The world is a pretty amazing place. I often

revel in the fact that there is a great natural

order that just makes things happen. Without

anyone fl icking a switch the Sun automatically

rises and sets every day without fail. Burned

out forests show immediate recovery as little

seedlings of green pop up here and there, just to

confi rm indeed there is a greater source at work.

With every disaster there is always recovery

from sorrow. And every day there are magical

moments that take place just to reassure us that

in this moment, everything is as it should be.

The making of Roselands Style Magazine was

one of those processes that just took place. It is

amazing how everyone just comes together for

the project and places their trust in each other.

It is a privilege and a joy to work with such a

great group of people. Donny with his styling

techniques and great eye for shape. Hamish,

whose brilliance comes through a camera

lens and face to face. Jason, whose calm can

make you enjoy any space and Ed who makes

you want to enjoy better food. Our Beauty

Salons and Retailers who gave us their all and

the Makeover Contestants who just handed

themselves over and went with the fl ow. Kath,

Linda and Ben from Kastner & Partners, whose

design expertise brought the magazine together

and Kristie from Channel 9, who presented the

makeover project brilliantly on the Today Show. It

was a process of team work and passion.

Our objective is to present you with solutions,

choices, ideas and inspiration that can help you

‘Refresh Your World’. We have all done our best

to give you the best of what Centro Roselands

has to offer and it has been a privilege to create

After last year’s ‘Roseland Style’ Magazine was launched,

I received lots of tremendous feedback about the makeovers,

especially about the cover girl Nicola. I felt the pressure to

raise the bar, and perform even better makeovers this year.

In keeping with our theme ‘Refresh Your World’, my objective

was to give each contestant a fresh new look that made them

feel more confi dent and look fantastic.

Our ten contestants this year were all great to work with and

I would like to think that the fi nal makeover results speak for

themself. They were all open to change, and I thank them for

trusting me. As a stylist I often dress celebrities and models

for catwalk shows but nothing gives me the same satisfaction,

as when I style real everyday Aussies – like our incredible ten

contestants this year. Seeing their smiling faces in the mirror

admiring their new look for the fi rst time was the best feeling ever.

This year’s makeovers created so many special memories.

Picking just one is a real challenge, but seeing Nobby’s

transformation really blew me away. It’s more than just the

physical change. Within hours his personality changed, he

seemed more confi dent, beaming with pride and he developed

an incredible swagger. I saw the same thing happen with Beth,

Badrie and Barbara.

It was an absolute honour to perform another ten makeovers

at Centro Roselands. A huge thank you goes out to everyone,

especially Roselands Retailers for their clothes, and to F&V

Hairstylist, Just Cuts, Pizzazz, Sauvage and Sheshwarz for

working on the hair. Plus Ella Baché for the tanning products and

Professionail, Passion Nails and Pearl Nails for the manicures and

pedicures. What a wonderful group of Retailers you are and it is a

privilege to work with you on such a special project.

I hope you enjoy the makeovers, all the styling hints & tips and

the entire magazine.

Barbara was a total delight to work with, from the beginning she was prepared to take on any challenge. Her sense of humour was an absolute joy. She lit the stage on fi re with her dazzling smile. When asked if she could have any job in the world her response was to be a pilot. Barbara you are already fl ying high and working with you was like travelling fi rst class.

Barbara is a stay at home mum with a personality that is a breath of

fresh air. Happy and sunny, beautiful blue eyes, elegant long neck,

perfect posture, hourglass shape and great skin. She is a wife and

mother of three children and is a recent cancer survivor celebrating

three years cancer free.

To bring out her beautiful eyes, my colour choice for her were blue

tones and an open neckline which is perfect for her hourglass

shape. It also helps to frame the face. A good fi t around the waist

is a must for this fi gure type. Prints are a huge trend this season

whether its digital prints, animal prints, polka dots or fl oral prints.

When Barbara fi rst saw the print, she revealed it was something

she would not usually wear.

