One of my all-time wine heroes is Robert “Bob” Mondavi. Meeting Bob for the first time at his winery was a pivotal point in my life. The year was 1988 and it was a beautiful Spring day in the

Napa Valley. Bob was at the front door, his arms were wide open and there was a gold light shining all around him. We headed straight to the vineyards, walked the dirt and talked about our dreams and the future of the Napa Valley. We then spent hours in the cellar tasting all of

his wines going back to the sixties. At the end of it all I could say was “WOW!” which in today’s lingo translates to #OHYEAH! From that day on, not only was Robert Mondavi a “wine god” in

my eyes, but he was a friend and mentor.

Today, Robert Mondavi is more god-like than ever. His wines have stood the test of time for decades and just get better by the day. I could not be more proud to unveil our new Robert Mondavi Cabernet Sauvignon Reserve Flight featuring famed vintages 2015,1999,1997. The

CHAMPAGNEChampagne is the name of the world’s most famous sparkling wine, the appellation under which it is sold, and the French wine region it comes from. Champagne is a legally controlled and restricted name Located at a northern latitude of 49°N, the Champagne region lies at the northern edge of the world’s vineyard-growing areas, with lower average temperatures than any other French wine region. In this kind of cool climate, the growing season is rarely warm enough to ripen grapes to the levels required for standard wine making. Even in temperate years, Champagne’s grapes still bear the hallmark acidity of a marginal climate, and it was only the discovery of secondary fermentation that provided a wine style capable of harnessing and even embracing this tartness.

Trimbach Riesling ‘Clos Sainte Hune’

The wine-growing history of Maison Trimbach dates back to 1626. Since then, twelve generations of winemakers have tirelessly drawn on their passion for Alsace wines, ensuring the wines they produce stand out for their quality and authenticity, patiently establishing, from father to son, a solid reputation for excellence.

Trimbach wine acquired true international acclaim in 1898 when Frédéric Emile Trimbach received the highest distinction at the International Wine Fair in Brussels.This success is due in no small part to the jewel in the estate’s crown, the ‘Clos Sainte Hune’ vineyard.

Today, the family vineyard is run by Hubert Trimbach, his nephews Jean and Pierre, and Pierre’s daughter Anne, the oldest member of the 13th generation. This exceptional wine is a product of the terroir in the “Rosacker” vineyard, located in the village of Hunawihr. This parcel of land, which stretches over 1.67 hectares, has been in the Trimbach family for more than two hundred years. The south, south-east facing vines are on average 50 years old and lie on a predominantly limestone subsoil. These factors give this Riesling a unique flavor of remarkable fruit concentration, enhanced by a refined hint of minerality on the finish. After a few years of ageing, the typical characteristics of the ‘Clos Sainte Hune’ terroir vibrantly shine through the glass. The small annual production of 8,000 bottles on average, makes this wine an extremely rare treasure, much sought after by Riesling lovers and collectors across the globe.Trimbach’s ‘Clos Sainte Hune’ wine has an exceptional ageing potential as it can age seven to ten years after bottling without even reaching its peak.

The Mosel, Nahe, Rheingau, Rheinhessen and Pfalz represent a few of the most outstanding wine regions of Germany. Riesling is the star of the show here, where winemaking dates back to the 15th century. This aromatic grape variety is known for its ability to express the terroir of the region where it’s grown; Mosel examples usually exhibit higher acidity and mineral, citrus notes, while the more southerly Rheingau tends to make examples with more tropical fruit and melon notes and lower acidity. Kabinett or Trocken are words to look for if you’re after a dryer style, while

Spatlese and Auslese will have a bit of residual sugar.

Chablis produces light, dry, white wines famed for their flinty minerality and crisp acidity. Chablis wines are made in a style rather different from those produced elsewhere in Burgundy. They are drier and fresher, rather than more weighty and richly flavored. Most A.O.C Chablis is fermented and aged in stainless steel, with use of oak barrels more common in higher-level wines, though used larger barrels are more likely to be employed than new barriques, and wines will spend a shorter time in them than in the Côte d’Or.

