YOGURT AND CUCUMBER DIPMakes about 2 cups, serves 8 to 10

1 medium seedless cucumber, peeledand grated

1⁄4 tsp salt1 cup plain Greek yogurt1⁄2 bunch scallions, finely chopped1 clove garlic, minced (optional)2 Tbsp chopped fresh dill, or 2

teaspoons dried dillFreshly ground black pepper to taste

Mix cucumbers with salt and marinate15 minutes at room temperature, or untilliquid comes out of cucumbers. Draingently pressing out excess liquid. Combinewith remaining ingredients and serve withendive spears.

ROMESCO DIPMakes about 2 cups, serves 8 to 10

4 Tbsp extra-virgin olive oil, divided1 Tbsp roughly chopped garlic1 cup garlic croutons1 (16-ounce) jar roasted red peppers,

drained1 cup unsalted whole roasted almonds

or hazelnuts2 tsp sweet smoked paprika or paprika1 tsp hot red pepper sauce (optional)2 Tbsp red wine vinegarSalt to tasteCombine 2 tablespoons oil and garlic

in a small pan and cook until fragrant butnot browned, about 1 minute. Cool;combine with remaining ingredients andchop finely in a food processor. Seasonwith salt and serve with endive spears.

finely ground. In a large bowl, fold groundwalnuts with remaining ingredients. Servewith endive spears.

For a classic selection, look nofurther than the vineyards of Napa Valley, one of the world’s most pres-tigious Chardonnay regions. Tucked away, off thebeaten path from mainstream Napa, William HillEstate Winery crafts an elegant, full-bodiedChardonnay from Napa Valley’s most celebratedvineyards. Smoked Salmon & Apple Relish Crostini

Relish:1 Granny Smith apple, cored, peeled and chopped2 tablespoons chopped fresh parsley2 tablespoons chopped fresh chives2 tablespoons olive oil1⁄2 lemon, juice only

Toppings:8 ounces soft goat cheese6 ounces smoked salmon, cut into crostini-

sized pieces

Crostini:1 sourdough baguette4 tablespoons olive oil

Slice the loaf into 1⁄2-inch rounds, brush lightlywith olive oil and bake for 13-15 minutes at 250°F or until golden brown. Allow to cool. Whilethe crostini are baking, mix together all the applerelish ingredients in a bowl until well combined.Set aside. Remove crostini from the oven andspread goat cheese over the crostini. Top with apiece of smoked salmon and a teaspoon of applerelish. Serve immediately.