To create healthy looking hair for Barbara we went for a much darker

tone with some added highlights. We took a bit off the length to give

her a shorter edgier style and a more modern look. Her makeup was

light, just enough to bring out her eyes and cheekbones and a soft Ella

Baché tan gave her that envious holiday glow.

To draw the attention to her stunning face, I chose an Alex Perry for Diva necklace and Jacqui E bracelet. Paired with a pair of silver stiletto heels from Williams, which matched her silver bling.

Employed as a Baker and Sales Assistant at Baker’s Delight, Daniel’s real dream is to be a musician. Judging

from his makeover results a very cool dude was just waiting to come out.

In our fi rst meeting, Daniel was all grey – grey hoodie, grey jeans and his face was covered by his hair. He

needed a look that was youthful and funky. Leather jackets are a huge trend right now and every guy should

have one. They can easily be dressed up or down. For Daniel we teamed it up with a white fi tted shirt, skinny

tie and worn-in looking jeans; together they have a cool celebrity quality about them.

From the get go, Daniel was happy to take on any styling challenge and didn’t even fl inch when I threw

around the word ‘highlights’ for his hair. In makeup we added a bit of powder and he was ready to go.

On stage Daniel worked the camera with complete ease and he was so convincing we were sure he had done this before. He’s a really great guy and backstage he cheered on all the other contestants and made everyone feel great about their new look. He gets my award for ‘best team player’.

She was so nervous at the start of this makeover business, but for a young girl of 16 she was so brilliant. On stage sun beams of light shone into her hair creating a fabulous illumination of her fi ery new hair. She looked insanely gorgeous.

A STAR IS BORN

As a part time sales assistant at Baker’s Delight, Caitlin joined the makeover event to help build

her confi dence. Her future dream is to be an actress.

Caitlin’s stunning green eyes, perfect skin and hourglass shape presented the perfect canvas

to create a beautiful masterpiece. Her hair had to be coloured a deep purple/red tone, to make

her emerald eyes sparkle. Vicky at Sauvage did an amazing colour job. When you have red hair

(please listen up Prime Minister, Julia Gillard), there are certain colours you should wear. Red

heads should embrace colours such as mustard, red, purple, some pastel tones and shades

of green. Given military is a huge fashion trend this year, this was the direction for Caitlin. Her

makeup application further highlighted her eyes and brought out her youthful features.

Beth was probably the most timid contestant when we met but after a hair colour and cut, it was like she was re-born. She was blown away by how amazing her hair felt and in turn it gave her a whole new movement on stage.

Beth is a pretty easy going single mum who is focused on her daughter so of course,

there is little time left for Beth. She has a great smile, great legs and a fabulous

hourglass fi gure. Her hair however was damaged and lifeless which she oiled and

pulled back in a pony tail.

Every woman should own a ‘LBD’ (Little Black Dress), and when you have an hourglass

shape like Beth you need to show your curves. The ‘hourglass shape’ is the most enviable

shape. Celebs such as Marilyn Monroe, Salma Hayek and Dita Von Teese are all hourglass

shapes. To inject some colour into her outfi t I wrapped a fl oral print pashmina around her

shoulders, this helps exaggerate the shoulder line and makes the waistline look smaller. To lift

the red tones out from the fl oral print pashmina, red shoes and jewellery were superb.

To create healthy hair and bring out her stunning brown/hazel coloured eyes, highlights

were added in, and the hair stylist gave her some Hollywood style. The red lipstick, lots of

lashes and soft smoky eyes were the fi nishing touches. A soft tan from Ella Baché, made

everything stand out.

Kathryn was entered into the makeover competition by her lovely husband George. Since having a

baby 18 months ago Kathryn was struggling to get her fi gure back. Shopping had become more

about tears than it did about purchases as she struggled to fi nd things to fi t.

