    WINERY FEATURE | WINE COUNTRY THIS WEEK

    In homes across the U.S. the hearth repre-

    sents the comfortable, familiar nature of

    family and friends gathering around a fire.

    For Hearthstone Winery, the name was no

    accident, it was planned to invoke this theme.As a young winery it is still relatively

    unknown. Though making wine since 2003,

    there wasnt a comprehensive plan in place to

    market the wines. In fact, owner Hoy Buells

    plan is to continue to keep it simple. Were

    really only interested in selling to local restau-

    rants and via the tasting room, he says. We

    make wine to suite the market. Hearthstone

    is currently producing just under 2,000 cases,

    though they have structured the facility to

    accommodate up to 7,000 cases. The multi-

    tude of wines produced varies from Cabernet

    Sauvignon, Sangiovese and Syrah, to Pinot

    Noir, Roussanne and ros. Weve never

    sourced anything out, says winemaker Paul

    Ayers, a 20-year veteran in the Paso Robles

    wine industry. The plan was to always utilize

    estate fruit and at present they have 40 acres

    under vines encompassing 15 varieties. Were

    in a good place with the limestone soils, Ayers

    says of his west side acreage which has a

    shallow, clay top layer.

    Ayers started as a cellar rat in the early

    1980s, working for the powerhouse that was

    Estrella River Winery, the largest winery at that

    time. Then he joined the army, but eventually

    came back to a profession he loves. But the

    times and wine styles have evolved. Ive seenit all, he recalls. I remember in the late 80s

    when people were excited about bladder

    presses, he says with a true winemakers

    enthusiasm. Now some places are back to

    basket presses, more old world techniques. I

    think both ways work excellent. He uses

    minimal oak for his red wines, and neutral

    barrels for his white wines, and doesnt allow

    a malolactic fermentation because he feels the

    total acids in the wines are in balance. Hell

    then leave his whites on the lees and stir themoccasionally to soften them a little, giving

    them a solid mid-palette strength. Its a time-

    consuming process, but Ayers ardently

    believes this ultimately produces better wines

    that the public will enjoy.

    Im consumer friendly, he admits about

    the wines he makes. My wines are fruit

    forward with some oak, but not over-oaked,

    he says. 15.2 percent alcohol is plenty, he

    says. But styles have changed and riper fruit

    with a longer hang time means wines w

    higher alcohol content. When I started in

    business nothing was greater than 14 perc

    that was taboo. Now you get Syrahs that

    16 percent. But a lot has changed, for

    and Grenache) and Slipstone, a

    blend of Grenache and Syrah. It

    received its peculiar moniker

    when the earthquake that hit Paso

    Robles a few years back dislodged

    a huge limestone rocks that slid

    down the steep Grenache slopes,lodging against vines in their path.

    One thing I like about the west

    side of Paso Robles, well tell you

    what the blends are, theres no

    secret, Ayers says. He and Buell

    proudly state percentages in their

    blends for all to see. But beyond

    blends, the wine critics and public

    are noticing that Paso Robles has

    very accessible and unique wines.

    Paso Robles is on the cusp ofsomething special, Ayers says.

    Its good to see the younger

    generation appreciate wine more.

    Instead of people spending $200

    at one winery like they used to,

    now theyre spending $200, but

    they go to a couple different

    wineries, a few bottles here and

    there and it really expands their

    horizons.

    Ultimately, Hearthstone excelsdue to their ability to treat every

    wine individually unlike a

    homogenized approach where all

    the wines are consistently made

    with the same recipe. Thats why

    Paso Robles is skyrocketing,

    Ayers suggests. We are making

    wines to the best of our ability.

    And Buells long-term plan

    embraces this philosophy. Were

    not trying to be the biggest

    winery, he says. We simply want

    the best, highest-quality wine.

    Salisbury Vineyards 102-year-old school-

    house in Avila Valley serves as a symbol of our

    own familys long history in California agri-

    culture. In 1850, our ancestors founded the

    town of Walnut Grove, on the Sacramento

    River Delta and over the course of 159 yearsour family has farmed pears, asparagus, toma-

    toes and other field crops. They have never

    stopped planting and growing. Never stopped

    farming.

