Place Maleny Black Angus Beef Corned silverside in the freezer for 1 hour (in the packaging) and it will “firm up”. This will make it easier to slice. 2. Remove from packaging and slice thinly. Slice across the muscle fibres for more tender jerky, or slice with the fibres if you like your jerky to be more of a challenge (personal preference, and still excellent to eat). 3. Put the sliced Silverside in a freezer bag (sealable top) and add the BBQ sauce. Seal the bag and mix by squeezing the bag. Even out and lay flat in the refrigerator overnight. 4. Next day remove from the bag and shake off the excess BBQ sauce. Put the slices of meat into a dehydrator or out in the sun in a well-ventilated place with a fly screen. 5. Dry the meat until you reach the point you prefer (soft or very hard). This will obviously affect the final weight produced - you will have approximately half of your starting weight. 6. Store in a dry airtight container if dry. If still moist, store in an airtight container in the refrigerator (to prevent mould).