I was captivated by Kathryn’s gorgeous face, naturally long eyelashes, beautiful eyes and perfect

skin. She reminded me of Kim Kardashian. Kathryn has a classic pear shape body, as do the

likes of J.Lo, Beyonce and Shakira. When dressing the trick is to draw the attention to the top

half and balance out the proportions.

To frame her face I found a brightly coloured print top with beaded detail around the collar

with an open neckline. Then included a black long length top worn open to create a vertical

line making her look taller and slimmer. This technique is called ‘body slicing’; the eyes tend

to focus on the centre part of her torso (the colourful bit). The black soft fl are pants are the

perfect style for her body shape and by keeping these black as well, it allows the focus to

be her top half.

I added in a statement pair of earrings and bracelet to match the green tones in her top,

and to make her look taller, she wore a pair of black platform heels.

The curled up-style was to give her more height, and having it pulled back helped

showcase her beautiful face. Her eye makeup was soft and smokey, and her lips soft to

bring out her natural features.

Kathryn was so nervous, with a few tiny tears, but in the end she did so well on stage and was accompanied by her gorgeous daughter Olivia. Kathryn you are a beautiful woman.

Throughout the process Monika had the time of her life. The stage and photography process was her favourite and she loved it! As a personal trainer her enthusiasm alone will get you on the right track.

Monika is the manager of Curves Roselands. As she says it is her job to help women look and

feel great. She wanted a makeover to swap the gym clothes for something more dynamic.

Monika is a classic ‘column’ shape, just like Nicole Kidman and Gwyneth Paltrow. Their body

shape is tall, and quite ‘up and down’ much like a column (or pillar). There are no strong

curves, so the trick is to use clothes to create the illusion of more curves. I injected some

‘rock-star chic’ with a cropped leather jacket which helps to exaggerate her shoulder line and

cleverly makes her waist look even smaller. With her hair we went a few shades darker with

some highlights. The aim was to make her eyes stand out more with some soft curls and a

fringe to add volume around her face.

As a Pathology Technician and single mother of two, Dorothy is on the go all the time. In her

makeover request she just wanted to look glamorous and feel like a new woman.

Dorothy has great bone structure and lovely eyes so these needed to be showcased. Under her

oversized suit we found an incredible petite fi gure. Dorothy’s body shape is straight like a brick

or column similar to Kim Cattrall and Drew Barrymore. To bring Dorothy to life I purposely

chose a dress that exploded with colour and shaped to make her body look curvier. The

capped sleeves help exaggerate the shoulder line plus the added belt accentuates

her waistline.

To bring out her eyes and lovely bone structure, we went to a darker hair

colour plus added highlights throughout to help give her a radiant

glow. Her makeup was applied to bring out her natural features.

ON THE CATWALKDorothy had the time of her life and you could tell from her twirl and her steps during the photo shoot that yes indeed, at one time she had been a dancer. Her new sophisticated look reminded me of Jane Fonda but her foot work was all her own.

Badrie works behind the scenes as a Chef for Amore Gourmet Burgers and is working hard to get her

Chef’s certifi cation.

Her work forces her to be very ‘pinned back’ and in uniform her look is very ordinary. There were

two things she didn’t want; one, don’t put her in a dress and two, don’t cut her hair. Well then,

there was the challenge, when someone says not to do something, then I usually do it

just to get them out of their comfort zone. Badrie’s height is very petite, so we needed

to get her into something that made her look taller. The styling technique here is to

wear vertical lines to elongate the body and add high heels. A little black cropped

bolero helped to exaggerated her shoulder line, and also helped make her waist

look smaller. We convinced her to cut off about 20cm of her hair and added a

colour and highlights. This made her feel she had lighter and healthier hair. We

added in soft curls with a side sweeping fringe to soften her look.

SOPHISTICATED ELEGANCEOver the past few months Badrie has worked hard to lose 20kg. A makeover was the next big step for her and letting go of her really long hair represents another way of letting go of that extra weight.

What we have is a beautiful Badrie who has been there all along, and now she has fi nally allowed herself to emerge. What a beautiful story she is.

