WE ASKED FOR your help and you came.
Thank you to everyone that took the time
from their busy lives to help. Thank you to
our volunteers—Be the Match, N’tini’s, The
Lake 94.7, the Omni Royal Orleans Hotel and
most of all to the kind people that came out
to join the registry. We saw many friends and
family and met new friends. Many shared
their stories of hope and survival. You truly
touched our hearts.
We were overwhelmed by the outpouring
of people who came and joined us at N’tini’s
on Saturday, June 11th, to join the National
Bone Marrow Registry. Everyone played an
integral part in this event. N’tini’s played
host and served complimentary samples of
Be The Matchtinis—the signature drink they
created for the event. They also donated
a portion of all proceeds from the day to
the Be The Match Foundation. The Omni
Royal Orleans Hotel donated a two night
stay including a complimentary brunch
which was raffled off. Natalie Rowe from
Be The Match was on hand to supervise
the volunteers.
The number of donors we registered qua-
drupled the number of the average donor
drive in Louisiana! What a great success!
IT IS NOT TOO LATE TO HELP! To join the
registry go to www.marrow.org and select
the registry tab. To register at no charge
and as part of our drive, enter the code
GH06112011.You will be walked through the
simple and convenient registration process.
This code is valid through the month of
July. If you choose not to register, or cannot,
but you still want to help please consider a
donation to www.marrow.org .
Together, we can save a life.

JUNIORS AND SENIORS planning to attend
college can find themselves in a confus-
ing place. Fitting the pieces of the puzzle
together can become manageable if you take
it month by month.
In July and August, many students may
want to visit colleges to get a good view
of campus life. Maybe your family could
incorporate a vacation into your visits. In
September, sophomores, juniors and seniors
should attend college fairs. Seniors, who
desire a higher score or have not taken the
ACT or SAT, should sign up immediately. By
now, seniors need to make sure all college
applications and financial aid forms are in
their possession.
Once October arrives, sophomores and
juniors should take the PSAT or the PLAN.
Juniors should start thinking about the
ACT or SAT. Seniors need to start gathering
character recommendations. If you plan on
taking the ACT or SAT in December, sign
up now. November is the time financial aid,
grants, scholarships and work-study pro-
grams should be researched.
In December sophomores and juniors
receive PLAN or PSAT scores. If you intend
to take the ACT in February, you should reg-
ister now. In January and February students
should investigate colleges that suit their
interest. Visiting during the time that classes
are in session will give you the best sense of
campus life.
In March or April, sophomores and juniors
can register for the ACT or SAT in June.
May and June seniors should check
payment due dates for tuition, room and
board.
College preparation can be overwhelming,
but being organized will lessen the pres-
sure and allow you to enjoy one of the most
important and exciting times of your life!

Recent Covington High School graduate, Evan Rodick, has served others his entire life. Even as an elementary student, teachers would comment on how much he helped other students. As he grew older, peers who were struggling with their ACT exams would turn to Evan for help and tutelage. He even taught his younger sister to play the piano. As a young adult, Evan shifted his focus and began to serve his local community through building homes with Habitat for Humanity, volunteering at a local fi re station, and handing out food to the needy at the Covington Food Bank.
Evan, our Charter Business HERO award recipient for July, plans to attend college at Montana State University where he received an academic scholarship, to study mechanical engineering. He hopes to eventually design improved farming equipment. He lives by the philosophy that everyone should help others without any expectation of personal gain. Congratulations Evan, and best of luck in your college career. Shelly King of Charter Business with Evan Rodick.
Tell us why there is a HERO—Helpfully and Eagerly Reaching Out—in your life. Nominations should be submitted to SophisticatedWoman.com or mailed to 409 W. 21st Avenue,

If someone you knew needed a transplant, you’d do this too.
Your help is urgently needed. One of our own needs a stem cell transplant. Testing to see if you’re a match is simple and pain free—just a swab of the inside of your cheek. And, if you’re a match, donation is nothing like you think. Seventy percent of donations are now taken from blood instead of bone marrow, with most patients feeling no symptoms 30 minutes to an hour afterward. Even bone marrow donors can go back to their daily activities a day after donating. And neither process impacts your health.
So if you’re between the ages of 18 and 60, please join the registry go to www.marrow.org and select the registry tab. To register at no charge and as part of our drive, enter the code GH06112011. You will be walked through the simple and convenient registration process and Be The Match will send a swab kit directly to your home. This code is valid through the month of July. If you choose not to register, or cannot, but you still want to help please consider a donation to www.marrow.org.

