Famous Dave’sBy 4 a.m., seven hours before FamousDave’s opens, the grillmasters are atwork, rubbing slabs of meat with a custom blendof spices before smoking them for hoursover hickory logs. “Sauceaholic” is the termDave Anderson, founder of this 19-year-old barbecue chain, uses to describe him-self. Anderson has spent a quarter of a cen-tury scouring the nation, learning from barbecuemasters and perfectinghis sauces. While some are made in-house, his original five sauces areblended in a separate facility, where the recipes remain under lock andkey, before being shipped to Laurel.

Best Pie CompanyThe secret to Best Pie’s suc-cess is twofold. “We use anold-fashioned recipe for thecrust and only the freshestand finest ingredients for thefilling. That’s the formula,”said Sherman McCoy, whoowns the shop with his wifePatricia. Two dozen pies gracethe menu. Some are season-al—such as cherry and blue-berry peach; others—likesweet potato and coconutcustard—are available year-round. Reduced-sugar andlemon meringue pies mustbe ordered. While it’s theactual making of the pie thatSherman McCoy loves best, hearing how much customersenjoy the fruits of his labor is aclose second, he said.
