Dear Member:

Despite the fact that I’ve been out of school for a number of years, I find the start of the new school year exhilarating. Maybe it’s the new clothes or perhaps it’s the cooler temperatures. Whatever the reason, fall brings with it a sense of possibility.

At Catholic Life, we’ve had a busy summer and we anticipate a busy fall as we race towards the end of the year.

Seminarian Scholarship Program Thirty years ago this fall, a dream that had its roots in our founding came true. In 1987, we awarded our first scholarships to those studying for the Roman Catholic priesthood. Since that time, we’ve provided financial support to more than 133 young men studying at 18 seminaries worldwide.

Of those who received scholarships, 91 have been ordained priests. We have just awarded our 2017-2018 scholarships. These recipients, like our first two 30 years ago, show great promise. We invite you to learn more about our seminarian programs on page 6.

All American ScholarshipsOne of the many benefits of membership is our All American Scholar Program. Over the last 10 years, we’ve helped 520 Catholic Life members get their start in college. These are all good students who’ve studied hard and have done well in school. More importantly, these students have all worked to make their parish and community a better place to live by volunteering. In 2018, we’ll award a $1,000 scholarship to 35 Catholic Life members who are graduating high school seniors. Please see pages 12-14 for the rules for applying and an application.

For the 11th year, Catholic Life Insurance is doing what it can to help Catholic schools raise needed funds. Over the past 10 years, through the Catholic Schools Sweepstakes, Catholic Life has helped raise more than $7 million for Catholic schools. This year 57 schools from 10 dioceses are taking part in the program.

“As the school year begins many schools have immediate financial needs. All monies raised through this program go directly and immediately to the school,” said President Belz. “This is our way of helping Catholic schools and giving back to our faith-based community. We are proud of what we have been able to accomplish thus far for Catholic education.”

Students are selling $5 raffle tickets that will be entered into a drawing that will take place at the Home Office on January 31, 2018. The grand prize winner will have the choice of a 2018 Truck, a 2018 Sedan or a pre-paid $20,000 VISA card. Additionally, every participating school will have a $1,000 Prepaid VISA Card winner. Catholic Life prints the raffle tickets and all marketing materials as well as underwrites all prizes.

“The primary purpose of this program is to raise funds for needy schools,” added Belz. “We hope as a byproduct that it will increase the awareness of Catholic Life.”

Three first-time and eight repeat scholarships were awarded for the 2017-2018 academic year through the Msgr. Henkes and Msgr. Stuebben Seminarian Scholarship Funds. Both non-profit funds are designed to help pay for seminary tuition and expenses. Since 1987, more than $400,000 in scholarships funds have been awarded.

Fernando Ricaud-Cavazos of Irving, Texas and Samuel Bass of Austin were awarded a first-time $2,000 scholarship through the Rev. Msgr. Albert George Henkes Seminarian Scholarship Fund.

Ricaud is a first-year Theology seminarian with St. Mary’s Seminary in Houston, Texas. He plans to serve the Diocese of Austin. Bass is currently a Theology I seminarian at the Pontifical North American College. He is studying to serve the Diocese of Austin, as well.

Repeat scholarships were also awarded to past winners Duncan Amek studying at Assumption Seminary in San Antonio, William Hayes studying at Theological College in Washington, D.C., and Michael Caraway and Christopher Smith, both of whom are studying at the Pontifical North American College.

This scholarship honors the late Msgr. Henkes who served as Catholic Life’s Spiritual Advisor for 27 years. The scholarship is open to any resident of Texas, Arizona, Florida, Louisiana, Oklahoma, New Mexico and Mississippi who is enrolled in a Roman Catholic Seminary. Scholarships totaling approximately $210,000 have been awarded through this non-profit fund since its establishment in 1987.

Jorge Verduzco was selected as a first-time recipient of the Rev. Msgr. Lawrence J. Stuebben Seminarian Scholarship. Verduzco is a Theology I seminarian studying to serve the Archdiocese of San Antonio.

Repeat scholarships were awarded to Johnson Le, Pedro Martinez, Joseph Moreno, and Randolph Hopkins, Jr. All of Msgr. Stuebben Fund recipients attend Assumption Seminary in San Antonio, Texas.

This scholarship fund was established in 1994 in honor of the late, Msgr. Lawrence J. Stuebben to help future priests in their journey towards ordination. This non-profit fund has awarded scholarships totaling $194,000 since its founding.

The rating is based on a comprehensive quantitative evaluation of the organization’s balance sheet strength, operating performance and business profile. Insurers in the excellent category are considered to have an excellent ability to meet their ongoing obligations. Moreover, a stable outlook indicates low likelihood of a rating change due to stable financial/market trends.

