Belizean Salbutes Crisp yet soft corn tortillas topped with stew chicken and picado. This is

Belizean salbutes - the perfect finger food with spice.

Tortillas

290 g masa harina –Mazeca (2 cups)

½ tsp salt

1 tsp achiote paste or recado rojo, dissolved in 2 tbsp water

180 ml water (¾ cup)

1 litre cooking oil for frying

Topping

shredded chicken

Picado

Red cabbage finely shredded

red onion very finely chopped

tomato finely chopped

Coriander leaves chopped

Fresh lime juice

salt to taste

Red chilli and jalapeño to taste

INSTRUCTIONS Tortillas

1. Place the masa harina and salt into a mixing bowl. Using your hands, rub the achiote water through the masa un-

til it's no longer lumpy. Gradually add the water, mixing with your hand until a dough forms.

2. Divide the dough into either 12 or 24 pieces, then roll these into perfect balls. I've used the smaller size, as pic-

tured. Flatten each ball between two pieces of plastic, using a tortilla press. I don't have a press so I used two plastic

bags and a flat-bottomed saucepan, pressing down evenly to form 10 cm disc with a 3 mm thickness.

3. Heat the oil in a large skillet over a medium flame. When hot enough, drop 2 to 3 pastry discs into the oil and let it

cook for about 2 minutes before flipping over. Drain well on kitchen towels as you cook the rest.

Picado

1. Measurements aren't all that necessary with the picado, as you can regulate the ratios as you please; depending

on your tastes.

2. Simply toss all the pieced ingredients together and make sure the lime and salt flavour is well balanced.

To assemble

1. Simply lay the fried tortillas on a plate or board, top with some of the shredded chicken, and make sure it's mois-

tened well with the gravy. Top this with with the picado, then eat!

ORACION DE

COMUNION ESPIRITUAL

Creo, Jesús mío, que estás verdaderamente

presente ahora y siempre porque con

el Padre y el Espíritu Santo eres Dios,

y Dios está por todos lados en todo momento.

Pero por tu grandeza

y los límites de mis cinco sentidos

no puedo siempre reconocer

y sentir tu presencia.

Necesito señales que me hagan sentir

tu presencia.

Y la señal más poderosa para mi

es el momento en que comulgo,

cuando recibo tu Cuerpo y Sangre en Comunión.

Pero no puedo recibir Comunión en este

momento por la Pandemia que estamos

sufriendo. Por eso te pido que me ayudes

a sentir más profundamente en este momento

de Comunión espiritual

– y, por favor en otros minutos --

tu presencia, tu amor, tu apoyo

en mis dificultades y tentaciones,

tu perdón de mis fallas.

Y ahora, como si ya te hubiera recibido,

me uno y me abrazo todo a ti.

No permitas, Señor, que jamás me separe de ti.

Anima Christi Alma de Cristo, santifícame.

Cuerpo de Cristo, sálvame.

Sangre de Cristo, embriágame.

Agua del costado de Cristo, lávame.

Pasión de Cristo, confórtame.

An Act of

Spiritual Communion My Jesus,

I believe that you are truly present

with me always,

for with the Father and the Holy Spirit,

you are God, present everywhere

at every moment.

But because of your greatness

and the limits of these five senses I have,

I need some signs of your presence

in order to sense it.

The most powerful sign of your presence for me

is the moment I receive you

your Body and Blood in Holy Communion.

I cannot receive you that way now because of this

pandemic, so I ask you to help me in this moment

of spiritual Communion

– and please in other moments as well –

to feel your presence, your love,

your forgiveness of my failings,

your support in my difficulties, and temptations.

I embrace you as if I had just received you

sacramentally

and unite myself wholly to you.

Never let me be separated from you.

Anima Christi Soul of Christ, sanctify me.

Body of Christ, save me.

Blood of Christ, fill all my veins.

Water from the side of Christ, wash out my stains.

Passion of Christ, my comfort be.

Good Jesus, listen to me.

In Thy wounds, I fain would hide,

Never to be parted from Thy side.

Guard me, should the foe assail me.

Call me when my life shall fail me.