A “BEST” RATING is not
achieved without a tremen-
dous amount of thought, work,
and dedication to principles.
“We are the “best” four years
in a row because we are tried and true. I have
stayed true to our original mission of provid-
ing a fun and nurturing climate for children
to grow and learn,” says Planet Kids Academy
(PKA) owner, Beverly Crews McQuaid.
“Long ago it was thought that toddlers
really just needed to be ‘watched’ as a means
of childcare. I strongly disagreed.” So, with
a specific vision in mind, Beverly set out to
ensure that toddlers were offered an age
appropriate curriculum including language
arts, math, science, music and movement
and computer skills. The state-of–the-art
PKA is equipped with amenities like an
Art and Science Lab, Music and Movement
Studio and a Splash Pad Water Park. Since
its inception in 1996 Beverly has ensured
that all instruction is conducted by loving
and caring, trained professionals, who offer
unconditional love and acceptance as well as
individualized attention to every child.
Darlene Pevoto, the executive director of
PKA is the driving force behind its contin-
ued excellence according to Beverly. “She is
completely dedicated to training and main-
taining our second-to-none staff of profes-
sionals, always challenging them to be better
prepared and to dedicate themselves to the
pursuit of excellence in helping every child
to meet their individualized goals.”
Bemoaning tragic events
gets a lot of press.

DID YOU KNOW the human body has an
estimated 100 trillion microorganisms living
in the bowel? These helpful bacteria, known
as flora, fight off infection, aid digestion
and nutrient absorption, and keep harmful
bacteria from wreaking havoc on your
body. With all of these important functions,
everyone should take the proper steps to
aid in the health of these helpful bacteria.
Supplementing with probiotics is a great
way to ensure the safeguarding of these
helpful bacteria, allowing them to perform
these important tasks within our bodies and
maintain the balance of our digestive and
immune health.
Probiotics, meaning “for life” are supple-
ments containing live microorganisms.
These microorganisms prove to be extremely
beneficial to the human body. They will
help to maintain and restore the body’s
natural flora.
Stress, travel and suppressed immune
systems are all times when the body will
benefit greatly from taking probiotics.
However, one of the most crucial times to
restore the body’s natural flora is immedi-
ately after finishing an antibiotic. Antibiotics
can be very helpful in fighting the bacteria
that make a body sick. They can also deplete
a body’s natural flora. Probiotics, taken
immediately after one finishes antibiotics,
can help to restore the depleted flora.

IN A CITY THAT spans only a five mile radius, Mandeville holds a
special place in the heart of its residents. Known for its breathtak-
ing beauty, spectacular sunsets, award-winning schools, low crime,
distinctive dining, family recreation, relaxed lifestyle and a variety
of places to worship, Mandeville offers an abundance of opportuni-
ties for residents of all ages. Here you’ll find friendly neighbors who
have come to enjoy the good life in a community with strong family
values. Mandeville is home to dining delicacies that will tempt your
taste buds and confirm the legacy of our restaurants’ legendary repu-
tations. Ambiance here is a natural resource. Money Magazine ranked
the city as one of the top 100 school systems in the nation’s major
metropolitan areas.
Rather than closed in malls, Mandeville is home to plenty of open-
air shopping complexes including major stores. The lakefront area
outlines the historic section of Old Mandeville, filled with homes
that have been the happy residences of generations of proud citizens.
Winding gracefully through our pine forest canopy, the Tammany
Trace offers exercise to walkers, joggers and bicyclists who often
gather at our Mandeville Trailhead, a cultural interpretative center
that includes an amphitheater for concerts and theatrical perfor-
mances. The Trailhead is also home to our Depot Museum and an
interactive water park. Here, every Saturday morning from 9 a.m.
until 1 p.m. the Community Market opens to local vendors offer-
ing a wide variety of items, while musicians perform live on center
stage. Only one block away you’ll find the birthplace of jazz on the
Northshore at the Dew Drop Social and Benevolence Hall, where
Louis Armstrong is said to have played.
Lake Pontchartrain is our crowning jewel, teeming with fresh fish,
blue crabs and Louisiana shrimp. You can also fish at your leisure on
the Mandeville Fishing Pier located at Sunset Point. The Mandeville
Harbor launches a variety of boaters set to enjoy the “Mandeville
blue” brackish waters of Lake Pontchartrain.
Our spectacular lakefront, dotted with graceful oaks and magnolias
offers a walking path and occasional benches, perfect for enjoying a
tranquil view that is second to none. Many have chosen to exchange
wedding vows beneath the century old oaks.
The charm and beauty of Mandeville will draw you back time and
again. It is a town rich in noble history, environment and resources.
As any resident will attest, there is no more idyllic place to live. TOP: The Harbor playground area and splash pad. MIDDLE: Known as the Justine Plantation, this historic home now houses PomoLink, LLC. BOTTOM: The Barley Oak brewery sits on Lakeshore Drive.

