, finding whole grain foods, and identifying three ways to purchase produce). In addition to healthy cooking demos for the participants. 6.15g CDI Learning Luncheon, Wed 12/7 MMC provided a pop-up grocery store tour for the CDI Learning Luncheon, following the Cooking Matters curriculum (i.e. reading food labels, comparing unit prices, finding whole grain foods, and identifying three ways to purchase produce).

6.15h Gardening Project at CSUN a. Let’s Grow Healthy Training 1/9-1/12: Training MMC Interns to implement garden curriculum in our collaborative LAUSD schools. 6.15i Santee High School Field Trip to MMC, Fri 2/3 MMC coordinated garden, healthy eating and cooking demonstration activities for Chef Liz's Santee High School Students. With the addition of a tour of our center. 6.15j CSUN Homecoming, Sat 2/11 CSUN Event for alumni. MMC coordinate a center tour filled with fun activities, which included food demonstrations, nutrition wheel, spice challenge, marmalade/spice tasting, and much more. 6.15k Farmers Market Cooking Demo, Tue 2/14 & 3/14 In collaboration with CSUN Dinning, we coordinate a cooking demo at the farmers market once a month. 6.15l Hart Street ES/New Academy AHA Garden Kick Off, Fri 2/17 & Wed 3/8 Included fun activities and the grand opening of the school gardens. 6.15m JADE Awareness Week, 2/21 MMC participated in the JADE fair during National Eating Disorders Awareness month. The fair offered information about various topics on health and healthy eating as well as eating disorders. The MMC provided handouts and information sheets regarding eating disorders, healthy eating and nutrition. They offered assistance in understanding how to create a well-balanced meal with the myplate equipment while also enforcing portion sizes and control. 6.15n Walkability Wednesday, Weds 2/22, 3/8 & 3/15 MMC student leaders walked staff/faculty around campus and talked about moderation/balance/variety, and provided information about MMC services. On 3/8/17, it was National RD Day and the CSUN President was leading the Walkability Wednesday walk. MMC staff organized activities and food demo. 6.15o ServSafe Training, Sat 2/25 The Magaram Center offers the ServSafe food manager certification course. MMC contracts with certified instructors to teach the course. 6.15p Fueling Station Grand Opening, Tue 2/28 The athletic department coordinated a grand opening for the Matador fueling station. MMC staff/interns/volunteers helped the day of the event, and promoted our matador marmalade and spicy matador. 6.16q Diabetes Education Workshop, 2/6-2/27 Four week Diabetes workshop in collaboration with the Nursing Department and coordinated by our Dietetic Interns. Workshop included an education component, hands on food demonstration and physical activity. 6.16r Pi Day, Wed 3/14 PiDay is coordinated by the Library Dean's office. The MMC was asked to create the pies for this year’s event and host a table filled with fun nutrition activities. We collaborated with CSUN Dinning and we did this month’s food demo during the Pi Day event.