MEURSAULTMeursault is a large village in the Cote de Beaune sub-region of Burgundy. Its wines are regarded as highly as those of its southern neighbor Puligny-Montrachet, despite Meursault not having any Grand Cru vineyards to speak of. Corton-Charlemagne is the Grand Cru appellation for the white wines of the Montagne de Corton hill, in the Côte de Beaune district of Burgundy. Classic Corton Charlemagne is considered to be amongst the finest of Burgundy’s whites, and is famous for its combination of fruit flavors (figs and baked pears) and mineral character (flint) – the latter being particularly prevalent in wines from the cooler western slopes. Corton-Charlemagne ranks among the world’s more expensive white wines, although it still does not reach the prices commanded by its Montrachet counterparts.

CHEVALIER-MONTRACHET

Chevalier-Montrachet is one of five grand cru vineyards on the Mont-Rachet hill at the very southern end of the Côte d’Or. Like all of the top vineyards in this part of the Côte de Beaune, Chevalier-Montrachet is planted to Chardonnay, and makes structured, full-bodied white wines that are often regarded as the ultimate expression of the variety. The poor soil here allows the vines easy access to the subtle mineral components of the limestone substrata below, and forces them to grow strong, healthy roots as anchors. These grapes tend to be intense and concentrated, and translate into high-quality, balanced wines that can be aged for many years.

BÂTARD-MONTRACHET

Bâtard-Montrachet is a grand cru vineyard at the base of the Montrachet hill, across the communes of Chassagne and Puligny-Montrachet. Bâtard-Montrachet is considered to be one of the very best terroirs in the world for the Chardonnay grape variety, making complex, structured wines with excellent aging abilities. Bâtard-Montrachet’s name, like many in the area, is said to derive from the process of inheritance. A vineyard on the southeastern slopes of the Montrachet hill is thought to have been divided up by a local lord, the Seigneur de Puligny, between his oldest son, the Chevalier; his daughters, the Pucelles (maids); and his illegitimate son, the bâtard, or bastard.

Bienvenues-Bâtard-Montrachet is a small grand cru climat on the southwestern slopes of the Montrachet hill in Burgundy’s Côte de Beaune. It is planted entirely to Chardonnay, making rich, plump white wines that, while not quite as prestigious as the wines from the nearby Montrachet vineyard, are still some of the most sought-after and highly priced wines in the world.

CRIOTS-BÂTARD-MONTRACHETCriots-Bâtard-Montrachet is the only grand cru vineyard that lies entirely within the commune of Chassagne-Montrachet. It is located on the southeast-facing midslope of the Montrachet hill at the southern end of the Bâtard-Montrachet climat, with the famous Le Montrachet Grand Cru site covering the hill above. The Criots vineyard is planted to Chardonnay, making complex, rich white wines that are considered among the best in the world. The vineyard is one of the smallest AOCs in France, covering just 1.6 hectares (4 acres) of land – only the La Romanée site in the Côte de Nuits is smaller. Criots-Bâtard-Montrachet is also the most southerly of Burgundy’s grand cru vineyards.

Montrachet is a grand cru vineyard in the southern Côte de Beaune that is widely considered to be the world’s best for Chardonnay. It is located on the midslope of the Montrachet hill above the villages of Puligny- and Chassagne-Montrachet, covering land in both communes. Montrachet has the prime position on the hill. The vines are perfectly angled southeast, giving them the exposure to the sunshine that is so important to the ripening process. The slope of the vineyard, along with the pebbly limestone soils make for perfect conditions to grow Chardonnay.

A rosé (from French rosé; also known as rosado in Portuguese and Spanish-speaking countries and rosato in Italy) is a type of wine that incorporates some of the color from the grape skins, but not enough to qualify it as a red wine. CHAMBERTIN

Le Chambertin is the most important grand cru vineyard in Gevrey-Chambertin, one of the northernmost wine villages in Burgundy’s Côte de Nuits. Chambertin’s soils are well-drained and stony, with a thin layer of pebble-strewn, chalky topsoil over a deep rocky base. The percentage of clay reduces higher up the site, giving way to drier, looser limestone. The climate, as throughout the Côte d’Or, is of continental type, meaning warm, dry summers and cool, crisp winters. The strong diurnal temperature shift that this climate type brings about helps the vines here to maintain a balance of natural sugars and acidity.

