Banana Caramel Walnut Biscotti 1 banana 2 tbsp vegetable oil 1 egg 1/4 cup sugar, divided 1/8 tsp cinnamon 1/8 tsp salt 1/2 tsp baking powder 1-1/4 cup flour 1/4 cup walnuts, coarsely chopped 1 tbsp sugar for sprinkling (optional) Put walnuts and 2 tbsp sugar in a dry pan over medium heat. Let the sugar melt a nd coat the nuts. Stir to coat them completely, and then pour them out onto a sh eet of foil to cool. Mash up the banana and add oil and egg. Mix thoroughly. Add remaining 2 tbsp sug ar, cinnamon, salt, baking powder, and flour and mix until combined. Break up the candied walnuts and mix them into the batter. Form into a log shape on a baking sheet. Sprinkle 1 tbsp sugar over the top if d esired, and bake at 150 C for 40 minutes. Let cool for 10 minutes, then slice thinly into about 18 pieces. Lay flat on the baking sheet, and bake for an additional 10 minutes.
