FROM PORTUGAL to YOUCanned Food“Canned food is a luxury that we must preserve, no matter how little it costs us – for the very reason that it doesn’t become the expensive luxury that it should rightfully be.” Miguel Esteves CardosoThe immensity of its coast has awakened the overwhelming passion of the Portuguese people for the sea and secular historical bonds were created.For here to the birth of the canning industry was just a small step – and a true success story.Portugal has been exporting its products for more than a century. The creation of the first canning factory, in Setúbal, dates back to 1889. The canning tradition was born when the men set to sea and brought back fish to be preserved and eaten later, particularly during the strict winter seasons.

Olive Oil “And with the sprig of a fruited olive, man is purified in extreme health.” Virgílio, EneidaIn Portugal, the culture of the olive tree is lost in time.The Portuguese word for olive oil (azeite) comes from the Arabic expression az-zait, which means “juice of the olive”, developed by the Arabs who lived in the Portuguese territory.The “sacred oil” (so named by the Christian orders) was always present in the way of living of the Portuguese people: from the table of the most modest peasant, to the most solemn of the cathedrals. In Portugal, traces of the presence of the olive tree date back to the Bronze Age, but it was only on the 15th and 16th centuries that its cultivation spread throughout the country. The first document mentioning and protecting the cultivation of the olive tree in Portugal was the “Visigothic Code”, which provided a fine of five wages for anyone that pulled out an olive tree belonging to another person (instead of a fine of only three wages for any other tree).The olive tree has always been seen as a symbol of wisdom and peace.

JamsThe production of jams dates back to the time when people prepared large quantities of food for the winter, thus preserving the flavours of other seasons.It was in the reclusion of convents and other places of feminine seclusion that the art of confectionary and preserved foods expanded in the 17th century. This confectionary tradition marked the Portuguese cuisine until today, giving an identity to the regional Portuguese confectionary, such as the queijadas (tartlets) of Sintra, the ovos moles (soft eggs) of Aveiro and many other conventual sweets, whose recipes have been transmitted through the generations.The addition of Port wine to the production of jams enriched the flavours and the quality. Being know internationally as “the nectar of Gods”, Port wine is a visiting card for the prominent hills of the Douro. With its gentle, full-bodied and sweet taste, this is the drink of choice for numerous types of celebrations and is a mandatory presence in any house in Oporto.

Flor de SalThe salt industry is part of the Portuguese cultural identity and is one of the oldest activities of the country. Curiously, the Word “salary” comes from this product, used since ancient times as a method of preservation, being considered so precious and important that it was used as currency, used inclusively to pay salaries.Remembering the men that went off to sea never knowing when or if they would return, Fernando Pessoa, one of the greatest Portuguese poets, wrote:“Oh salted sea, how much of your salt are Portuguese tears”.Flor de Sal is composed of light crystals, in the form of a straw, of an extreme whiteness, which are formed on the surface of small salt puddles, forming a small film of salt covering them. This product has always been consumed in Portugal by the Marnotos (workers of the salt marshes) at their homes. They called it “coalho” (rennet) because it floated at the surface of the water like cream in milk.

Portugal is a country of contrasts and colours. It is a country that can no longer be painted just as black and white. And so are the works of Rita Melo, painter and author of the images in the FROM PORTUGAL TO YOU packages. The young Portuguese artist, influenced by pop art, uses vivid colours, combining aspects of popular culture to those of the representation of portraits. All portraits attempt to include a strong charge of intimacy, a realism that is confined to caricature.