CHAMBERTIN-CLOS DE BÈZEChambertin-Clos-de-Bèze is a prestigious lieu-dit of the famous Le Chambertin Grand Cru vineyard at the northern end of the Côte d’Or. Alone, Chambertin-Clos-de-Bèze covers 15 hectares (37 acres) of land. The soils here are similar to in Chambertin, made up of pebbly, free-draining limestone with a good proportion of clay. This nutrient-poor terroir ensures that the vines do not expend too much effort on leafy vigor, instead producing small, intensely flavored berries that make high-quality wines. The sunny southeastern aspect has also proved well suited to the Pinot Noir that grows here he grapes reach full ripeness while retaining essential acidity in Burgundy’s cool continental climate. As a result, Clos-de-Bèze wines are incredibly well balanced.

Chapelle-Chambertin is a grand cru vineyard in the Gevrey-Chambertin appellation at the northern end of the Côte de Nuits in Burgundy. CHARMES-CHAMBERTINCharmes-Chambertin is one of Gevrey-Chambertin’s lesser-known grand cru sites, located on the Côte d’Or right below the famous Le Chambertin climat itself. Often refered to alongside the Mazoyères-Chambertin vineyard, Charmes-Chambertin makes some of the softer Pinot Noir wines from Gevrey-Chambertin’s stretch of grand cru vineyards. The vineyard occupies the lowest and most shallow slopes of the grand cru belt, close to the border with Morey-Saint-Denis. The soils in the vineyard are well-drained and stony, with a thin layer of pebble-strewn chalky topsoil over a deep, rocky base. The percentage of clay reduces slightly towards the higher edge of the site, giving way to drier, looser limestone.

GRIOTTE-CHAMBERTINGriotte-Chambertin lies on the slopes below the famous Clos de Beze and Chambertin vineyards, borrowing its name from its more famous neighbor. Griotte-Chambertin is one of the more sought-after names in Gevrey-Chambertin, due to its fresher, more delicate style of Pinot Noir. The climat covers just 2.7 hectares (6.7 acres) of land, on a slope that faces northeast, instead of east or southeast, like the other grand cru vineyards. This aspect means that the vines have less exposure to the morning sunshine, and ripen more slowly than other climats. While Gevrey-Chambertin is known for its strong, muscular styles of wine, Griotte-Chambertin wines tend to be aromatic and balanced.

Latricières-Chambertin is one of the eight grand cru vineyards in Gevrey-Chambertin. It lies on the Côte d’Or, just south of the famous Chambertin vineyard and above Mazoyères-Chambertin. Latricières-Chambertin wines tend to be slightly more rustic than Gevrey-Chambertin’s other grand cru vineyards Like Chambertin, Latricières-Chambertin has thin, chalky soils that are well suited to wine growing, as they do not allow the vine to become complacent. Instead, the vines struggle to survive, producing small, intensely flavored berries.

Mazis-Chambertin wines are structured and rich, and the best examples closely resemble the wines of the neighboring Clos-de-Beze climat. The vineyard is divided into upper (Mazis-Haut) and lower (Mazis-Bas) sections, divided by a lane that connects the southwestern corner of Gevrey-Chambertin village with the D122 road, the Rue de Chambertin. Mazoyères-Chambertin is located at the southern end of the area’s band of grand cru vineyards, with its southern edge touching the border of Morey-Saint-Denis. Like most of its more famous neighbors, Both Mazoyères-Chambertin and Charmes-Chambertin have thin limestone soils over a deeper layer of rock, providing a terroir that drains freely and reduces energy-sapping vigor, while also forcing the vines to grow strong root systems.

MUSIGNY

Musigny is relatively steep and thus very well drained. The high proportion of chalk and limestone in the soils here, coupled with its excellent drainage, means that the vines are forced to develop deep and healthy root systems to search for water. This terroir helps to create rich, fruit-forward Pinot Noir that combines elegance and power – an all-important combination which has led Le Musigny wine to be repeatedly described as une main de fer dans un gant de velours – “an iron

Bonnes-Mares is one of the more fragmented grand cru vineyards in Burgundy, with more than 30 producers owning land in the climat. The climat covers 15ha (37 acres) of land on the midslope of the Côte d’Or. Bonnes-Mares borders the Clos de Tart Grand Cru site on its

Clos Vougeot is a small, walled-in vineyard located just south Musigny. Named after the River Vouge, this quaint area was founded by monks in the 12th century and has served as the flagship vineyard for the Cistercians ever since. It is the largest Grand Cru Vineyard in the Cote de Nuits,

HERMITAGE

Hermitage, the rich Syrah-based red from the northern Rhone Valley, is one of France’s most enduringly prestigious wines. It sits on the very top rung of Rhone Valley wines, which it shares only with those from the Cote Rotie (30 miles/45km to the north), and Châteauneuf-du-Pape (70 miles/110km to the south). The whole of the granite hillside where the Hermitage vineyards are planted faces south, meaning that the grapes benefit from the maximum amount of sunlight throughout the day.

