Colleyville: Something’s Cooking Here, And It’s Not Barbecue

BY CRAVEDFW | JULY 25, 2013 · 9:53 AM by Judy Chamberlain photos by Travis Baugh Condos and consignment stores dot the stretch of Highway 26 that swings into Colleyville, a bucolic town not far from DFW Airport, where cows graze in pastures in front of houses both grand and modest. I know Highway 26 well, especially on the side where it winds into Southlake Boulevard. Long before I moved to Dallas, I shopped by phone at Neiman Marcus Last Call in Grapevine Mills, the best location in the chain. I love, love, love that store and all the folks who work there.

To get to Colleyville from the Bass Pro Rd. exit on 635, one cuts across in Southlake at Kimball. The construction near the airport is nerve-wracking.

Bordered by the biker bars and wine emporiums of Grapevine and the bustling affluence of Southlake’s sprawling dining and shopping landscape, tiny Colleyville is going in its own direction. And that direction spells F-O-O-D, with a capital “I,” for “independent.”

Chef-driven one-offs are finding Colleyville, and they’re serving a lot more unique cuisine than the ubiquitous Mid Cities tomato-basil soup and gulf oysters.

Citrus Bistro

French pastry chef/master chef Didier Viriot, his wife, Nanou, and their partner Jean-Loup Schyns have recently relocated Citrus Bistro to Colleyville from its former location at Preston and Royal in Dallas.

The new restaurant is dark, sophisticated and elegant. Its specialty is seafood. There is she-crab soup, which is extraordinary. The chef is also adept with sauces, salads, fish and vegetables – his Swiss-influenced sweet and sour braised red cabbage is delicious.

Desserts are unusual, and include Floating Island (oeufs a la niege, an egg white meringue whisked in a copper bowl over boiling water and served over sweet crème Anglaise), heretofore unknown in the Mid-Cities. Ditto the house’s Baked Alaska.. Beauty notwithstanding, the chef’s dark, rich Belgian chocolate mousse is my favorite.

Coffee and tea sweetener options are upgraded by the addition of health-conscious Truvia, the bar is well-stocked and the bartenders and servers are friendly. I’m not sure, but I think the lobsters in the tank near the entrance were conversing in French. The liquid soap in the bathrooms is from Marseilles.

Next Wood Fired Bistro & Vino Bar

The emphasis is on the vino at Next, which is directly across the parking lot from Citrus Bistro. Next’s owner and chef Ying Aikens, whose whimsical use of ingredients in constantly changing small and large plate selections, oversees a fresh culinary repertoire similar to what the West Coast calls “contemporary California cuisine.”

Next (nobody seems to know why it’s called that) is a casual fine dining concept, turning out flatbread pizzas with ingredients like candied figs, Serrano ham, goat cheese and arugula from her high-heat wood oven. The restaurant’s daily menu is ambitious and well-crafted.

Expect to dine on the likes of watermelon-raspberry gazpacho, porcini mushroom ravioli, Mongolian duck, crab napoleon, free range rack of lamb, pan-seared sea scallops, fried green tomato with crab Louie and pork belly carbonara. Like the rest of the menu, housemade desserts change daily. Recent offerings have included drunken rum cake and key lime cake. Gelatos are brought in from a local source in Dallas.

Tribeca Americana Bistro & Lounge

Ah, Sage Sakiri. A smartass Jersey boy who’s been cooking in the Mid Cities for more than a decade, Sakiri is a chef whose quirky sense of ingredient pairing is rock solid and derived from a lifetime in the restaurant business.

His culinary canvas can be found in an upstairs location in The Village at Colleyville, where a failed steakhouse kindly vacated the premises a few years ago. Sakiri paints with broad brush strokes, turning filet mignon carpaccio with bitter greens and pecorino into an updated classic of what would usually be found in the dining rooms of fine East Coast establishments. An equal opportunity master of worldly cuisine; his foie gras medallion plated with melon and anise salad and fig molasses, smoked eggplant with Texas peach chutney or grilled octopus with shad roe taramasalata take the diner on an exciting journey. Have some risotto with crème braised leeks and a lobster claw, or a pound of Prince Edward Island mussels with beer, leek and carrot fume. We are talking seriously good food.

