What a long strange trip it has been since our last issue of BIAthens two weeks ago. On the very day the issue was due to theprinter, it was also the morning that we woke up to over eight inchesof snow. Needless to say, the issue would be delayed. However, wehad completed 90 percent of the pages, so rather than making snowmen or skiing down University Drive like our neighbors did, wegrinded it out because that was much easier than starting back upwhen the weather cleared.

At the time, I thought it was the right decision and boy was it everseeing how the conditions only got worse when all the snow turnedto ice. I will give the guys at Walton Press a big pat on the back as theywere able to print the issue on Wednesday, only missing our normaltime by one day.

But like everyone else in Athens, replacing pretty much an en-tire week of work certainly made producing this issue a challenge. Butas anyone will tell you that has ever experienced the rush of produc-ing a publication, some of the greatest performances occur when thechips are down. And without question, our entire staff overcame theobstacles of old man winter and we have pulled off an excellent issue.

From capturing folks having a big time in the snow to coveringUGA teams excelling at the highest level, this issue of BI Athens cov-ers the gamut. And that’s our number one vision for BI Athens. Becauseof the diversity of the Classic City, we are challenged to produce aunique publication that represents all the moxie of this town.

For the music enthusiasts, we are delighted to have created aforum for Daniel Peiken’s passion of documenting the zillions of liveshows that occur annually in Athens. On page 6, Daniel looks aheadat what’s coming to town. And as he notes, following your favoriteUGA athletic team and watching good live music is very doable be-cause most of the time the sports are over by the time the bands takethe stage.

And speaking of UGA sports, just in case you’re not up on things,both of our basketball teams are kicking butt right now (coverage onpages 14 and 16). Kudos has to go to Mark Fox and Andy Landersfor having their teams’ competing every night they play. I encourageyou to get to a game whenever you can because the enthusiasm at therenovated Stegeman Coliseum is contagious. And if you’re too busyto catch the game live, then listen to Scott Howard or Jeff Dantzler onthe radio. I assure you, you will be on the edge of your sofa.

Jay Clark’s Gym Dawgs (page 8) are finding their form despite aton of injuries and are ranked number three in the country. Like goingto a basketball game, the coliseum is electric every time our girls havea meet there.

If I’m boring with sports talk, don’t worry my wife, Cheri, andour interns have plenty for you in this issue that have nothing to dowith a ball.

Are you foodie? Then turn to page 20 and see what local de-signer, Lisa Fiscus created for an awesome meal. I can attest to this be-cause I devoured my leftover plate only a few hours ago.

Are you into fashion or dance? Then check out the hot looks forspring on page 12 or see if you know any of the brave, local celebri-ties who will strut their stuff on March 6 at the 4th Annual Dancingwith the Stars (page 18).

My allotted space has come to a close, but it’s fitting that I get toend with a huge Happy 90th Birthday (January 25) to the ultimateAthenian and Bulldog, Dan Magill. Much of the growth and successof both Athens and UGA can be attributed to the vision of this in-credible man. Please take the time to read Jeff Dantzler’s piece on CoachMagill on page 4. Much like the man, JD’s piece is a classic. And pleasego to bulldawgillustrated.com to listen to my interview with CoachMagill. His storytelling is unrivaled, but his humbleness is what I mar-vel the most. Even despite my trying to get him to talk about himself,he never took the bait, instead choosing to talk about the great ac-complishments of someone he was lucky enough to have met in hislegendary 90 years on this earth.

Until next time, get out and soak up the joys that Athens and theUniversity of Georgia provide daily.

As I sit down to write the editor’s note for thisfine second issue of BI Athens, I can’t help but bedistracted by the large, frozen-over pile of snow thatstubbornly refuses to melt in my backyard.

You have to love the seasons of Athens. It seemslike just yesterday I was out on the Woodruff Prac-tice Fields sweating like a sinner in church, tryingto get the best shots possible as the football teamgrinded through those voluntary summer workouts.Fast-forward through a Fall season jam packed withfootball and a healthy dose of law school, and now Ifind myself still trying to thaw out from one of themost severe winter weather events in Athens history.

This being my fifth year in the Classic City, Ihave seen my fair share of seasonal transitions. Fromsnow days spent sledding down Baxter Hill to springSaturdays passed by on those glorious rocking chairsthat line Milledge Avenue, every type of weather hasit’s accompanying Athens rituals. But now being onefull semester removed from my undergrad days, I amstarting to recognize a new kind of “change in sea-sons” that seems to be unique to Athens.