In their financial strength rating rationale, A.M. Best stated, “The ratings of Catholic Life Insurance reflect its improved business mix, reduced producer concentration and continued growth in unassigned funds in capitalization.”

They also stated, “CLI has in recent years, strategically moderated sales of annuities while focusing on growing sales of life insurance to reduce the overall product concentration risk within its business mix. The society has also diversified its distribution to reduce the concentration of premium revenue generated by certain producers. Unassigned funds have steadily grown from relatively consistent operating profitability derived from its annuity business.”

BEST COMPANY, AN INDEPENDENT INSURANCE INDUSTRY RATING AGENCY, HAS REAFFIRMED CATHOLIC LIFE INSURANCE’S FINANCIAL STRENGTH WITH AN A-(EXCELLENT) RATING WITH A STABLE OUTLOOK. THIS IS THE 34TH CONSECUTIVE YEAR THAT CATHOLIC LIFE HAS EARNED THE “EXCELLENT” RATING.

MSGR. HENKES SEMINARIAN SCHOLARSHIP FUND CELEBRATES 30 YEARSMore than 30 years ago, the shortage of priests and the lack of men entering the seminary worried our Board of Directors. They knew that there was no one solution to the problem, but they thought that providing financial aid to seminarians would be helpful.

At the same time, Rev. Msgr. Albert Henkes, who had been Catholic Life’s spiritual advisor for nearly 30 years, was in declining health. The Board decided to fill two needs with one deed: honor Henkes and help alleviate the priest shortage.

Through Msgr. Henkes’ generosity and that of Catholic Life, they were able to raise $50,000 seed money. They established $100,000 as their fundraising goal and set out to meet it.

In his introduction to convention delegates that year, then Chairman Herbert Popp said, “The Rev. Msgr. Albert Henkes Seminarian Scholarship Fund, a fitting memorial to a chosen servant, will always remain in our hearts and minds to give testimony to the unlimited love and spiritual guidance that Rev. Msgr. Henkes has brought to Catholic Life.”

Msgr. Henkes was a beloved priest who was both well-known and well-liked. As a result, funds rolled in.

“As a former parishioner of Msgr. Henkes, I am proud to be part of this tribute to a great man and at the same time help those studying for the priesthood, “ wrote then San Antonio Mayor Henry Cisneros. “I urge all Catholic families to give generously to this cause.”

While the fundraising goal was met less than two months later, Msgr. Henkes died before the first scholarships were awarded.

In 1997, seminarians John Valdez and Byron Miller who were studying at Assumption Seminary became the fund’s first scholarship recipients. Today Rev. John Valdez is the pastor of St. Thomas the Apostle Church in Amarillo and Rev. Byron Miller, CSsR, is the president and publisher of Liguori Publications.

Thirty years later, the scholarship fund has done its part in helping offset the cost of the seminary. As for honoring Msgr. Henkes, his name lives on for the 56 scholarship recipients that are now priests.

More than 220,000 drivers pass by our building each day. We believe that a picture is worth a thousand words so we use photos on our Home Office Monument Sign to share information with these drivers about the products and services we offer. We also use photos to celebrate National Prayer Day, Mother’s Day and Memorial Day along with many other special dates. Just as important, photos provide a diverse backdrop to our time and temperature sign displays.

Because we would like to celebrate the places that our members hold dear, we are excited to announce the 2017 “Land That I Love” Photography Contest. We invite members to share photos of the places that are special to them. We will display winning photos in our magazine and on our sign.

What to EnterWe invite members to enter a photo that they have taken of their favorite place.

1. Each photo must be an original photo taken by a Catholic Life member.

2. A member may submit multiple photos, but only one photo can be a winner.

Announcing the 2017 Monument Sign Photography Contest – The Land I Love

JOYCE BARTAGreater Houston Branch Officer Joyce Barta passed away on July 3. She was 88.

Barta served as a Branch Vice President from 2000 until her death.

A Funeral Mass was held July 10 at St. John the Baptist Catholic Church in Ammannsville. Interment followed at the Ammannsville Catholic Cemetery.

Barta is survived by her daughter and two sons; 7 grandchildren and 7 great grandchildren.

Eternal rest grant unto them, O Lord, and let perpetual light shine upon them. May the souls of the faithful departed, through the mercy of God, rest in peace. Amen

Remind each other for our dependence upon Almighty God

In this column, I am sharing with you some thoughts I expressed recently at an interfaith and ecumenical prayer event.

People from every walk of life, from many different faiths in our cities, state capitals, and our nation’s capital need to remind each other of our dependence upon Almighty God for all the blessings we know in this country, and to ask for God’s guidance — that we may be a nation, a people, worthy of his blessings. That freedom to express our faith, and to live our lives by faith’s moral callings, are among the first freedoms we enjoy as Americans. We ask for God’s blessings upon our cities, our states, and our United States of America.

