Oil & then wrap the bone of your steak in foil so it doesnt burn, next rub the steak in olive oil and season generously with salt & black pepper, In a large Griddle or BBQ colour the steak and cook using the guidelines below, be sure to rest your steak for a minium of 15 minutes.
