The grapes were hand-harvested at ideal ripeness during several passes between the third week and the end of September. The vines yielded 12 tons per acre. The grapes were hand-sorted in the winery. Fermentation: The juice was fermented in thermo-controlled stainless-steel vats at a temperature of 82°F for 7 days with regular racking and punch-downs. It macerated on the skins for another 10 days. Aging: After completing malolactic fermentation, the wine was aged in oak barrels (about 800–1,600 gallons) for 24 months. After resting in stainless-steel vats for 12 months, the wine was bottled and further aged for 4 months. Alcohol content: 14.5% by volume SENSORY PROPERTIES: Color: Ruby red with garnet hues Aroma: Complex, refined, and very intense aromatics of ripe plum, cassis, and maraschino cherry followed by hints of incense, cocoa, sweet tobacco, and spicy black pepper. Tasting profile: Full-bodied with a complex, elegant structure, and beautiful balance. The tannins are steady and pronounced yet rich and smooth. The finish is remarkably long with flavors of red fruit, chocolate, and sweet tobacco.
