Hispanic Heritage Month (from Lorraine Kilmartin of Saint Mary’s Press)

“Hispanic Heritage month begins in mid-September. Whether your school population includes students of Hispanic descent or not, take the opportunity to celebrate the rich and diverse heritage of your Hispanic friends and neighbors. Last winter, I had the pleasure of visiting a tuition-free Catholic school located in an ethnically diverse inner-city neighborhood in Racine, Wisconsin. One of the many things that impressed me during my visit to the San Juan Diego Middle School was the strong visual reference to the Hispanic culture throughout the building. I saw a mural honoring Our Lady of Guadalupe in the central hallway, woven serape-like fabrics draped on file cabinets, and Mexican-American graphic designs bordering bulletin boards. The students, too, expressed pride in their culture. One eighth-grader spoke passionately about the contributions that Mexican-Americans have made to U.S. society. I wondered if he will make a future for himself as a civil rights attorney or a community activist!”

Bishops extended collection for retired religious

On June 15th the U.S. Catholic bishops overwhelmingly agreed to extend the yearly national collection for retired religious until 2017. By a vote of 143-10 the bishops approved the extension of the collection which otherwise would have expired in 2007. The Religious Retirement Fund, first taken up in 1988, is the most successful national collection in the history of the U.S. church and has taken in just under $500 million in eighteen years. At the end of 2003 religious orders reporting to the National Religious Retirement Office had $9.1 billion in investments dedicated to funding their retirement costs, but their total present retirement liability was nearly $17.8 billion.

CHOLESTEROL

Your cholesterol levels are an important measure of heart health. Do you know your cholesterol levels?

Checking under the hood: “They” say that if a man took care of his body as well as he takes care of his car, he would live longer. But most importantly he would live healthier with less health problems.

What you need to understand: A blood test to check cholesterol levels typically reports measurement of four major fats, and in addition a ratio may be reported.

1. Total cholesterol [< 200 is good]2. HDL (high-density lipoprotein, “the good”) [> 40 is good, the higher the better]3. LDL (low-density lipoprotein, “the bad”) [< 100 is good, the lower the better]4. Triglycerides (“the ugly”) [< 150 is good]5. Cholesterol ratio (Total/HDL) [< 5.0 is good; < 3.5 is optimal]

Why bother: Heart disease kills more men every year than any other disease. Among the key risk factors are low HDL, high LDL, and high triglycerides, which can lead to clogged arteries. This can cause not only heart attacks and strokes, but also dementia and impotence. HDL (the “good”) picks up excess cholesterol in your blood and takes it to your liver for disposal, so the higher, the better. LDL (the “bad”) carries cholesterol throughout your body, depositing it along the walls of the arteries, so the lower, the better. Triglycerides are another type of fat carried in your blood. Most of the body’s fat tissue that comes from excess calories is in the form of triglycerides which are stored for energy. High triglyceride levels can increase your risk of heart disease.

The good news: You can slash your LDL by cutting back on eating bad fats. You can lower your triglycerides and raise your HDL by replacing bad fats with good fats.

Choose healthier fats: A healthy diet includes some fat, but there’s a limit. On a heart-healthy diet, up to 30 percent of your total daily calories can come from fat—but saturated fat should account for less than 7 percent of your total daily calories. Replace the bad fats with the best & good fats from the lists below.

Trans fats: Since last January, manufacturers have been required to list trans fats on nutrition labels. Now that the word is out about how bad these fats are, manufacturers are being forced to use better fats in their products. Trans fats are found in most commercial baked good and fried foods.

Beware label trickery: The front of a package may say, “0 grams trans fat,” but check the nutrition label on the back. It may still be high in saturated fat! A good rule is to avoid foods that contain more than 3 grams of trans fat or saturated fat per serving.

Tips for getting healthy fats into your diet: Cook and bake with canola or olive oil instead of butter or shortening Each week eat two servings of fish such as salmon, tuna, cod and bluefish. These fatty fish

contain omega-3 fatty acids, a healthy fat. (Trimming off the skin and fat of fish also reduces your exposure to chemicals.)

Avoid butter, shortening and stick margarine, which are all high in saturated fat. (One way to identify saturated fat is that it is usually solid at room temperature, as with chocolate or stick margarine, for example.) Instead, choose liquid or tub margarines.

Check food labels and avoid foods made with coconut, palm, or hydrogenated oils. Avoid fried foods, even if it is fish. Chill soups and stews and remove the hard fat from the top. Eat less meat. Especially avoid high-fat cuts of red meat, ground beef, chicken with skin and

processed meats such as bologna, sausage and hot dogs. Instead, eat skinless poultry and lean cuts of meat.

Read nutrition facts on food packages: Keep calories from fat (even the best and good) less than 30% (or about one-third). For example, for a single serving

Total calories 200, calories from fat 100 (more than 30% is fat)—Bad choice Total calories 200, calories from fat 65 (about 30% is fat)—Good choice Total calories 200, calories from fat 40 (less than 30% is fat)—Best choice

Good foods: Besides a low fat diet, foods high in soluble fiber will lower LDL and protect your heart. These include oatmeal, oat bran, kidney beans, Brussels sprouts, apples, pears, barley, and prunes. Of course, there is no bad fat in fruits and vegetables.

Bottom Line

If the calories from fatare more than 30%,put it back on thegrocery shelf.

A good rule is to avoidfoods that contain more

than 3 grams of transfat or saturated fat perserving.