Châteauneuf-du-Pape is a historic village between the towns of Orange and Avignon, in France’s southern Rhône Valley. It is famous for powerful, full-bodied red wines made predominantly from the classic southern Rhône grape trio: Grenache, Syrah and Mourvèdre. These three varieties are behind the vast majority of the appellation’s red wines, although a total of eighteen are approved for use – a mix of red and white grape varieties. The archetypal Châteauneuf vineyard is strewn with large pebbles known as galets, whose soft, rounded form stands in direct contrast to the gnarly, twisted vine trunk.

Barolo and Barbaresco are both made of the native Nebbiolo grape variety, and represent the different styles of the towns near which they are made. BAROLOA traditional hillside village in the rolling hills of Piedmont, northwestern Italy. The vineyards and wineries there have long been famous for producing some of Italy’s very finest red wines predominantly from the region’s signature grape variety, Nebbiolo. Fragrant, tannic Barolo wine is so revered that it was one of just three wines awarded DOCG status on the day that the classification was introduced in July 1980. The Barolo vineyard zone covers the parishes of Castiglione Falletto, Serralunga d’Alba and Barolo itself, and also spreads over into parts of Monforte d’Alba, Novello, La Morra, Verduno, Grinzane Cavour, Diano d’Alba, Cherasco and Roddi. The soils and mesoclimates vary slightly between these communes, creating subtle differences between the wines produced from their vineyards.

BARBARESCO

The vineyards are situated in the Langhe, on the right-hand side of the Tanaro river and extending from the area northeast of Alba to the communes of Barbaresco, Neive and Treiso, as well as San Rocco Senodelvio. The dominant variety grown is Nebbiolo, but Dolcetto and Barbera also play a part. The vines are generally grown on limestone-rich marl soils. similar to the Tortonium soils of the Barolo and La Morra areas in Barolo, at 650–1300ft (200–400m) above sea level on very steep,’pre-alpine’ hills. They are situated on south-facing slopes for best exposure.

SAINT ESTÈPHE

St. Estephe is both the largest and the northernmost of the four best communes of the Medoc, on the Left Bank of the Gironde estuary. The gravel soil in this portion of the Medoc peninsula is very prominent, and the wines from this region are known for their concentration, depth and richness. PAUILLACThree of the five First Growths, or ‘Premier Grand Cru’ Classe’s, are located in Pauillac. Château Lafite Rothschild and Château Latour were awarded First Growth status in the Classification of 1855, with Château Mouton Rothschild elevated in 1973. PESSAC-LÉOGNANLocated below the entrance to the Gironde Estuary at the foot of the left bank is Pessac-Leognan, home to the last of our ‘Premier Grand Cru Classe’ Châteaux, Château Haut-Brion. This region straddles the border of Graves and the Medoc, and produces an equal amount of both red and white wines. Cabernet is still the predominant variety in the blends of Pessac, but a

greater proportion of Merlot is typically used in comparison to other Medoc Château.

Pomerol is the most well known region on the right bank side of the Gironde River, making Merlot dominant blends typically supplemented with Cabernet Franc. Although neither of Pomerol or Saint Emilion were included in the original 1855 Classification of Bordeaux, they have since developed their own system to define the best producers. The best vineyards from this region are situated atop a plateau with enriched clay soil, the most famous of which is Château Petrus. The producers in this region are much smaller than their left bank counterparts and demand for

their wines is ever-increasing.

