The Petite Sirah was one of the last parcels to be picked late in vintage 2017 - the rich, ripe fruit concentrates the varietal flavors of violets and blackberries and enhances aromas of anise and cinnamon. fermenters for five days and pumped over regularly to optimize color stability and tannin structure. The wine was drained, pressed and stored in stainless steel tranks until malolactic fermentation was complete. It was then transferred onto French oak staves and barrels and matured for approximately four months, giving a subtle and delicate oak influence. Dry, full bodied. Alochol: 14.69% pH: 3.50 TA: 730 g/l RS: 6.00 g/L persists to a long flavorsome finish.