    Salisbury Vineyards wines and vineyards

    are a testament to the benefits of seven gener-

    ations of cumulative knowledge of the land.

    Nine years ago, our Avila Valley vines were

    planted with incredible care and planning by

    my father, John Salisbury. The Pinot Noir,

    Chardonnay, Pinot Grigio, Cool Weather

    Syrah Noir and Albario were meticulously

    chosen based on appropriate clones and root-

    stocks then planted in blocks arranged by

    soil type, angles and directions of the slopes,

    and the varying microclimates in Avila Valley.

    To give you an example, our Pinot Noir vines

    are a sampling of eight different clones on

    four specific rootstocks. The results from all

    this attention to detail have been phenom-

    enal, as we have had many heavily awarded

    and noted wines, and we are consistently

    solicited by other wineries to source wine-

    grapes from our vineyard. In January, our

    2005 Reserve Pinot Noir received a gold

    medal at the San Francisco Chronicles Wine

    Competition. But it was even more exciting to

    find that Ortman Family Vineyards and

    Flying Goat also won gold medals from our

    Pinot Noir grapes, making our vineyard the

    recipient of three out of thirty-five of the golds

    for the $35 and up category.

    For many casual wine drinkers, the wine collecting bug hits

    sooner than expected and suddenly they find themselves storing

    wine bottles in more than one location. It starts with a small wine

    rack in the kitchen, then grows to fill the bottom of a hall closet, or

    two, and spreads to various cool, dark corners of the household.

    When wine bottles take over the living room its time to think about

    a wine storage room.

    If you buy wine by the case rather than bottle, one option is to

    rent space in a temperature-controlled self-storage center. These are

    especially popular in residential areas with a large number of apart-

    ment buildings and homes without basements. But this choice

    requires a monthly fee and the hassle of not having the bottles

    quickly and easily at hand.

    Personal refrigerated units designed for wine-keeping at home

    have become more sophisticated and attractive. These look like

    miniature refrigerators and are made small enough to fit under a

    kitchen counter or large enough to walk inside. Many come with

    sliding shelves, variable temperature controls, lights, digital displays

    and other convenience options.

    If you have the space, consider building a dedicated wine room in

    your home. This is a project that has relatively high initial cost butcan provide long-term savings and undeniable convenience

    compared to self-storage. In some cases, a wine storage room may

    work best in conjunction with a separate under-counter refrigerated

    unit in the kitchen. With this approach, you can keep wines for

    long-term aging in the room, and the everyday wines in the kitchen

    unit.

    The keys to designing and building a good wine storage room are

    low light, a steady, and restricted temperature range (55-60 degrees)

    and humidity (65-75%) range, and the absence of vibrations. All of

    these requirements create the ideal conditions for proper aging of the

    wine. Too cold, or too warm, the wine ages too slowly or too quickly,

    respectively, and therefore imperfectly. Too dry, and cork shrinkageallows air inside the bottle, which spoils the wine. Finally, vibrations

    will disturb the molecular structure of the wines and accelerate the

    production of sediment.

    When building the room, all sides, floor and ceiling must be well

    insulated, the entry door of exterior grade, and a wine-room cooling

    unit built into a wall. A normal air conditioner will not do the job

    because it is designed to remove moisture from the air. There are

    many brands of cooling units available and with some research o

    the Internet you should be able to find the right unit at the right

    price sized for your storage room.

    Last, but certainly not least, is the selection of the wine racks.

    Racks are usually made from wood that can hold up to the tempe

    ture and humidity, such as cedar or redwood, although some com

    in other materials such as plastic or aluminum. Most popular are

    wooden racks, which add a warm and elegant look to the room.

    Although it requires an investment of time and money, a hom

    wine storage room can be very gratifying. All of your wine in one

    place, inside the confines of your own home. And maybe best of

    you can get back to using hall closets for coats and hats.

    Its bud break in Paso Robles and the cele-

    bration is under way at Jada Vineyardstasting room. The sign of new life, spring-

    time and numerous possibilities awakens the

    crew of Jada like nothing else.

    Jada will celebrate its one-year anniversary

    on May 15 of this year, having opened the

    weekend of the Paso Robles Wine Festival in

    2008. Its such a beautiful piece of property,

    says Susan West, Operations Manager at Jada.