It’s makeover moments like this that I love the most, not only is it a physical transformation, but I saw a change in his personality and presence. On stage he possessed this mighty swagger, a charm and energy that was born the minute he embraced his new look. When you let go, you open the door for wonderful new possibilities.

There is a saying, “be careful what you ask for as you just might get it”. Well, Nobby asked for

“a new me, a new look” but he really didn’t realise what that meant to us. It was all about the

hair, he had long hair tied back in a pony tail and there was no way he was going to let it go.

Every step that Nobby made was very contemplated, he even made us wait overnight before he

would agree to be a makeover contestant. Nobby had been growing his hair for over ten years

and it was a big part of him. It wasn’t until the fi nal moments of sitting in the chair at the hair

salon that he fi nally agreed to cut off the pony tail. And with it went a look that was outdated

and kept him stuck in a version of himself that he had long outgrown.

As a Plumber who owns his own company, his work wear is relaxed and comfortable so I

wanted to get him into something smart, well tailored and trendy. To give him great shape and

height, I chose a well tailored blazer and teamed it up with a black shirt and black pants to

create a long vertical line to make him appear taller and slimmer. The lighter jacket keeps the

eye on the black vertical line.

We tidied up his eyes with a brow wax to open the eye area and showcase his great eyes.

This is a common treatment for guys and it makes a huge difference.

The look on her face when she fi rst saw the high heels chosen for her was one of shock. Considering she had never worn heels that high, when called on stage, she entered with such a fabulous strut she became a girl on a mission to show off colour, be bold and express who she is.

When asked if she could have any job in the world, her answer was

“I love retail”. Danielle works at Roselands Lincraft and, you guessed

it, she “loves it”.

Magnesium is a wonder mineral and should be added to water.

It works on your energy levels, assists with sleep, muscle relaxation,

stabilized blood pressure, increased serotonin in brain chemistry,

heart health, blood sugar control, bone density and migraines.

“Seriously, this mineral will change your life....in a good way”. Check

your labels as not all Magnesium is equal, magnesium oxide is harder

to absorb. Also make sure you read the fi ne print, it is the “elemental

magnesium” reading that counts. Foods high in magnesium include

green leafy vegetables, almonds, cashews (nuts in general), and

other fruits and vegetables.

Spirulina/Chlorella is green algae that has the amazing ability

to absorb light and turn it into protein. It carries around 70%

protein, rich in vitamin A and chlorophyll (magnesium) and a

special essential fatty acid that is hard to fi nd. It is also crucial

for healthy nerves, great skin and shiny hair. Otherwise known

as gamma-linolenic acid (GLA) the only other great source is

breast milk and evening primrose oil. Spirulina/Chlorella are both

high in iron, and will improve the quality of your blood. A super

antioxidant, spirulina contains beta carotene, zeaxanthin for great

vision, and superoxidedismutase (poorly acronymed SOD); a giant

among antioxidants. Both chlorophyll and spirulina do a top job

of detoxifying heavy metals from the body.

Essential Fatty Acids who would have ever thought a fatty

acid would be a much sought after nutrient? My preference

is organic hemp oil over fl ax and combine that with a good

quality fi sh oil. They are a key component to all of your cell

membranes, particularly brain, nerve and eyes. It works as an

anti-infl ammatory, hair/skin/nails health, brain/nervous system

function, hormone regulation, blood clot function, immunity,

blood pressure and heart health.

Vitamin C is the man amongst boys on the

health food shop shelf. This is a powerhouse

nutrient and it’s cheap. Amongst many other

things, Vitamin C is an antioxidant involved in

over 300 different important metabolic functions.

It is found in high concentrations in the adrenal

glands and brain. It is crucial for collagen

production (nice skin), detoxifi es heavy metals

and is anti-cancer, anti-viral, anti-bacterial and

anti-fungal. The dosage I recommend is 500mg

twice a day at least.

