Soil: Moderately to very hilly with poor, rocky soil
Microclimate: Warm and dry, characterized by large diurnal temperature swings
Altitude: 689–1,509 feet above sea level
Growing system: Cordon trained
Vine density: 10,000 vines per acre
Age of vineyards: Vines average around 15–20 years old
VIN IF ICAT ION AND AGING:Harvest: The wine is crafted from the fi nest grapes in the vineyard. The grapes were hand-harvested at ideal ripeness during several passes between the third week and the end of September. The vines yielded 12 tons per acre. The grapes were hand-sorted in the winery.
Fermentation: The juice was fermented in thermo-controlled stainless-steel vats at a temperature of 82°F for 7 days with regular racking and punch-downs. It macerated on the skins for another 10 days.
Aging: After completing malolactic fermentation, the wine was aged in oak barrels (about 800–1,600 gallons) for 24 months. After resting in stainless-steel vats for 12 months, the wine was bottled and further aged for 4 months.
Alcohol content: 14.5% by volume
SENS ORY PROPERTIES :Color: Ruby red with garnet hues
Aroma: Complex, refi ned, and very intense aromatics of ripe plum, cassis, and maraschino cherry followed by hints of incense, cocoa, sweet tobacco, and spicy black pepper.
Tasting profi le: Full-bodied with a complex, elegant structure, and beautiful balance. The tannins are steady and pronounced yet rich and smooth. The fi nish is remarkably long with fl avors of red fruit, chocolate, and sweet tobacco.