Allow me to explain. Walking down ClaytonStreet Friday night, I saw my old friend Mike walk-ing with a pretty girl on his arm. The couple wasdressed to the nines, probably headed to a formalsomewhere downtown, another staple of the secondsemester. Only as I approached Mike to say “hey”, Irealized it wasn’t Mike at all. He was just some Mikedoppelganger headed on a date with a dispropor-tionately pretty girl. What was I thinking, anyway?Mike has long since graduated and moved to Atlanta.

Standing in the line to enter “9d’s”, a bar thatplays exclusively, you guessed it, music from the90s, the sobering realization dawned on me: My lit-tle slice of Athens, my four years as an undergradthat were so different yet just the same as everyone’sbefore me, has passed. What was Coach Felton isnow Coach Fox, what was the “SLC” is now the“MLC”, what was “8e’s” is now “9d’s”, and what wasmy old bud Mike is now just another goober in arented tux.

Of course I realize the list of “what was” goes onand on, and has been doing so for over 225 years inthis town. Establishments like Poss’, the 5th Quarterand even what will be referred to as the “old” Geor-gia Theatre take their rightful place in our collectivememories alongside countless guys like my friendMike in Athens lore.

Forgive my nostalgic rambling; my point is thatwe are working hard here at BI Athens to highlightthe best in all of Athens’ seasons. Happy 90th Birthday to the greatest Georgia Bulldog ever. Dan Magill, the epitome of the heart, soul and spirit of Geor-

gia, will be honored on his big day with a grand gathering at theClassic Center in Athens, with his family, friends and numerousadmirers on hand to celebrate the brilliant, beloved, legendaryicon’s remarkable life and accomplishments.

From his first Georgia football game, as an eight year oldclad in his youth football uniform for the opening of Sanford Sta-dium, the Bulldogs 15-0 victory over Yale in 1929, through thevarious red and black athletic annals of today, Dan Magill has sa-vored every minute of this incredible relationship with his belovedalma mater and her people.

Coach Magill, still going strong, whether its playing tennis,over-seeing the Collegiate Tennis Hall of Fame, or working on hisimpeccably manicured yard and muscadine vineyard, has in-spired hordes while touching countless lives.

There are now 40 full time employees at the UGA AthleticAssociation who divide up the duties that Magill used to single-handedly perform.

Molding Georgia into the mightiest tennis program in theSoutheastern Conference and into a national powerhouse, Mag-ill retired in 1988 as the winningest coach in collegiate history,highlighted by national championships in 1985 and 1987, anda record 13 outdoor S.EC. titles.

His greatest impact on collegiate tennis came though as thefather of the NCAA team championships. Athens became theregular site of the NCAA Championships in 1977 and the dualmatch team tournament format was born. Its popularity and the

tremendous success of the event in Athens made for a perfectmarriage, while further enhancing the scope and notoriety ofAmerica’s greatest college town.

Magill’s greatest impact on Georgia’s overall athletics pro-gram came as the founder of the Georgia Bulldog Clubs – thegrass-roots organization formed in all of the Peach State’s 159counties – and as the nation’s premier trail-blazing sports infor-mation director.

It was Magill who largely held Georgia together during thedark times of the 1950s and early ‘60s. With the exception ofthe 1959 SEC Championship season on the gridiron, there wasvery little to cheer about following the glory days of the 1940s(three SEC titles, a share of two national championships and ap-pearances in four major bowls) and the arrival of Vince Dooley asthe Bulldogs head coach in 1964.

His skills as an SID were unparalleled (matched only, like intennis by his successor). Georgia’s statistical records dating backto his first season at the position in 1949 are still the most accu-rate of the day, and other schools often call on the Bulldogs officewhen doing their own research.

At the “coronation party” for the 1959 SEC champions,Magill had a phone hookup from the gala sent to every Bulldogclub, where Georgia alumni gathered to listen and join the cele-bration over intercoms. It was the largest phone hookup at thetime by “the American Telephone and Telegraph Company.”

One of the traits that has made Magill so otherworldly is thata man of such greatness has always been about helping othersand setting the table for Georgia.

Nowhere is this more evident than with the incredible suc-cess of his family and former players. And when it comes to pass-ing the torch, he pulled a double “Dimaggio to Mantle,” thegreatest succession of icons in professional sports history.