    Were all very happy to be here at Jada and

    lucky to be working here. Indeed, the 91-

    acre Templeton Gap Vineyard

    with 61 acres planted, is an envi-

    able spot at which to arrive each

    morning. We simply couldnt

    have done it without two things,

    says West. We have the most

    wonderful customers and our

    fellow wineries have been so very

    good to us.

    Owner Jack Messina opened

    the winery last year, following a

    passion of his that occupies more

    and more of his time, a difficulttask when one considers that

    Jacks day job is as a cardio-

    vascular surgeon. All the names

    at the winery have meaning for Jack and for

    his wife, Robyn, West says. Jada was the

    name of his grandfathers fishing boat in

    northern Sicily, for example.

    But its more than the names. The

    Templeton Gap vineyard produces luscious

    fruit that winemaker Scott Hawley has been

    able to craft into truly luxurious wines using

    the Rhone and Bordeaux blends growing

    here.

    The Jada tasting room is designed to take

    in all the views that the Templeton Gap offers.

    The soft, rolling hills give way to open sky

    and valley vistas where vineyards predomi-

    nate in between ranches and farms. The lightcolors, open windows and light pouring in

    from all sides allow unfettered views of fruit-

    less plum trees while allowing you to focus on

    your glass of Hells Kitchen or Jersey Girl.

    You have to wonder what Old Timers would say whenthey saw the word The Way Station emblazoned on the

    outside of this handsome restored building in the middle ofCayucos just across from the ocean. And then went insideand were confronted by one of best wine (and wines by theglass) lists around. The food is also a long way aboveanything you might have found in this charming seasidetown at the turn-of-the-century. These are all some of thereasons that if you mention to people along the coast andinland (at least those who know enough to appreciate andsearch out a fine bottle of wine and first rate food) that youare headed to Cayucos, the first words out of their mouthare likely to be Hoppes Garden Bistro.

    The menu chef and owner Wilhelm (Bill) Hoppe has put

    together is inspired by the seasons and complimented bythat exceptional wine list (with wines also available forretail sale). He features organic meat and produce from thefarmers markets in the area and uses local lobster and shell-fish, including abalone direct from the famous AbaloneFarm.

    BEEF TENDERLOIN WITH BORDELAISE SAUC

    CARAMELIZED CARROTS AND SHALLOTSTender beef filets served with a rich, velvety sauce are what you

    might envision for a romantic dinner.What comes as a surprise isthe simplicity of this recipe. To save time, you can prepare the

    Bordelaise sauce a day or two in advance and refrigerate it until

    ready to serve.This dish deserves your best Robert Hall Winery

    Cabernet Sauvignon or the Bordeaux Blend, Meritage as an accom

    paniment.

    For the Bordelaise sauce:

    1-1/2 tablespoons unsalted butter

    2 shallots, chopped

    1 tablespoons freshly cracked pepper

    1 bay leaf

    6 to 8 fresh thyme sprigs 1/2 bottle (750 ml) Cabernet Sauvignon (about

    1-1/3 cups)

    2 cups unsalted veal or beef stock

    3 tablespoons unsalted butter

    2 beef filets (preferably prime), each 6 ounce, well trimmed

    Salt, to taste

    Freshly cracked pepper, to taste, plus 1/8 teaspoon

    1 carrot, cut into 1/4-inch dice (about 1 cup)

    2 shallots, cut into 1/4-inch dice (about 1 cup)

    1 fresh thyme sprig

    1 bay leaf

    1 tablepsoon chopped fresh flat-leaf parsley

    To make the Bordelaise sauce, in a 3-quart saucepan over medium

    heat, melt the butter. Add the shallots and saut, stirring occasion

    ally, until tender and lightly golden, 6 to 8 minutes. Add the pepp

    bay leaf and thyme and stir to mix. Add the wine; bring to a boil a

    cook, stirring occasionally, until the liquid is reduced to 1/2 cup, 15

    to 20 minutes. Add the stock and bring to a simmer, skimming off

    any excess fat and cook for 15 minutes. Strain the sauce through a

    fine-mesh sieve into a clean saucepan and keep warm over very lo

    heat.

