gov.ca - Grand opening ceremonies were held on Tuesday for a new home for people with intellectual disabilities in Swift Current.Crawford House is a three space group home, operated by South-west Homes Inc. through a funding partnership with the Government
of Saskatchewan. The Ministry of Social Services provided $175,000 in capital fund-ing for the project, and $330,000 in annual operating funding. “We made a commitment in our Plan for Growth to make Saskatch-ewan the best place to live for peo-ple with disabilities,” Premier Brad Wall said. “We’re demonstrating that commitment through our sup-port for this project, and others like it across the province.”

BEAT THE CLOCK PASTAServes:4 Time to prepare:10 min Time to cook:15 minIngredients 3 cups (710 ml) dry rotini pasta6 eggs1 container (300 g) light ricotta cheese1 tsp (5 ml) dry mustard1/2 tsp (2.5 ml) onion powder1/4 tsp (1.5 ml) pepper2 cups (475 ml) assorted cooked vegetables (e.g. broccoli florets, diced carrots, peas, sliced green beans)1/2 cup (120 ml) shredded light cheddar cheese2 tsp (10 ml) vegetable seasoning (see notes)Fresh basil leaves (optional)
InstructionsStep 1 Cook pasta in medium saucepan according to package directions or until just tender, about 10 minutes.Step 2 While pasta is cooking, whisk eggs, ricotta cheese, vegetable seasoning, dry mustard, onion powder and pepper until combined.Step 3 Drain pasta, then return it to saucepan over medium-low heat.Step 4 Add egg mixture and vegetables. Stir frequently until mixture thickens slightly and vegetables are heated through, about 5 minutes. Remove from heat.Step 5 Add cheese and stir until melted. Gar-nish with basil leaves, if desired.Instead of vegetable seasoning, use a heaping 1/2 tsp (2 mL) each of dried basil, thyme and oregano.If using frozen vegetables, add to the pasta in the last 4 minutes of cooking.
