This years theme was “CIRCUS”.
Teams had to produce a range of Bread, Small Pastries, Danish, and a
Baked Showpiece.
Winners were Peng Hao and Chia Ming from China.

Products made during seminar were
Dark Rye Loaf, 80% Rye
A range of rolls with 20% Rye including Kasier Rolls.
My favorite the Pretzel.
Artisan Style Bread
Artisan style products was every where at IBA.
From ingredients to equipment suitable for any
size Bakery.
A lot of the product was high hydration Doughs
and long fermentation times.
Twisted Ciabatta was my favorite.
Tips for going to IBA
Use the IBA App on your phone
Load in suppliers before going
Must had a good pair of shoes.
Post flyers home.
Take plenty of business cards.
Must do a Seminar/Tour.
Have some spare room in you luggage if you wish to buy any equipment.
Must visit Beer Hall.
Have a Pretzel or two.
If you only have a few days to spend there I would do the end of IBA. Not as crowed.
