Challenging convention A “bestiary” is a compendium of beasts, freely interpreted through the imagination of its author and accompanied by a lesson on morality. In this case the beast is convention—that which ‘must’ be done. Why? Just because. The Michelini brothers set about to challenge that convention starting with the idea that fear is the prison of the heart, they decided to realize their dreams and achieve freedom. So they created Bestiario, a wine made by co-fermenting Malbec and País from old vineyards in Pencahue in the Maule Valley. The result, is a half-forbidden and half-revered wine that they insist, is only tasted by thosewith the wisdom to try to conquer the beasts that still inhabit the world.

Denomination of Origin
All of the grapes were hand picked. The Malbec grapes were destemmed, while the País grapes were whole-cluster fermented. Alcoholic fermentation took place with native yeasts, 50% in stainless steel tanks and 50% in concrete eggs, followed by a long post-fermentation maceration. The new wine was drained and direct pressed into concrete eggs. It was not filtered before bottling.