AUBOYLike most of you, the fi rst time I saw Jessica Mauboy she was auditioning for Australian Idol in 2006. Her feet were planted in the red sand of the outback, fl ies were buzzing around her head and the wind was blowing through her hair. As she sang I knew she would be a contender, but it really wasn’t her voice that captured me, it was her spirit. Her beautiful smile and the sparkle in her in eyes, made me smile. Her presence was captivating.

Back then Jessica was a shy, plump sixteen year old who had grown up in Darwin chasing Kangaroos and fi shing with her dad. She is still that same girl, only now she is a twenty one year old young woman in stilettos chasing her dream. Perhaps that is another reason why her spirit continues to shine so bright.

Today Jessica Mauboy is set to launch her second album GET ‘EM GIRLS, to be released by Sony Music on Friday,

November 5th, 2010. The single Get ‘Em

Girls featuring Snoop Dogg has already been released.

‘GET ‘EM GIRLS’ is about standing tall and taking control; being confi dent and brave. The title track is about shoes. Jessica admits in an article with Ross Purdie, National Entertainment Writer, “whenever I put on a pair of heels I feel like I’m on top of the world, I can dominate whatever is going on”. Shoes are her ultimate accessory and in her recent return to Australia she commented she had eight bags fi lled with designer brands and shoes. She even refers to her Gucci alligator stilettos in the title track as her Crocodile Dundees.

So how do you go from the red sands of the Australian Outback to Hollywood’s Sunset Boulevard in four short years? In observing Jessica, I would say it is pure passion and her desire to succeed. At times she felt very lonely as she travelled through the US writing songs and proving that dreams only become a reality when you take action. Through Australian Idol Jessica listened to direction and paid attention to the process. She had no expectations of what was suppose to happen and in turn

discovered a new Jessica emerging. She didn’t win the title but her determination and her spirit took her the rest of the way.

She is a beautiful role model, not because she is a singer, looks amazing, wears stunning sexy clothes with heels that make her stand tall and feel powerful. She is a role model for the human spirit. She has shown all of us what is possible when you believe in yourself and those around you. She has been quoted as saying “hopefully this shows even if you are from a small town in Australia you can make it” and “don’t do it for anyone else but yourself”.

Jessica Mauboy will continue to turn heads as she struts her talent and her style. Will she catapult to the likes of Madonna or even the newest version, Lady Gaga? Well it will come down to her sound and how her music captures and connects with you in your own life. What is really excting about the makeover of Jessica Mauboy, is she has found herself. Wherever Jessica Mauboy goes from here, I get the feeling it will be on her own terms. She understands that life is a journey and when you have a spirit and a smile like hers, plus an openness to life, anything can happen.

Next to being a model, and a self taught interior

designer, Jason’s claim to fame was winning the

2009 Chanel 9 competition, Homemade. He and

nine other aspiring designers competed to create

the ultimate in design space. His laid back and

methodic approach, his keen eye for style and

his faith in the process made him an excellent

candidate to watch and rise to become the winner.

Born in Newcastle, a move to Perth and then to

Sydney saw him start his modeling career right

out of high school. At age 21 he moved to Europe

to continue his modeling career and began his

education in interior design by observing all the

different tastes, fl avours, textures and colours that

Paris, London and Milan had to offer.

His modeling career then led him to the US market

where he lived in New York, Miami and LA. Again

observing and absorbing unique design from the

eclectic to the ostentatious.

Now back in Sydney and enjoying life on the

Northern Beaches, Jason has his own design

company. His latest role is host of The Block online

for Channel 9.

It’s not every day you get to enjoy sitting back and watching chef

“Fast Ed” work his magic in the kitchen live, but for Roselands

Customers it was a very tasty day indeed. He cooked up tantalising

dishes of Seafood Paella with Kingfi sh and Mussels, Rosemary and

Garlic Scented Chicken with Lemon Salt and Citrus Salad, Extreme

Fish n’ Chips, Raspberry-Mocha Charlottes with shaved Chocolate,

plus many more. There he was in a makeshift kitchen in the middle

of a Shopping Centre and he looked like he could have done this

blindfolded.