Manuel Diaz, star All-American from the 1970’s, took overthe tennis program as Georgia’s coach in 1989 and has establishedhimself as the country’s best coach, while keeping the family to-gether and stronger than ever. Two head coaches in nearly 60years! Unheard of. From 1985-2008, Georgia appeared in 13NCAA finals, winning six national championships while captur-ing more than double the number of SEC titles than the rest of theschools in the league combined.

His successor as Sports Information Director is Hall of FamerClaude Felton, the best and most respected in the business.

Magill has authored three books plus several collections ofhis most memorable columns.

He could have been a national sensation as a columnist andcommentator. Magill could have been for football and tenniswhat the great Dan Jenkins has been to football and golf. LikeJenkins, he has the wit, amazing writing ability and brilliance.

But Georgia, his family, his players, his co-workers and hislegion of admirers got Magill – and we still have him.

I can’t wait until the party on Friday night, and then the one10 years from now when we celebrate Number 100!

There’s never been anyone like him and there never will be. Like so many, I love him very much. Dan Magill, the greatest Georgia Bulldog ever and a true na-

tional treasure.

SIX ATHENS LOCATIONS ... FOUR OPEN 24 HRS.!

If you’ve ever been a student at UGA, you knowthat there is no better feeling than seeing an “OfficialUGA Announcement” email in your inbox when theweather is bad.

So, on Sunday night, the night before our first dayof the new spring semester, students all over the Clas-sic City were jumping for joy. The email actually said“The University of Georgia main campus at Athens willbe closed on Monday, January 10. Classes will not beheld and offices will be closed.” But University studentsread, “Snow day! Do I have enough Ramen noodles tolast me? What can I use for a sled? I wonder if that hillon East Broad Street is steep enough.”

Personally, I found it tough to fall asleep on Sun-day night anticipating the 6 inches of snow promised tous overnight. Needless to say on Monday morning theweatherman did not disappoint.

Athens was entirely covered with snow and lookedcompletely impossible for travel, well at least to classthat is. It’s funny how students manage to find ways toget around Athens through the snow and ice when it’sfor friends, food, drinks and makeshift sleds.

The streets were quickly crowded with girls inmatching rain boots from various downtown shops andboys in ridiculous snow caps all with a common goal:not to waste a second of our very rare snow day.

My roommates and I trekked to our friend’s housedown the road for our snow day. We had a few snowball fights on the way, stopped to test out a mattress ourneighbors had transformed into a sled, and even saw ahusky pulling a boy through the snow. Once wereached our destination, our friends taught us how toride their 4-wheelers. Who says snow days aren’t forlearning?

For the following 2 days, we continued to play inthe snow, watched movies and enjoyed our time offwith each other. Downtown was packed every singlenight. We joked that it was the best first three days ofschool ever.

But all good things must come to an end. Thesnow eventually melted and classes ultimately resumed.The missed days will be made up and “syllabus week,”as the students like to call it, was nonexistent; but thesnow days were worth it.

It wasn’t about the snow or the 3 days of cancelledclasses because Athenians love this town whether it’scovered in snow or not. It was about enjoying time withfriends and soaking in all that Athens has to offer, whichis exactly what the bulldawg nation has always beenabout.

Well the Drive-By Truckers put on one hell of a show, three shows in fact.Night one is usually an early night for them but at 2:30 a.m. we were still rock-ing, and that wasn’t the latest night. Check 'em out for a huge dose of SouthernRock / Americana Soul. Singing catchy tunes about revival and 'naner pudding.

2/04 American Cheeseburger / Gripe / Primate / Savagist @ the Max Canada - Ifyou like hard, loud and screamy. It's the AC's last show.

2/10 Bloodkin @ 40 Watt Club (www.40Watt.com) Their 2009 album titled'Baby They Told Us We Would Rise Again' couldn't have a more true name.They sing songs about being at rock bottom written while they were actuallythere, also about art, nature, broccoli and Georgia is written all over them.Some songs are dusty, whiskey-driven, dirt road-takin' songs, some are aboutlove, history, heritage and heartache. Daniel Hutchins and Eric Carter havebeen playing together since they were children. They moved to Athens over 23years ago and formed Bloodkin. They have been tearing it up ever since. Danielis a word slinger, he throws them at you like a whip, over and over again.Every song is a novel. Widespread panic has been playing their song, 'Can'tGet High' for decades. They've been raising hell for years. Hutchins starts thenew album with 'Everything they say about me is true." What more do youneed to know? Oh, Widespread Panic is playing earlier that night around thecorner.

