A Few Words From Don Smolenski, Chief Operating Officer

As we return to football and the start of the 2011 Season, I wanted to take a moment and reflect back on the busy summer we have had here at Lincoln Financial Field. Monster Jam, Kenny Chesney, U2, Union vs. Real Madrid, USA vs. Mexico and Taylor Swift all in 60 days! And, it culminated with 3 events (Taylor Swift, USA vs. Mexico and Eagles vs. Ravens) in 6 days! Wow! Here are some fun facts about these events to think about:

341, 977 guests passed through our gates 30,000 soft pretzels were consumed 25,000 hot dogs were devoured (Kobayashi and Joey Chestnut would be proud) 250,000 lbs of ice were used 100,000 bottles of water were sold

None of this, however, could have been done without you, our event day staff. You braved the heat, the roar of powerful engines, and the screams of teenage girls. You greeted our guests with a “Welcome to Lincoln Financial Field”, encouraged them to “Enjoy the Show”, and said good night with a friendly “Thanks for coming.” On behalf of Jeffrey, Christina, Joe and the entire Eagles team, thank you for your passion, dedication, and commitment to provide our guests with the highest quality sports and entertainment experience in a safe, clean and friendly environment.

On Monday, August 15 the Philadelphia Eagles hosted Military Appreciation Day after Training Camp at Lehigh. This has been a tradition for the past 16 years for the team. Once practice was over, over 250 servicemen and women were invited to cheer on the field and have a meet & greet with the entire team.

This was a very exciting opportunity for the mem-bers of the armed forces, just as much as it was for the players, “Being able to come here and say thanks and talk to them is a great feeling,” said Eagles WR Chad Hall and previous Air Force member. This was a great way to end the day at Training Camp and give the military a fond memory to look back on!

Placed WR Steve Smith on PUP (knee), waived/injury settlement DT Brandon Collier (ankle), and released DT Charles Noonan and QB Jerrod Johnson. August 10, 2011 - Agreed to terms with Pro Bowl WR Steve Smith on a one-year contract.

Hispanic Heritage Month (HHM) will be honored during this preseason game, August 25. The month actually falls between September 15-October 15 so we are celebrating almost a month early. The Hispanic community is a growing fan base for our team and this game is a way for us to show our appreciation for their support! Angel Cruz is antici-pated to receive the NFL Hispanic Heritage Leadership Award, for his large contributions to the community through Impact Services. Over 17,000 needy Philadelphians have received support from Impact Ser-vices, and it is obvious what a difference Angel has made to many lives!

BIRDS EYE FOOD: Spring Rolls By: Chef James Hennessey

Prep Time: 20-25 minutes Cook Time: 10 minutes Serving Size: 4-6 people KEY PLAYERS (Ingredients): -3 cloves garlic, minced -1 thumb-size piece ginger, grated -2 green onions, sliced into matchstick pieces -1 red chili, minced, OR 1/2 to 1 tsp. cay-enne pepper -1/2 cup shredded or finely chopped cab-bage -4-6 shiitake mushrooms, cut into matchstick pieces -1/2 cup medium to firm tofu, sliced into matchstick pieces (If non- vegetarian: add 1/2 cup cooked baby shrimp) -approx. 2 cups bean sprouts -1/2 cup fresh coriander, roughly chopped -1/2 cup fresh basil, roughly chopped -2 Tbsp. oil, plus more for deep-frying -1 pkg. spring roll wrappers (thawed if frozen) STIR-FRY SAUCE 2 Tbsp. regular soy sauce 2 Tbsp. fish sauce OR vegetarian stir-fry sauce

2 Tbsp. lime juice 1/4 tsp. sugar

GAME PLAN (Directions): 1. Place 2 Tbsp. oil in a wok or large frying pan over medium to high heat. Add garlic, ginger, shallots, and chili. Stir-fry (about 1 minute). Stir-frying Tip: Add a little water to the wok/pan when it gets too dry instead of more oil. 2. Add cabbage, mushrooms, and tofu (or shrimp). As you stir-fry, add the sauce. Stir-fry 1-2 minutes, until vegetables have sof-tened. 3. Remove from heat and add bean sprouts, tossing to mix in. 4. Do a taste test for salt, adding 1 Tbsp. more fish or soy sauce if not salty enough. 5. To assemble rolls, place a spring roll wrapper on a clean working surface. Place one heaping Tbsp. of the filling on the wrapper (if using large wrappers, you will need more). Tips: Spread the filling lengthwise along the spring roll wrapper nearer the end closest to you. Also, try not to include too much of the liquid left in the bottom of your wok/pan (a slotted spoon works well for this - drier filling is better. 6. Now sprinkle some of the fresh corian-der and basil over the filling.

7. Fold the left and right sides of wrapper over filling, then lift up the wide end nearest you and tuck overtop. Roll to the other end. Secure the roll by dipping your fingers in some water and wetting the end, "pasting" it shut. 8. To fry spring rolls, place some oil (about 1 inch deep) in a wok or deep-sided frying pan over medium-high heat. When bub-bles rise, or when the oil begins to form snake-like lines across the bottom of the pan, the oil may be hot enough. To test it, dip one corner of a spring roll into the oil. If it begins to sizzle and cook, the oil is ready. If not, wait another 30 seconds to one minute and try again. 9. Using tongs, place spring rolls in oil, allowing them to fry about 1 minute on each side. Spring rolls are done when they turn light to medium golden-brown. Place on paper towels to drain while you finish frying the rest. 10. Serve spring rolls while still hot with Thai Sweet Chili Sauce, or your own dip-ping sauce. ENJOY! To make your own dipping sauce: Mix 1/3 cup plum sauce with 3 Tbsp. soy sauce. Add fresh cut red chili or dried crushed chili as desired.