As Fast Ed, and they don’t call him that for nothing, whizzed and

whisked, rolled, shook, fl oured, fl attened and melted ingredients, he

shared stories of his world travels as though we were friends just hanging

out in his kitchen. To cook with such ease was quite admirable.

At shows like this you fi nd joy in discovering what you should be

using in your kitchen and how you should be using it. Holding a

chopping knife for example, most of us just grab the handle. To get

a really tight grip, and be in control, put your thumb and forefi nger

on either side at the top of the blade near the handle, then wrap

your other three fi ngers around the handle. Now you are in charge

and there is no “knife wobble”.

According to Ed, the one thing that no kitchen should be without is...

When it comes to cookware that was available at Roselands, Ed

suggested the Scanpan Fusion Range as a very good choice,

Speaking of a large range of equipment, to mix the batter for the

fi sh n’ chips, Ed used a Whipped Cream Siphon Gun and just

sprayed it on to the fi sh as he was preparing it. He also left the skin

on the fi sh in the preparation. Why you ask? Because it retains the

nutrients and locks in the moisture.

Fast Ed cooks with great confi dence and talks about ingredients like

he is naming off his children. There was a point that I thought about

the “starter cook”. Today many young people are not “trained” in the

kitchen and they have no real experience in quality food shopping.

It is much easier to go straight to the packaged convenience at the

grocery store. The butcher’s counter on the other hand can be a bit

overwhelming in choice, cut and selection where only the experienced

seem to shop. So I asked Ed if he had any advice on “butcher

etiquette” to help the new user feel more comfortable.

So as I see it, walk up to the butcher’s counter like you really know

what you are doing, be sure you know what cut you want, or ask

for recommendations. Then when dinner is said and done, let

your butcher know how you found the product. This could be the

beginning of a beautiful and satisfying relationship.

As for Fast Ed, who is always on the go, I had to ask him, “how do

you keep yourself sane and healthy?”

“Experience counts for everything. Once you fi nd a good butcher, stick with him. And make sure that you let the butcher know what you have liked about his product. Feedback is the key to keeping the butchers up to task.”

“I run every day, at least 10 kilometres – it makes me sane. When I’m away, I talk to the kids and my wife fi rst thing and last thing every day. Lastly, I make sure I never settle for second best, from others or from myself.”

“Good quality sharp knives – buy well, they’ll last you a lifetime. While you’re at it, get the largest chopping board that will fi t your kitchen bench, as it makes every kitchen task easier.”

“but a kitchen needs a range of equipment, one non-stick is usually enough. Beyond that, go for the heaviest pan you fi nd.”

1 Sauté the onion and capsicums in

olive oil in a large frying pan over a

high heat until softened. Add the

tomatoes, season generously with

salt and pepper, then cook until

a dry soffrito forms.

2 Set a large frying pan or paella

pan over a medium heat and fry

the chorizo slices for 5 minutes, until crisp. Add the garlic, spices, zest and

anchovies and fry briefl y. Stir in the rice and cook for 1 minute, until the grains

appear translucent.

3 Pour in the sherry and cook until absorbed, then stir in the onion soffrito and

half the stock. Cook, stirring occasionally until absorbed. Add the remaining

stock and arrange the chicken, prawns and mussels on top. Cook without

stirring until the liquid is absorbed and the meats are cooked. Serve topped

with herbs and lemon wedges.

1 brown onion, diced

2 red capsicums, diced fi nely

2 Tbsp extra virgin olive oil

1 x 400g tin diced tomatoes

salt and pepper

4 chorizo sausages, sliced

6 garlic cloves, chopped

1g saffron

1 Tbsp smoked paprika

2 lemons, zested

6 anchovies

1 cup medium grain rice

1 cup dry sherry (Amontillado)

2 cups chicken stock, hot

500g Kingfi sh, in strips

12 large green King prawns, peeled

12 mussels

chopped coriander and mint,

lemon wedges, to serve

SEAFOOD PAELLA WITH KINGFISH AND MUSSELSSERVES 4

1 Combine the rosemary and garlic in a mortar and pound until a smooth

paste forms. Stir in 1 Tbsp olive oil, then insert this mixture up under the

skin of the chicken supremes.