VODKAIs Vodka, little water, Russian or Polish? For over seven hundred years the question of who coined the term has been debated with great enthusiasm. The popularity of this spirit, as the quest for the bragging rights

raged, has not been dampened for centuries and today makes up for a quarter of the total liquor imbibed on the planet. First distilled in the fourteenth century, the process of creating the clear spirit migrated

through the Vodka Belt countries: Poland, Russia, Ukraine, the Baltic states of Estonia, Latvia and Lithuania, Finland, Norway and Sweden. Whether Utilizing the traditional rye, wheat or potato, or more recently

grapes and sugars, the process of mashing to extract the sugars from the starches remains the same. The addition of yeast and water is next, and the fermentation process of this concoction begins.

It is at this stage of the process that a sense of place, or terroir, is imparted. The flavors that will ultimately end up on the palate are born as the yeast devours the sugars creating the alcohol. This wash is then refined in a pot still or a continuous column still and sometimes both, in a process called rectification.

The source of the water and the strain of the yeast are both of the utmost importance. Yeast varieties are a closely guarded secret and the purest of water sources are coveted prizes amongst producers. The

water added to dilute the strength of this alcohol can make up to sixty percent of the final product. The water used, whether lake, well or even ice berg, is de-mineralized with various types of filtering. The less processing of this water the finer the product, the finer the water the less the processing. At the end of a

GINThe medicinal powers of the juniper berry were famed throughout the Netherlands for centuries. In the 1500’s they infused the berry with Rye spirit creating the Dutch Courage that would soon rule the spirit world. When the Dutch King William of Orange took the English throne from James II in 1689 the popularity of the Genever

RUMWhen Colombus brought sugar cane from their native Canary Islands to Barbados in the Caribbean Islands in the late 1400’s, he unknowingly began the rise of Rum that would play a major role in helping Brittania rule the waves for hundreds of years to come. The growth of the cane flourished in the climate of the Caribbean Islands. By the 1600’s the juices extracted from the cane were being distilled into the two spirits, Agricole and Industrial, we call Rum. There are four classifications in rum: Light - unaged, Gold – added caramel and often aged, Dark – added flavors and aged and Spiced – added caramel and native spices.Agricole rum takes the juices from the cane, vin de cannes, and adds water and yeast and is distilled twice in pot stills. White rum is unaged and is bottled straight from the still. Gold rum would have caramel added and aged three years in French oak barrels. Industrial Rum uses the cane juice to make molasses, adds native ingredients, water and yeast and is distilled in a column still and aged in toasted casks.After the capture of Jamaica in 1655 by the British, the royal Navy issued a half pint of rum a day to each and every sailor. The lure of the sea, adventure and twice daily rations of rum kept

the Navy awash in sailors. This tradition was continued for over 300 years until july 1970.

BOURBONWhen the Scots Irish arrived in America from their native lands in the 16 and 1700’s they brought with

them their distilling skills and the love of liquor. The Scots followers of King Billy took to the hills of Kentucky, reminiscent of their beloved highlands, and began the distilling process.

These HillBilly’s , as they were known, had the access to everything they needed in Kentucky to make whiskey- Water, Oak, Soil, Yeast, Weather and Rivers. Using corn as their grain of choice, distilling and aging

in charred oak barrels, they perfected their whiskey making.These Kentucky whiskies became increasingly popular leading to Geroge Washington levying the first tax

on a domestic product by the new Federal government and thus paving the road to the Whiskey Rebellion of 1791.

Throughout the first half of the nineteenth century the consistency of the whiskey making process became more refined, the continuous still was borne out of the industrial revolution and whiskey making soared. The first bottle of Old Forester came in 1870 and in 1897 the quality control of Bottled in Bond was introduced. This meant that the Bourbon was produced at a single distillery, from a single season and aged for at least

four years in a federally bonded warehouse and bottled at 100 proof.In 1920 a severe blow was delivered to the centuries old liquor industry- Prohibition. The banning of the

production, importation and transportation of alcohol in the United States. This killed off a lot of distilleries and the drought continued for 13 years until December 5th 1933.

It took the whiskey distilling industry many years to get back on it’s feet. It wasn’t until the 1980’s that the production of small batch and single barrel began to take off in earnest. There are a plethora of fantastic

producers on display here at Wally’s. Bulleit, Michters, Knob Creek, Jefferson... the list goes on and on.The story of American Bourbon continues to evolve and weave it’s way through the fabric of American

history. It’s flavors and warmth will continue to comfort for years to come.