2/10 & 2/11 Widespread Panic @ the Classic Center. Both of these shows soldout in seconds so if you want to see some great photos you've got to get me aticket. Miracle me please.

Come to Athens for the football and sports but stay for the Rock’N’Roll.The games rarely go past 11:PM and that’s when the live music usually starts. Iknow lots of musicians who bleed red and black, they go to the game at noonand then get on the stage at midnight.

Clark’s girls return to formwith high scoring home win

After going through some growing pains in 2010, this year’sGeorgia Gymnastics is looking to return to championship form. Ledby second year Head Coach Jay Clark, the Gym Dogs have risen to a#5 national ranking and have posted the second-highest score in thecountry this season to date, a 196.725 that came in Athens againstWest Virginia.

Coming off of a snow-day-extended winter break, The GymDogs just wrapped up a three game home stand that was crammedinto a seven day period. The Gym Dogs opened the 2011 home sea-son against rival No. 3 Utah, who was coming off a dual-meet victoryover defending national champion UCLA. In that contest, Georgiasaw it’s 34-straight regular season home winning streak vanish as theUtes pulled out a razor-thin victory by one-tenth of a point.

However, two days later the Gym Dogs hosted West Virginia athistoric Stegeman Coliseum and improved their score by nearly a fullpoint. The Dawgs routed West Virginia 196.725-192.125 in a meetthat saw saw seven scores of 9.9 or above, three of which belongedto senior Cassidy McComb who won the all-around with a 39.525.The Las Vegas native spent time after the meet to talk about the men-tal side of working as a team in a sport that relies so much on indi-vidual effort. “We had little mistakes here and there, but the positivething was that we didn’t react to them. The next person had the nextperson’s back, and it was a team effort collectively.” McComb ex-plained, “Today was about finishing what we started…When we allhave our heads on together it really is magical what happens.”

The Gym Dogs wrapped up their early season homestandagainst Auburn the following Saturday. Watkinsville native and UGAearly enrollee freshman Lindsey Cheek shined in her first ever all-around competition, tying the nation’s highest score to date at39.550. In addition to winning the all-around, “sweet-cheeks”, as herteammates call her, scored at 9.9 or above on vault and bars and wonthree of the four event titles. “She’s surprising even me to some de-gree,” said Jay Clark regarding the Watkinsville wonder. “We knewwe were getting a competitor, and I knew when we got her she wasgoing to be a star at some point…She’s getting cleaner. She’s a com-petitor, and I’m just glad she’s on our team. Tonight she reallystepped up.” Cheek’s performance can be seen in its entirety whenthe Auburn meet is aired on ESPNU on Jan. 27 at 2:30 p.m. Georgiaposted the third highest score in the nation to date against Auburn,and only Florida has posted a higher score than the Gym Dogs in2011.

Next the gymnastics team meets Kentucky on January 28th be-fore traveling to Arkansas and then returning to Athens for a show-down with traditional rival and top-ranked Florida on February 12.

The Lady Bulldawgs are back in the rank-ings. With two SEC wins last week againstranked teams, the Lady Dawgs are extendingtheir winning streak and making their way to thetop. One big reason for their success this seasonis Porsha Phillips. I caught up with the seniorfrom Stone Mountain before they made theirroad trip to Alabama.

Aside from basketball, what would yourideal job be?

My major is early childhood and family de-velopment, so probably a daycare, but I lovemodeling and fashion, so I would try and get intomodeling too.

You guys play a lot of games and travelmany days during the season. How do you keepup with school and playing a collegiate sport?

Well, on away trips we have tutoring ses-sions, so it’s not that hard to really focus on schoolbecause we take our books with us when wetravel.

So you came here from LSU. What wouldyou say is the biggest difference between playingthere versus playing here at UGA?

I feel like I have a lot more support here atUGA. At LSU, my parents were eight hoursaway, so they could hardly be there. I think Ihave more support from the fans and my family

members here as well. They all encourage me todo well on the court and motivate me as well.

So was it difficult transferring here andbeing the new girl?

It was an easy transition. I knew some ofgirls already, so it wasn’t that hard.

It is great that you get to be closer to yourfamily here. UGA tried to recruit both of yourbrothers for baseball, but they decided to go intothe professional league after high school. Itsounds like your whole family is pretty athletic.What was it like growing up?

My parents were very dedicated to sports.We used to practice every single day, non-stop. Itdeveloped a really great work ethic in us, and Ithink it made a big difference in us now.