More recently, I have been moved by the words of Abraham Lincoln, when he gave his second inaugural address. The Civil War was in its final days, and many people were calling for recriminations to be expressed in our society. But Abraham Lincoln understood that we needed to be one people, united in purpose and love of nation. It was not a time for recriminations, but rather, a time when mercy was needed to bind the nation’s wounds.

Lincoln said: “With malice toward none, with charity for all, with firmness in the right as God gives us to see the right, let us strive on to finish the work we are in, to bind up the nation’s wounds, to care for him who shall have borne the battle and for his widow and his orphan, to do all which may achieve and cherish a just and lasting peace among ourselves and with all nations.”

President Lincoln was a politician, and not a theologian! Yet, we know that real faith was beating in his heart, and that he was calling us to unity. At a time when we have been through great national debates, let us continue to ask for God’s blessings.

Let us pray. O God, you have made all things, most especially the human person in your own image and likeness. Send forth, we ask you, the Holy Spirit of your love upon our nation and our cities, that we may be a people of charity and Godly justice. Bind us together as one. Do not allow differences of opinion to disunite us, but help us to stand as the guardians of each one’s freedom and dignity. Send your wisdom upon our elected leaders and public servants, that they may keep us living in safety, liberty, and with the opportunity to accomplish much good in our moment of history. Make us attentive to the needs of the orphan and the widow, the poor and the sick, and all persons in need of protection. You have taught us, O God, that our care for the weakest among us is the measure of our morality as a nation. Give us firm purpose in doing what is right and good. We ask this in your most Holy Name. Amen.

GOALTo award 35 non-renewable college or trade school scholarships worth $1,000 each to graduating seniors who are Catholic Life Insurance members.

The Richmond-Rosenberg Branch presents a new United States Flag to the Needville Fire & Police Department. The presentation, which took place during the department’s monthly meeting, gave the Branch a chance to thank them for their hard work and services to the city.

The Fort Worth Branch presents a U.S. Flag to the American Heritage Girls Troop #210 and Good Shepherd Catholic Community.

The Boy Scouts work with Shiner Branch members to place flags on the veterans’ graves at local cemeteries for Memorial

Day. Each year, these groups honor their deceased veterans and the sacrifices they made for our country.

The High Hill-Schulenburg Branch presents an American Flag to the St. Rose Parish, which will be flown at the St. Rose Catholic Cemetery.

Rockne-String Prairie Branch President Gerri Martinez presents a new U.S. Flag to the Rockne Historical Association for their museum.

Graduating high school seniors of the St. Louis Catholic Parish pose with new crucifixes given to them by the Castroville Branch. The Branch gifts these crucifixes each year for the graduates to take with them to college.

The local Life Teen Group joins the Northwest Houston Branch at St. Jerome’s Charity Center to assemble hygiene kits. These kits, which go to the underprivileged, contain toiletries like toothbrushes, toothpaste, soap and shampoo.

The Rockne-String Prairie Branch partners with the St. Ann’s society and the CCE youth

program to host a bingo party for seniors. Admission to the event was a nonperishable

food item to benefit the Bastrop Food Pantry.

Pecan Valley Branch Officers present a donation to Fr. Kennedy Nyumba and Mr. James Porter, Director of the Holy Name African Living Water Ministry. The donation will help build two permanent modern wells for Fr. Kennedy’s home village in Kenya. Villagers currently have to travel four hours round trip on foot to obtain fresh water.

high school seniors Brenna Fleitman and John Rohmer on behalf of the Lindsay Branch.

To show appreciation for all they do, the Honey Creek Branch provides lunch and cake at Bulverde City Hall for local police officers.

The Falls City Branch assists the Holy Trinity Catholic Church Youth Choir to organize and clean their choir loft. This annual volunteer project helps the choir keep their space in good order so that they can remain productive throughout the year.

Highland Lakes Pregnancy Center.

Father Victor Valdez presents a donation on behalf of the Northwest San Antonio Branch to the President and Chairperson of the Los Sembradores

at San Fernando Cathedral. The Sembradores Educational Foundation promotes and funds higher education for deserving local students.

Muenster Branch members of all ages spend a special day together fixing up the flowers at Johnny Rohmer Memorial Park. They worked hard to weed the flower beds and lay down new mulch.

Brazosport Branch Officers gift 15 large box fans to Director Murphy Rankin of the Actions of Brazoria County. These fans will be given out to local seniors in need.