The half-brined Coata Rican style, bitter chocolate roasted chicken and matzo-stuffed breast of veal with shallot vermouth glaze are continents apart in influence, wildly underscoring a personality that defies definition. Freshly made pasta, ravioli or gnocci are turned into something special every day, depending on Sakiri’s mood.

“A recipe has no soul,” says Sakiri. “The cook must bring soul to the recipe.”

Sakiri’s menus would work anywhere; that he’s chosen to be in Colleyville makes him an enormous local treasure. His passionate take on food and fun is aided by the shenanigans of longtime associates Sal behind the bar and the elegantly-suited “V” on the floor.

Gandino, who operates the restaurant with his daughter, Julie Gonzalez, is a forty-year veteran of the restaurant business. I’ve dined at this charming restaurant many times, and I’m never disappointed.

The bread is freshly-baked every day, and it’s wonderful.

Ruggeri’s chicken parmagiana is properly breaded and sauced, and their lasagna is made with fresh spinach noodles. Fresh noodles, not the dried kind out of a box, are used in other pasta dishes here, as well. Hard-to-find sweetbreads, one of my favorite foods, are prepared with mushrooms, prosciutto and Marsala wine.

Ruggeri’s most gorgeous specialty is their cioppino, the classic Italian fisherman’s stew. Loaded with clams, oysters, shrimp, calamari and scallops – and light on the fish many places overuse as a filler – the presentation is punctuated with mussels and served in a lovely broth. At dinner, this wondrous dish costs a mere $19.95 – the price of a lobster roll in Dallas. If you happen to be out in Colleyville at lunchtime, it can be enjoyed for $12.95.

Chef Ying Aikens noted her disappointment—“We loved the property”—but also pointed out that “We are beginning design work and making plans for the future”. The Aikens intend to build a new structure there that looks somewhat like the original house and eventually open the Old Mayor’s House Restaurant.

In the meantime, Aikens and her kitchen staff at Next continue “bringing some of the herbs and vegetables from across the street” at the Old Mayor’s House organic garden. Independent Lexus repair shop grants unusual franchise in Colleyville By TERRY BOX, Automotive Writer Dallas Morning News [email protected] Published: 30 July 2013 08:26 PM Dane Bailey never saw much gold in the clanging wrenches and hammers at typical auto repair shops. Over the last two years, the revenue at independent shops nationally grew a scant 2 percent. And 54 percent of shops in a recent survey reported flat or falling profit, the Automotive Service Association says. Nonetheless, Bailey, an engineer and former electronics consultant, has spent $1.5 million preparing to become the first franchisee of Plano-based Davenport Motor Co. His new independent Lexus repair shop opens next month in Colleyville. “There are plenty of independents who charge lower rates than Davenport,” said Bailey, 51, who got to know the company as a customer. “But no one I’m aware of has their background with Lexus and their integrity.” The 17-year-old company says it has a customer base of more than 10,000 Lexus owners, an 85 percent retention rate and an average of 15 new customers a week.