    In a 10-inch fry pan over medium-high heat, melt 1 tablespoon of

    the butter. Season the filets with salt and pepper. When the butte

    is hot, add the filets and sear until golden underneath, about 2

    minutes. Using a pair of tongs, turn the filets, and add the carrot,

    shallots, the 1/8 tsp. pepper, the thyme and bay leaf. Cover and co

    for 3 minutes for medium-rare, or until done to your liking. Transfe

    the filets to warmed individual plates.

    Continue cooking the vegetables, uncovered, until just tender, 1

    minute more. Add the sauce, bring to a boil and stir in the

    remaining 2 tablespoons butter. Cook, stirring occasionally, until t

    sauce thickens, 7 to 10 minutes. Remove the thyme sprig and bay

    leaf and discard. Stir in the parsley. Spoon the sauce and vegetabl

    around the filets and serve immediately. Serves 2.

    This classic recipe, Beef Tenderloin with Bordelaise Sauce, Caramelized

    Carrots and Shallots, paired with either Robert Hall Cabernet Sauvignon or

    Robert Hall Meritage, pays homage to one of the worlds greatest wine and food

    combinations beef with a red wine from Bordeaux, France. And since a true

    red Bordeaux wine is comprised of a blend of several regional grapes, I would

    suggest using the single varietal Cabernet Sauvignon by Robert Hall Winery as

    the wine ingredient in the sauce and choose their Meritage wine to accompany

    the meal. Meritage wines, as they are named in California, are defined as wines

    that are made from the classic grapes of the Bordeaux region. This Meritage

    replicates that great Bordeaux tradition beautifully and marries perfectly with

    this recipe.

    Robert Hall Winery, based on Highway 46 East in Paso Robles, has been

    building a name for quality grapes and wine, with a focus on Rhone varietals,

    such as Syrah and Grenache and as well as Bordeaux grapes like Cabernet

    Sauvignon, Merlot, Malbec and Cabernet Franc. Winemaker Don Brady takes

    care to bring out the best in the grapes and shapes Robert Hall wines with

    finesse and style. Their Meritage wine, with deep color, rich, ripe fruit and soft

    tannins, works seamlessly with this beef tenderloin and its hearty, yet surpris-

    ingly smooth sauce. Each taste of the beef, and subsequent sip

    of the Meritage, creates a natural binding of the proteins fromthe beef with the tannin in the wine. The wine acts as a

    cleansing agent for the palate with every bite. The sauce,

    adding sweetness with its caramelized carrots, gets its silkiness

    from the melted butter and its richness of flavor from the

    Robert Hall Cabernet Sauvignon.

    With its 19,000-square-foot cave lined with stacks of

    barrels of all sizes, including a wall of 1000-gallon

    French oak fermentation tanks, the Robert Hall Winery

    is impressive both inside and out. A spacious tasting

    room features a ceiling that seems to go on forever,

    and an enormous, one-of-a-kind chandelier that floats

    overhead every tasting room visitor. Outside the winery,

    artistic fountains, a large amphitheater and rustic

    barbecue area with two regulation bocce ball courts

    leaves little to be desired except maybe another serving

    of one of their delicious wines while strolling the

    grounds.

    Tolosa welcomes younger wine drinkers with new social group; Wine Clique

    The Millennial generation is the second largest generation with

    more than 70 million, trailing the Baby Boomers, which gives them a

    powerful statement as a consumer. Every year an average of four

    million Millennials turn 21. They are now the largest consumers of

    wine and are the first generation to incorporate wine drinking into

    their lifestyle at a younger age. Wine is a social drink; they talk about

    it like they do music.

    With three colleges surrounding the San Luis Obispo area, Millen-

    nials are what make this town so unique. Tolosa Winery is one of the

    closest wineries to downtown SLO, where it is buzzing with energy

    from this powerful generation. We see more and more students and

    young professionals appreciating wine on a daily basis, but we felt we

    needed to do more to reach out to them, states Brittney Blete, Tasting

    Room Manager. A year ago Tolosa began joining social networking

    The reddish two story Southwestern

    style building stands on a hill over-

    looking Highway 46 East. At first

    glance you might think youre in Santa Fe,

    but you are in the heart of Paso Robles winecountry. The bold colors of the exterior of

    the tasting room with its low slung tiled roof

    and pueblo design articulate the desert envi-

    ronment perfectly, even to the point where

    cactus have been planted near the entrance.