Community members and the St. Lawrence Branch team up to support the Life Center in the Permian basin. They collected many donations of handmade blankets, boxes of diapers, baby wipes, bath supplies, formula and clothing.

The residents of the local Homestead Assisted Living receive gifts of homemade cookies and candy during a special visit from the Weimar Branch.

CCE students help the Frelsburg Branch distribute flowers to all of the mothers attending Mass on Mother’s

Day weekend at Sts. Peter & Paul Catholic Church.

Grilled Flank Steak Stuffed With Mushrooms and Blue Cheese1 flank steak, 3 lbs.½ lb. Mushrooms, sliced2 Tbsp. Butter2 Tbsp. Blue cheese1 clove crushed garlicSalt & pepper

Have your butcher make a pocket in your steak. Sauté mushrooms in 1 Tbsp. Butter, adding cheese, remaining butter and garlic. Season with salt & pepper. Fill the pocket with mixture and close with skewers. Sprinkle meat with salt & pepper and broil 3” from coals, until done. Slice in thin diagonal slices against the grain. Serve 4–6.

Charles has been making this for years. It’s always a hit. He picks a flank steak that is thick enough for a pocket – and usually cuts the pocket himself.

Coconut Macaroons14 oz coconut14 oz sweetened condensed milk1 tsp. vanilla1 egg white¼ tsp. salt

Mix coconut, milk, vanilla, and salt. Beat egg white to soft peaks and fold into mixture. Use ice cream scoop to place on parchment-lined pan. Bake 325 degrees for 25 to 30 minutes. Makes 22 cookies. When doubling the recipe, use 3 egg whites.

Potato Casserole2 pounds potatoes (grated) I use southern style frozen grated hash brown potatoes½ tsp. salt½ tsp. pepperPaprika to sprinkle on top before baking1 clove garlic minced (you can use garlic powder instead)6 to 8 ounces of Gouda cheese or Emmental Cheese½ pound liverwurst (cut in slices) or ½ pound of raw bacon (sliced)2 cups heavy cream

1. Mix grated potatoes with salt, pepper, paprika, garlic and half the grated cheese

2. Put half the potato mixture into a greased cast iron pot or a casserole dish.

3. Layer liverwurst or bacon (or do without any meat) on potato & cheese mixture.

4. Top with the rest of the mixture.Pour cream overall and top with the rest of the cheese mixture,

sprinkle with paprika.6. Bake for 1 hour at 350 degrees in the oven. Serves four persons. (Will serve more people if you use it as a side dish)

On one of our trips to Germany – this was our first meal after the long plane ride and the car trip to Montebaur. Our friend (from Bladernheim, Germany) Irmtrud Thome, explained that this is a recipe our ancestors might have had for a meal. Irmtrud served it with applesauce. That was our entire meal – the casserole is large – and the four of us ate all of it and the applesauce. Fantastic! Your guests will ask for the recipe!

KITCHENin the Charles Schmidt has a talent and passion for cooking.

It started with a dinner club for couples, then evolved into hosting dinners for community and church

fundraisers. Charles was once a member of the “Hill Country Chefs,” a group that would auction a “dinner for

12” to raise thousands of dollars for the local hospital. He has cooked for former Presidents George Bush and George W.

Bush. When famous Californian vintner Robert Mondavi and his wife came to town, Charles served poached salmon to them.

Smoked Salmon Mousse8 oz cream cheese, room temperature¼ cup heavy cream1 scallion (green onion, white part and 3 inches green) thinly sliced1 tsp. fresh lemon juiceDash Tabasco sauce4 ounces smoked salmon, gently shredded2 Tbsp. red salmon caviar

Gently mix the cream cheese and cream in a mixing bowl. Stir in the scallions, lemon juice, and Tabasco sauce. Gently fold in the smoked salmon until well mixed, but not over mixed. The shreds of salmon should remain whole. Place in a serving bowl and top with small spoonfuls of caviar. Serve with crackers or toast rounds. Makes 2 cups.

Fresh Peach Sorbet1½ cups sugar½ cup water½ cup Orange Muscat Wine or Peach Brandy2 cups peaches, fresh or frozen, crushedJuice of 1½ – 2 lemons, unstrained2 egg whites2 Tbsp. Orange Muscat Wine or Peach BrandyGarnish: Mint Leaves

1. Mix together sugar, water and wine or brandy and stir mixture over very low heat until sugar is dissolved. Boil the mixture steadily for 5 minutes.

2. Remove from heat and add peaches and lemon juice.

3. Cool mixture thoroughly and stir in stiffly beaten egg whites and 2 Tbsp. of wine or brandy.

4. Freeze mixture in ice cream freezer. You can serve immediately or store in freezer. Garnish with fresh mint leaves.

Makes 6 cups.