Now, after serving Lexus vehicles for its entire history, Davenport will begin repairing Toyotas — a potential customer base far larger than the Lexus numbers. Lexus is a division of Toyota, and the two share a few parts on some models. Unusual move At a time when many independents work hard just to keep the customers they have, the Davenports are granting a franchise to Bailey and considering opening a third location of their own. “Based on the experiences and success we’ve had, we think there is opportunity for us not just here but in other areas — maybe in Austin and Houston,” said Craig Davenport, 52, one of the founders. Craig and his brother Dave worked for years as techs at Sewell Lexus before leaving to open their own Lexus repair shop in Richardson in 1996. They have long considered franchising their operation, which typically offers repairs for about 20 percent less than a dealership. Franchises are unusual in the auto repair business but not unprecedented. Christian Brothers Automotive sells them, for example. “It’s a way of growing the business faster,” Craig Davenport said. “You don’t have the capital expense.” The Davenports differ substantially from Christian Brothers, though, in that they work mostly on Lexuses, a niche approach that usually keeps a business small. But Dallas might be the largest Lexus market in the U.S., a possibility Lexus doesn’t dispute. (The company can’t confirm that because sales are reported by region and include areas other than Dallas-Fort Worth.) Lexus officials did say that the Dallas-Fort Worth region is home to about 100,000 Lexus owners, a base plenty large enough to support several businesses, the Davenports say. “Even if you’re pretty conservative and say it’s only 70,000 in our area, that’s huge,” Dave Davenport said. Building the business The Davenports moved to their tidy blue-and-white building on Plano Parkway in 2001. Brother Daniel, who worked at Sewell and Park Place Lexus, and Jimy Wright, a master service consultant at Sewell, had joined them as partners in 1998. In 2005, they opened a second shop, on Inwood Road in Dallas.

Davenport can’t do warranty work on new Lexuses because that is still the province of new car dealers. But the businesses attract dozens of customers weekly with older Lexuses who want to maintain their vehicles for less than dealerships charge and still get about the same high levels of service. Though the Davenport facilities are relatively small — about 8,000 to 8,500 square feet — they include carwashes and access to a fleet of 22 loan cars. “We’re big believers in preventive maintenance,” Craig Davenport said. “But if we find something that should or could be fixed at some point but isn’t critical, we tell people they can do it now or later.” “We don’t upsell,” added brother Dave, 58. Bailey, the new franchisee, intends to replicate that approach at his refurbished blue-and-white Davenport facility in Colleyville. “I sent my wife and daughters to Davenport because I knew they weren’t going to try to sell them a bunch of things they didn’t need right now,” he said. He is buying the 8,700-square-foot shop in Colleyville, which he has refurbished and equipped. Potential customers Bailey figures that about 2,400 potential Lexus customers reside in the northeast Tarrant County area he’ll serve, some of whom now drive to Plano to get their cars repaired. “At some point with a family business, you run out of family members,” Bailey said. “This allows them growth without having to go out and mine for executives to run the shops.” He plans to open in the first week of August with five people, including two Lexus techs, a service adviser and a valet to wash cars. And despite increasing competition for Lexus service customers — Park Place Lexus is completing what may be the largest Lexus dealership in the U.S. — Craig Davenport remains optimistic about the prospects for growth. “I just think we are different from Park Place or Sewell,” he said. “We’re small, but we know Lexus. When a customer comes in, they are greeted by a service adviser who might know the names of their children, too.”

Houston-based Spirit of Texas Bank opened its fourth North Texas location in Dallas near Park Cities Thursday.

The full service bank is at 3100 Monticello Ave. The $525 million asset bank merged with Peoples Bank and its two locations in Colleyville and Grapevine earlier this year. Spirit of Texas Bank also has a loan office in the Fort Worth location and in Rockwall.

“We are committed to building a major presence in DFW quickly,” Dean Bass, Spirit of Texas CEO and chairman, said in a press release. “With the opening of the new Uptown location in Dallas, we are now in a position to expand our operations even more.”

Veteran North Texas banker Bruce Davis will be the president of the Fort Worth market while Roy Salley will be the president of the North Texas market. Both have worked for banks in North Texas.

Salley has worked in the Uptown Dallas market before and he says it's a great place to be.

Future plans include opening a branch in Rockwall early next year and eventually expanding to North Dallas, Richardson, Irving and other markets.