Thus says the LORD to Shebna, master of the palace: “I will thrust you from your office and pull you down from your station. On that day I will summon my servant Eliakim, son of Hilkiah; I will clothe him with your robe, and gird him with your sash, and give over to him your authority. He shall be a father to the inhabitants of Jerusalem, and to the house of Judah. I will place the key of the House of David on Eliakim’s shoulder; when he opens, no one shall shut when he shuts, no one shall open. I will fix him like a peg in a sure spot, to be a place of honor for his family.”

Esto dice el Señor a Sebná, mayordomo de palacio:

“Te echaré de tu puesto

y te destituiré de tu cargo.

Aquel mismo día llamaré a mi siervo, a Eleacín, el hijo de Elcías;

le vestiré tu túnica,

le ceñiré tu banda

y le traspasaré tus poderes.

Será un padre para los habitantes de Jerusalén

y para la casa de Judá.

Pondré la llave del palacio de David sobre su hombro.

Lo que él abra, nadie lo cerrará; lo que él cierre, nadie lo abrirá.

Lo fijaré como un clavo en muro firme

En aquel tiempo, cuando llegó Jesús a la región de

bre?” Ellos le respondieron: “Unos dicen que eres

Juan, el Bautista; otros, que Elías; otros, que Jere-

mías o alguno de los profetas”.

Luego les preguntó: “Y ustedes, ¿quién dicen que

soy yo?” Simón Pedro tomó la palabra y le dijo: “Tú

eres el Mesías, el Hijo de Dios vivo”.

The angel spoke to me, saying,

“Come here.

I will show you the bride, the wife of the Lamb.”

He took me in spirit to a great, high mountain and showed me the holy city Jerusalem

It gleamed with the splendor of God.

Its radiance was like that of a precious stone,

like jasper, clear as crystal.

It had a massive, high wall,

with twelve gates where twelve angels were

PRIMERA LECTURA Apoc 21, 9-14

Lectura del libro del Apocalipsis

Uno de los ángeles me habló y me dijo: “Ven, que te voy a enseñar a la novia, a la esposa

del Cordero”. Entonces me transportó en espíritu

a una montaña elevada y me mostró a Jerusalén, la ciudad santa, que descendía del cielo,

resplandeciente con la gloria de Dios. Su fulgor

era semejante al de una piedra preciosa, como el de un diamante cristalino.

Tenía una muralla ancha y elevada, con doce

puertas monumentales, y sobre ellas, doce ángeles y doce nombres escritos,

los nombres de las doce tribus de Israel.

Tres de estas puertas daban al oriente, tres al norte, tres al sur y tres al poniente.

La muralla descansaba sobre doce cimientos,

en los que estaban escritos los doce nombres de los apóstoles del Cordero.

doblez”. Natanael le preguntó: “¿De dónde me

Hermanos:

Por lo que toca a la venida de nuestro Señor

Jesucristo y a nuestro encuentro con él,

We instruct you, brothers and sisters,

to shun any brother

who walks in a disorderly way

and not according to the tradition they received

from us.

For you know how one must imitate us.

For we did not act in a disorderly way among you,

nor did we eat food received free from anyone.

On the contrary, in toil and drudgery, night and day

we worked,

so as not to burden any of you.

Not that we do not have the right.

for you,

Lectura de la primera carta de san Pablo a los Corintios

Yo, Pablo, apóstol de Jesucristo por voluntad de Dios,

y Sóstenes, mi colaborador, saludamos a la comuni-

dad cristiana que está en Corinto. A todos ustedes,

a quienes Dios santificó en Cristo Jesús y que son su

pueblo santo, así como a todos aquellos que en cual-

quier lugar invocan el nombre de Cristo Jesús, Señor

nuestro y Señor de ellos, les deseo la gracia y la paz

de parte de Dios, nuestro Padre, y de Cristo Jesús, el

Continuamente agradezco a mi Dios los dones divinos

amo tardará, se pone a golpear a sus compañeros, a

comer y emborracharse, vendrá su amo el día menos

pensado, a una hora imprevista, lo castigará severa-

mente y lo hará correr la misma suerte de los hipócri-

FIRST READING 1 COR 1:17-25

A reading from the first Letter of Paul to the

Corinthians

Brothers and sisters: Christ did not send me to baptize but

to preach the Gospel,

and not with the wisdom of human eloquence,

so that the cross of Christ might not be emptied of its

meaning.