So did your parents play sports in collegetoo?

My mother ran track and played softball,and my father played football.

Is there any sibling rivalry?We more support each other. We are always

there for each other and encourage each other towork harder and succeed.

Did you play any other sports growing up?I played softball as well, but my parents just

told me to pick one, and I obviously went withbasketball.

It is your senior year. Does that make youmore nervous or excited?

I don’t really think of it as, ‘Oh this is my lastyear, so I have to do this or that,’ I just go with theflow and try to do my best every game.

What is your favorite sport to watch, otherthan basketball?

Probably baseball, because my brothersplayed.

What is your biggest pet peeve?My biggest pet peeve is…dirty nails. I hate

dirty nails, and I love to get my nails done all thetime. They aren’t pretty right now….but I usu-ally have them done with different colors andstuff.

Do you have any pre-game rituals?Just listening to music, mostly Lil’ Wayne.

Do you have any superstitions?No, I try not to live that way, it makes you

crazy. But if there is one of us that does, it’sMeredith. I think her headband gives her luck.She loves that headband.

Mark Fox proves thatif you win they will come

When UGA unveiled the new plans for renovating historic Stegeman Coli-seum in 2008, it created plenty of buzz around campus. The soaring glass pan-els, larger than life graphics, expanded concessions and multi-million dollarprice tag had everyone excited to check out what had become one of the moreantiquated venues in SEC Sports.

But even the excitement surrounding an eight-figure renovation has fallento the wayside this season as Mark Fox and the Men’s Basketball team sits at 14-4, riding a wave of momentum heading into a crucial SEC stretch.

Coming into the season, Georgia’s biggest hurdle to earning an NCAA bidwas clear: the team had to learn to win on the road in the SEC. While theDawgs’ dropped a tough game to Vanderbilt in Nashville 66-73 that cost themtheir #24 ranking, Georgia rebounded later that week in Oxford. Against OleMiss, all five Georgia starters scored in the double digits for their first time ineight seasons en route to a 98-76 win. 98 points was the most points scored bya Georgia team since 1995, and the 22 point margin of victory was Georgia’slargest since 2007.

The Hoop Dawgs have put on a scoring clinic in 2011, scoring 80 or morepoints on six different occasions this season. Coach Fox explained after the Mis-sissippi State game, “I think we are a pretty efficient offensive team. I thinkeveryone on our starting five has had at least 20 points or more at some pointthis season. One of the things that was important to us is to have balance. [Trey]Thompkins and [Jeremy] Price needed to make some shots to start league playbecause they have been so surrounded…January has opened up some threepoint shooting and fortunately for us, those kids have made some.”

Thanks to some suspect officiating in the closing moments of the Ten-nessee game, the Hoop Dawgs claim a 3-2 conference record. The Dawgs areone-half game behind division leader Florida heading into a two week stretchwhere Georgia hosts Florida on Tuesday, January 25th before heading on theroad for contests with Kentucky and Arkansas on January 29th and February5th, respectively. The basketball team returns to Athens to host Auburn andXavier the week of February 5th. Florida is the preseason media favorite to winthe 2010-2011 SEC Title.

While Georgia is still very much in the thick of the SEC race, taking a lossto division-rival Tennessee at home carried a sting that will not soon be forgot-ten in Athens. According to UGA, Tennessee now leads the all-time series be-tween the SEC rivals by a 91-52 count, but Georgia still holds a 34-33 edge athome. The Dawgs bounced back from the Tennessee loss with an 86-64trouncing of Mississippi State where Georgia never trailed.

Walking out of the arena on Saturday after the win over Miss. State, Icouldn’t help but laugh overhearing some undergrads recapping the game. “Didthey paint the halls in here or something?” one student asked.

I can’t remember,” replied another, “but did you see that guy with the MarkFox-head poster?!”

While the renovated Stegeman Coliseum is a feature in and of itself, MarkFox is showing that the most effective way to create a buzz in Athens can besummed up in one word: Win.

David Richt and friends record their first CDWhen you think of the name Richt, ‘singer-song-

writer’ might not be the first thing that comes to mind,unless you are thinking about David Richt. David is asophomore at Prince Avenue. It is there he connectedwith Daniel Howell, David Stiles, Peyton Howell, AlecParrish and Annabeth Pruett in their school’s praiseband. What started out as a Christmas gift for CoachRicht evolved into a unique project for these six kids. Iwas able to talk to half the group about recording theirfirst CD, writing their own song and why they think itis important.