Mulch Fire Threatens Wewoka Residents New Product Shows Impressive Results The Seminole Producer Lou Armour, City Editor July 30th Weekend Edition Since Monday an industrial-sized mulch pile just south of Wewoka City limits has been burning and threatening to blow hot embers towards the residents north of the huge pile. Standing at over 30-40 feet high and over 200-250 feet long in places, the pile of mulch made from lumber spontaneously combusted on June 24 at a lot on the corner of Jack Rabbit Rd. and Industrial Blvd. Fire Chief James Keesee and his men had been at the site over the past three days fighting the fire, but were at a loss at how to get to the center of the blaze without kicking up cinders. They doused one end of the pile with over 2000 gallons of water with no apparent lasting effect. Keesee also tried firefighting foam but the core of the blaze was far deeper than the foam could penetrate. He called for help from the Oklahoma Forestry Services and was given a lead on a commercial product that was designed specifically for such a stubborn fire. New Product Shows Impressive Results Keesee contacted a fire chief acquaintance in Louisiana who was familiar with peat bog fires. He suggested EnvironX Solutions of Dallas (Colleyville), Texas. James called EnvironX Solutions and asked about “Peat FireX,” a product developed for peat fires. EnvironX CEO Steve Sinunu arrived in Wewoka Thursday night with as much of the product as he could carry in a pickup truck, approximately 750 pounds of it in 25-lb. buckets to demonstrate its efficacy in extinguishing just this kind of fire. For the test, they mixed up 600 gallons for the brushfire trucks brought in from the fire department. One pound of the non-toxic product mixed with water makes 20 gallons.

Armed with 300 gallons each in two brushfire trucks, Keesee’s men turned to a smaller section of the mulch fire to test Peat FireX. Keesee took initial readings of the surfaces in the test section and found it to be between 350-400 degrees Fahrenheit. After a coating of the non-toxic product, the temperatures dropped to 150 degrees and down to 125 degrees 15 minutes later. Within 30 minutes, Keesee was able to put his hand to surface of the mulch pile without suffering burns or discomfort. Selecting another test section next to the treated site, a firefighter hosed down a 30-foot by 20-foot section with water. With an initial reading of 400 degrees, the water treated site registered a mere drop of 50 degrees before temperatures rose again 30 minutes later. In the meantime the Peat FireX treated site continued to cool down and passersby could distinctly feel the temperature difference between the two sections - the heat from the water treated section was palpable from a distance of 5-10 feet. The amount of the organic product used on the test site was only 150 gallons, compared to 2,000 gallons of water used on it the day before. One firefighter doused his boots in the product and claimed he was able to withstand the heat of the pile to climb closer to fire affected areas. Keesee used a tracked hoe to carve out a section of an untreated section to gauge the core temperature and to see what effect Peat FireX had on a hotter heat source. The hoe dug a large six-foot hole into the side of the mulch pile and a reading of the site was temps reaching over 1,000 degrees Fahrenheit. A firefighter doused the hole with the organic-based product for five minutes. Keesee came back to the hole to find the temperature down to less than 150 degrees within seconds of being doused. The core of the hole was cooling rapidly with smoke spilling out as the product worked closer to the source of the fire. As one firefighter remarked, “we accomplished more in two hours with this product than we had over the past three days with water and foam.” According to the EnvironX Solutions website, Peat FireX is eco-friendly, non-toxic and biodegradeable. Peat FireX reportedly breaks the surface tension of the soil and penetrates deep into peat and muck. It has stopped peat fires with significantly less water and resources, while leaving a lasting retardant barrier. With Peat FireX, creek water, fair weather conditions, and hard work on the part of the Wewoka firefighters, this mulch pile fire may be extinguished in days rather than months.

Sales tax revenues up four, now five months running From the sales tax revenues reported for June, Colleyville’s General Fund sales tax was up 13.36% ($25,942) from revenues reported for the same time period last year. At that point, year-to-date General Fund sales tax was up 8.37% ($132,918). This was the fourth month of increased sales tax revenues as compared to the prior year, and was the highest June allocation ever reported. In Tarrant County, all cities were up an average of 7.26% in June 2013. From the sales tax revenues reported this month, General Fund sales tax is up 19.43% ($39,683) from revenues reported for the same time period last year. Year-to-date General Fund sales tax is now up 9.63% ($172,600). This is the fifth month of increased sales tax revenues as compared to the prior year, and is the highest July allocation ever reported. In Tarrant County, all cities are up an average of 5.24% in July 2013.