    The interior of the 2,000-square-foot tasting

    room continues the theme with two very

    large beautiful Indian tapestries hanging on

    the wall behind the bar. The tasting bar itself

    is spacious and wide, with the aim to accom-

    modate longer visits for guests. While manytasting rooms only having a bar, the J. Paul

    Rosilez tasting room provides leather

    couches to sit on, kick back and relax. And

    while you bask in the low key, informal

    place, youll try everything from the Viog-

    nier, Chardonnay, Syrah, Sangiovese,

    Zinfandel, Petite Sirah, Pinot Noir and

    dessert wines. You will also be greeted by Joe

    and Barbara Rosilez who are the parents to

    the winemaker Joe Rosilez (junior). You

    might wonder where Joe the Winemakers is.

    While J. Paul, Joey to those who know

    him, is working multiple jobs, J. Paul senior

    and Barbara man the tasting room. They

    originally purchased property in Paso Robles

    after they moved from the Lodi area

    (another wine-producing region) to the west

    coast of California, in the late 1990s. Upon

    purchasing their east side property, they

    started using grapes exclusively from the

    Herder Vineyard further out from Paso

    Robles in an even warmer growing region.

    As production increased, they started

    sourcing fruit from other areas around Paso

    Robles.

    Family has always been important to the

    Rosilez clan. Were a close family, Barbara

    states. When one of us needs help, theothers are there to help. This has manifested

    in Barbara and J. Paul senior running the

    tasting room, seeing as how Joey works full

    time at a day job and arrives at the winery

    each night to check on the state of the wines.

    Joey works as a pharmacist in the little town

    of Los Osos, south of Morro Bay. His occupa-

    tion explains his flagship wine being called

    Apothecary, one that sells remarkably well

    for the 3,000-case winery. That they have

    become the face of the winery, though un

    pected, suits them fine. We enjoy doin

    very much, Barbara says of her weekend

    The 14th annual Atascadero Wine Festival is recruiting volunteers

    to assist with the 2009 Wine Festival. The festival will be held on

    Saturday, June 27, 2009 at the Atascadero Lake Park. The festival is

    turning heads and making big changes this year. With a new evening

    focus, the wine taster will experience a culinary and wine tasting affair

    all wrapped into one amazing, lakeside occasion not to be missed.

    Volunteers are needed to assist on the day of the Wine Festival with

    implementing this exciting event!

    The contributions from volunteers are key to the success of the

    Wine Festival. Each volunteer will work a three- to four-hour shift and

    is given one complementary ticket to the Wine Festival as a thank you

    for their time and hard work.

    Atascadero is known for their warm summer evenings and this yearthe Atascadero Lakeside Wine Festival will take advantage of the

    moderate evening temperatures by moving the festival to 4 to 8 p.m.

    Proceeds from the Wine Festival are donated to the Central Coast Zoo

    Its hard to believe it has been four years,

    says Steffanie Anglim. She is referring to the

    opening of the Anglim Winery tasting room

    in downtown Paso Robles, which celebrates

    its fourth anniversary this Wine Festival

    weekend. Steve and Steffanie Anglim started

    the winery in 2002 with a focus on producing

    Rhne varietals from boutique vineyards on

    Californias Central Coast. Since then, the

    winery has grown to about 3,500 cases a year

    with Rhne varietals and blends still at the

    core including their well-regarded Viognier,

    Roussanne and Grenache plus limited-

    production family favorites including Pinot

    Noir and Cabernet Sauvignon. Creating just

    the right assortment of wines and vineyards is

    key. Partnering gives me enormous flexibility,

    allowing me to have a Santa Rita Hills Pinot

    Noir, for example, alongside a Paso Robles

    Westside Mourvdre, each true to theirunique place, says winemaker Steve Anglim.

    And, I want to work with growers who are as

    passionate about growing grapes as I am

    about making wine.

    Anglim produces the wines in small lots,

    allowing the truly unique to emerge in order

    to create exciting and distinctive wines. Ulti-

    mately, Anglim strives to make balanced,

    food-friendly wines that tend to be more

    elegant than overbearing, and reflective of

    both the winemaker and the grape.