Where did this whole thing come from?Daniel Howell: Well, we all were in the praise band

at school, and Mrs. Katharyn (Richt) had the idea tomake a Christmas gift for Coach Richt. Making a CD ispretty cool, so I wasn’t going to turn that down.

How long have you been playing/singing?David Richt: I’ve played the piano since I was in

4th grade, and I have been in the praise band and thepraise team at church for a few years. My great-grandma’s piano is at our house. I started playing on itand then my mom got me lessons.

David Stiles: I started playing piano when I wasabout five, but I’ve been playing the guitar for fouryears now.

DH: I’ve been playing guitar since 5th grade.

David Richt wrote one of the songs, “ThinkingAbout You,” on the CD. David, have you written anythingelse?

DR: I have, but I never think they are good

enough, so I throw a lot of them away. When I was in4th grade I wrote one, but it is way too high for me now,so I’ll have to give it to someone else to sing. Writing isa lot of fun.

So what was the inspiration for the song?DR: I want to show everybody that God is number

one in my life, and that’s how it is with all of us playing.Most of all we did it for my dad. We’ll probably do a lotmore, but next time I want a lot more original songs onthere.

What would be the best thing to happen with thisproject?

DR: To pay for royalties and to get all of these songson the air.

DH: It would be cool to make more CDs and dosome bigger things in the future. More gigs!

Is this something you want to pursue in your future?DR: Yes, my dream job would be a recording artist

at a contemporary Christian label.DS: I want to be a worship minister, to be able to

worship for other people. I am looking forward to see-ing the other doors God opens up for me.

David Richt and the rest of the group are excited tosee what happens next, but for right now, they are justenjoying playing music for worship. dance experience is limited. My husband and I took ball-room dance from UGA Continuing Ed and had mixed re-sults. (He was better than me!) A few years later, weenrolled in a shag class at Continuing Ed, which did notgo well. On a lighter note, I did one year of ballet when Iwas five years old. I don’t remember it well, but guessthat my mother did not see a need to continue.

Do you have a favorite type of dance you havelearned so far?

We have only learned one dance, but I have learnedit quite well, I think.

Do you have a celebrity crush you would pick todance with?

This is hard to narrow down to just one…let mestart by clarifying that if I can get Peter (my husband) tolearn this dance, celebrity or not, there’s no one I wouldrather dance with than my handsome husband. But, if

forced to choose celebrities, I have had a major crush onDonny Osmond since childhood that has stood the test oftime. However, if Donny’s not available, George Clooneywill do just fine.

Aged pecorino with raw sprouts, celery & prosciuttoFrom one of Lisa’s favorite cookbooks by Skye Gyngell ‘My Favourite Ingredients’

This salad is all about combining ingredients with good compatible textiles and flavours. It has a lovely clean taste. Serve on its own as a starter or with some peasant-style bread for a lunch. Serves 4

6 Brussels sprouts4-6 ounces Parmesan2-3 celery sticks, washed20 shelled hazelnuts½ lemonsea salt and fresh ground black pepper¼ cup extra virgin olive oil8-12 slices of prosciutto, Lisa uses prosciutto as her protein instead of speck in Gyngell’s recipesmall handful of parsley (leaves only) from Lisa’s garden, very finely choppedLisa added arugula to the recipe from outside growing in her garden as well

Wash the Brussels sprouts and pat dry. Using a small sharp knife, slice them as finely as you possibly can and place in a bowl. Slice the Parmesan into fine shards, varying the thickness slightly to add interest. Add to the Brussels sprouts. Peel the celery lightly with a swivel vegetable peeler to remove any stringy bits, then cut into shorter lengths and add to the bowl.

Scatter the hazelnuts on a baking tray and warm in the oven for 10 minutes un-til the nuts are lightly coloured and release their flavour. Let cool slightly, then rub in a cloth to remove the skins. Chop the nuts roughly and set aside.

Squeeze the lemon juice over the salad, season with salt and pepper to taste and drizzle over three-quarters of the extra virgin olive oil. Toss together lightly with your fingers.

Place a slice of prosciutto on each plate and arrange half of the salad over it. Drape another slice of prosciutto on top, then arrange the rest of the salad on the top, finishing with a couple of slices of celery and a final slice of Parmesan. Lisa chopped her prosciutto and celery which I prefer and it looked wonderful. Drizzle with the rest of the olive oil and scatter over the hazelnuts. Finish with a sprinkling of chopped parsley.