The message of the cross is foolishness to those who are

perishing,

but to us who are being saved it is the power of God.

For it is written:

I will destroy the wisdom of the wise, and the learning of the learned I will set aside. Where is the wise one?

Where is the scribe?

Where is the debater of this age?

Has not God made the wisdom of the world foolish?

For since in the wisdom of God

the world did not come to know God through wisdom,

it was the will of God through the foolishness of the proc-

lamation

to save those who have faith.

For Jews demand signs and Greeks look for wisdom,

but we proclaim Christ crucified,

a stumbling block to Jews and foolishness to Gentiles,

but to those who are called, Jews and Greeks alike,

Christ the power of God and the wisdom of God.

Jesus told his disciples this parable:

“The Kingdom of heaven will be like ten virgins who took

their lamps and went out to meet the bridegroom.

Five of them were foolish and five were wise.

The foolish ones, when taking their lamps,

brought no oil with them,

but the wise brought flasks of oil with their lamps.

Since the bridegroom was long delayed,

they all became drowsy and fell asleep.

At midnight, there was a cry,

‘Behold, the bridegroom! Come out to meet him!’

Then all those virgins got up and trimmed their lamps.

The foolish ones said to the wise,

‘Give us some of your oil,

for our lamps are going out.’

But the wise ones replied,

‘No, for there may not be enough for us and you.

Go instead to the merchants and buy some for your-

selves.’

While they went off to buy it,

the bridegroom came

and those who were ready went into the wedding feast

with him.

Then the door was locked.

Afterwards the other virgins came and said,

PRIMERA LECTURA 1 Cor 1, 17-25

Lectura de la primera carta de san Pablo a los Corintios Hermanos: No me envió Cristo a bautizar, sino a predicar el Evangelio, y eso, no con sabiduría de palabras, para no hacer ineficaz la cruz de Cristo. En efecto, la predicación de la cruz es una locura para los que van por el camino de la perdición; en cambio, para los que van por el camino de la salvación, para nosotros, es fuerza de Dios. Por eso dice la Escritura: Anularé la sabiduría de los sabios e inutilizaré la inteligencia de los inteligentes. ¿Acaso hay entre ustedes algún sabio, algún erudi-to, algún filósofo? ¿Acaso no ha demostrado Dios que tiene por locura la sabiduría de este mundo? En efecto, puesto que mediante su propia sabidu-ría, el mundo no reconoció a Dios en las obras de su divina sabiduría, quiso Dios salvar a los creyentes mediante la predicación de la locura del Evangelio. Por su parte, los judíos exigen señales milagrosas y los paganos piden sabiduría. Pero nosotros predicamos a Cristo crucificado, que es escándalo para los judíos y locura para los paganos; en cambio, para los llamados, sean judíos o paganos, Cristo es la fuerza y la sabiduría de Dios. Porque la locura de Dios es más sabia que la sabiduría de los hombres y la debilidad de Dios es más fuerte que la fuerza de los hombres. Palabra de Dios.

Las descuidadas llevaron sus lámparas, pero no llevaron aceite para llenarlas de nuevo; las previsoras, en cambio, llevaron cada una un frasco de aceite junto con su lámpara. Como el esposo tardaba, les entró sueño a todas y se durmieron. A medianoche se oyó un grito: ‘¡Ya viene el esposo! ¡Salgan a su encuentro!’ Se levantaron entonces todas aquellas jóvenes y se pusieron a preparar sus lámparas, y las descuidadas dijeron a las previsoras: ‘Dennos un poco de su aceite, porque nuestras lámparas se están apagando’. Las previsoras les contestaron: ‘No, porque no va a alcanzar para ustedes y para nosotras. Vayan mejor a donde lo venden y cómprenlo’.