2 Arrange the chicken skin side down in a non-stick frying pan set over

a medium heat. Cook for 2 minutes each side, until just beginning

to brown, then Pour in the chicken stock, fi t a lid, and simmer for 12

minutes, or until the chicken is just cooked.

3 Zest the lemons and combine this with the salt in the mortar and pound

until smooth, then set aside.

4 Peel the lemons and grapefruit and cut the fl esh into segments. Finely

slice the fennel and chilli, then mix with the citrus pieces and parsley

leaves. Dress with the remaining olive oil.

5 Carve the chicken and serve with the salad, topping each with the

lemon salt.

ROSEMARY AND GARLIC SCENTED CHICKEN WITH LEMON SALT AND CITRUS SALAD SERVES 2

PREPARATION TIME: 5 MINUTES

COOKING TIME: 20 MINUTES

½ bunch rosemary

4 cloves garlic

2 Tbsp extra virgin olive oil

2 chicken breast supremes, skin on

500ml chicken stock

2 lemons

1 Tbsp salt fl akes

1 pink grapefruit

¼ head fennel

½ long red chilli

½ bunch parsley leaves

1 Cut the potatoes into 1cm chips

and microwave on high for 3

minutes, until just tender, then

refresh in an ice bath.

2 Whisk the soda water and one egg white together, then sift in the

plain fl our, bicarbonate of soda and ground turmeric. Stir gently to

just combine, then transfer to a whipped cream gun and charge

with two bulbs of nitrous oxide.

3 Whisk the remaining egg whites, then dip the potatoes in. Dust

with a mixture of self-raising fl our and Cajun seasoning, then fry

immediately in hot vegetable oil (190°C) for 3 minutes, until golden

and crisp.

4 Pat the fi sh dry, then dust with rice fl our. Coat the fi sh with batter

from the cream gun and fry immediately in hot vegetable oil for 4

minutes, until the batter is puffed and crispy. Season with salt, then

serve with tartare sauce and lemon wedges.

EXTREME FISH AND CHIPSSERVES 2

2 medium waxy potatoes, peeled

1 cup ice-cold soda water

4 egg whites

½ cup plain fl our

1 tsp bicarbonate of soda

½ tsp ground turmeric

2 Tbsp self-raising fl our

2 tsp Cajun seasoning

vegetable oil for deep frying

2 x 150g skinless kingfi sh fi llets,

all bones removed

½ cup rice fl our

tartare sauce and lemon wedges,

to serve

1 Preheat oven to 200°C. Dust the

lamb cutlets in spices and olive

oil, season with salt and pepper,

then sear in a hot frying pan for 2

minutes each side until just sealed.

Transfer to the oven and bake for

10 minutes, until medium.

2 Toss the celery, apple, walnuts and parsley. Whisk the yolks, lemon

juice and vinegar in a large bowl, then add the vegetable oil in a

steady stream whisking constantly. Season with salt and pepper,

then toss through the salad. Serve the lamb on a bed of Waldorf

salad topped with olives.

8 x double lamb cutlets, French trimmed

2 tsp ground cumin

2 tsp ground turmeric

1 tsp ground coriander seeds

½ tsp ground cinnamon

¼ tsp ground ginger

2 Tbsp extra virgin olive oil

salt and pepper

2 sticks celery, sliced fi nely

2 Pink Lady apples, sliced fi nely

½ cup walnuts, toasted

¼ bunch parsley, chopped fi nely

2 egg yolks

1 lemon, juiced

1 Tbsp sherry vinegar

1 cup vegetable oil

½ cup mixed olives, diced