    Since the Anglims dont own

    their vineyards, they looked to

    downtown Paso Robles for that

    sense of place for their tasting

    room. When we released our first

    wines in 2004, we tasted byappointment only, basically out of

    the back of the truck. We opened

    the tasting room a year later, and were the

    only one in town for a while, says Steffanie.

    Now there are more than 14 tasting rooms in

    downtown Paso Robles, and they are glad to

    have the company. Anglims tasting room is

    located somewhat off the beaten track at the

    historic train depot, one of Paso Robles oldest

    refurbished buildings (circa 1887). The

    space has a great feel to it bright and wa

    relaxing and interesting at the same ti

    building really connects us and our guest

    The Legal Aid Foundations 50th Anniversary Grand Celebration

    Courthouse in Santa Barbara on Saturday, May 16 at 5:30 p.m. Go

    Key people to Legal Aid being honored at this event are Harris Seed

    Since 1959, Legal Aid has provided residents of Santa Barbara

    County free legal representation in critical civil matters to seniors,

    victims of domestic violence and people living at the poverty level

    For 50 years, Legal Aids mission has been to ensure that lo

    income people and seniors have access to the civil justice system

    secure safe shelter, adequate income and protection from dome

    violence and elder abuse. Their clients are frequently at risk of be

    beaten or abused, or in danger of becoming homeless through the

    of Social Security or disability benefits, housing discrimination

    unfair eviction. Legal Aid offices are located in Santa Barbara, Sa

    Maria and Lompoc.

    This past fiscal year more than 5,000 Santa Barbara County r

    dents were helped.

    Legal Aid has assisted 565 victims of domestic violence ob

    protection against their perpetrators.

    Volunteer attorneys with the Project Outreach and Senior Outre

    programs counseled more than 390 visitors at the Franklin, West

    and Goleta Community Centers.Staff and volunteer attorneys provided assistance to nearly 4,

    self-represented litigants at the three (Santa Barbara, Santa Maria

    Lompoc) court house self-help centers.

    We couldnt have gotten as far as we have without the contin

    support of the legal community and this event is to appreciate

    celebrate them as well, said Executive Director Ellen Goodstein.

    The Sylvester Winery became a reality

    some 20 years after Sylvester Feichtinger

    purchased the land in th 1960s. In 1982

    the first grapes were planted and from there,

    Sylvester Winery was born. But it would be

    another 20 years until Head Winemaker Jac

    Jacobs and his assistant Michael Barreto came

    to work together here, meeting for the first

    time during their interview phase with the

    winery.

    Originally operating as a cattle and hay

    ranch, the Sylvester Winery is now part of the

    Paso Robles vineyard landscape where the

    farming has turned to soil and sun, fruit and

    juice. But the intensity that goes into each

    bottle is exemplified by what Assistant Wine-

    maker Michael Barreto calls a good balance

    between he and Jacobs. Jac has that kind of

    from the ground up education in wine andhis approach has always been about the

    artistry. I got my background in the produce

    business and did some studies, he says.

    Barreto develops both the science and the

    artistry along with Jacobs and together they

    create three different labels from Sylvester

    Winery.

    We produce wines under three labels,

    says Barreto. Kiara, which is named after

    Sylvesters granddaughter, is the reserve

    label. Under that label, the winery produces

    some 25,000 cases a year. Kiara represents

    Paso Robles. Our Cab, Merlot, Chardonnay,Sauvignon Blanc, Zinfandel, Syrah and occa-

    sionally Sangiovese, come out of vineyards

    here, says Barreto. By contrast, the Sylvester

    label represents value-priced wines, which

    represent the Paso Robles style well, but also

    blend from sourced grapes. Its actually a lot

    of fun to create the Sylvester label, says

    Barreto. Making reserve wines is a relatively

    easy thing with great fruit and resources.

    With the Sylvester label, were much more

    price-point conscious, but also fully aw

    that what counts is that the wine taste

    good as it should.

    Jacobss artistry got kicked to the next le

    when he and Barreto helped Sylvester cr

    Vigne label is where Jac picks the best wi

    salads, and a choice of an oak fire-grilled entre, including prime NY

    steak. Each course will be expertly matched with a glass of wine by

    Sylvesters sommelier. The price of this meal is $39 per person.