health І FOOD BANK
AS WE ALL BUCKLE down and become more
discerning with our resources, we must
not forget the bigger picture. Right here in
our own back yard we have poverty! The
Covington Food Bank has taken an active
stance in the fight against poverty.
Thirty-three percent of the Food Bank’s
clients come from Washington Parish where 27
percent of the total population and 36 percent
of the children live in poverty. Washington
Parish ranks 59th out of 65 Louisiana parishes
compared to St. Tammany, which ranks 10th
and Orleans which ranks 50th. In 2010 the
Food Bank distributed over 700,000 pounds
of food representing a retail value of over
$900,000. This is a 44 percent increase over the
2009 demand. The Vincentain Center Ministry
distributed $48,000 to over 400 families for
emergency needs.
The Dental Clinic Ministry performed over
1,800 procedures valued at over $350,000, on
the “working poor,” disabled and the elderly
population without insurance.
The Thrift Store Ministry sells gently used
clothing and household items for 10 to 20
percent of their retail value. All profits are
used to purchase food and many items are
given free of charge to victims of fire, domes-
tic abuse, homelessness and countless other
dire circumstances.
These valued ministries are made pos-
sible by over 22,000 volunteer hours that
were donated. For all those have contrib-
uted in any way—Thank you! The Food Bank
and its ministries are in constant need of
donations—not only of commodities but also
skills and services. Please help us in the fight
against poverty.
For all those have contributed
in any way—Thank you!

men in business
Remember that herbs require full sun, rich and well drained
soil, and should be planted near the kitchen.
JUST LAST MONTH, the Institute for Health
Metrics and Evaluation at the University of
Washington released a study on life expec-
tancy across the U.S. Here in St. Tammany
Parish, life expectancy is among the highest
in the state, up 1.8 percent for men and 3.2
percent for women since 2007.
While the population here on the
Northshore is extremely health-conscious,
residents are also privy to a variety of
physicians and specialists unmatched in
their professionalism across the region.
The range of medical institutions and hos-
pitals, gives every patient choices when
it comes to more extensive health issues,
diagnostics and educational opportunities,
to name a few.
This section will introduce you to many
Premier Physicians and inform you about
the myriad of health care facilities avail-
able so close to home. Use these pages to
meet some local specialists who have only
one concern, the health and well-being of
their patients and neighbors. Learn about
the state-of-the-art hospitals and medical
facilities which offer everything from birth-
ing classes to the finest in emergency
medicine.
We hope as you explore this section, it
will offer insight into health care options
and physician choices available right here
in your own community.

Highly Specialized Technology Gives Couples New Options in Fertility
IN 1976, RICHARD M. DICKEY, MD, PH.D set
out to treat, diagnose and research infertility
and recurrent miscarriage when he founded
the Fertility Institute of New Orleans. Their
first in vitro fertilization (IVF) procedure in
1983, was successful in placing the Fertility
Institute on the cutting edge. Today, the
stellar success rates of IVF with 51 percent of
implantation cycles in women under 35 and
in women 35 to 37 years of age resulting in
pregnancy, and procedures like pre-implan-
tation testing of embryos and egg cryopreser-
vation, the Fertility Institute of New Orleans
continues to open doors for candidates with
both fundamental needs and intricate, highly
specialized fertility options.
“We primarily offer pre-implantation
testing to pinpoint common genetic dis-
orders, and to pinpoint specific inherited
diseases like cystic fibrosis. Since January we
have been able to test all 23 pairs of chromo-
somes” Dr. Dickey says. This complete reading
of the genetic makeup of an embryo before a
couple decides whether or not to proceed
with the implantation, is in contrast to an
amniocentesis, which happens 14 weeks into
pregnancy. “Pre-implantation testing offers
couples for whom pregnancy termination is
not an option, a clearer picture of the genetic
health of the embryo, so that they can make
a more informed choice.”
Cancer treatments like chemotherapy and
radiation can often render a woman infer-
tile. The Fertility Institute of New Orleans
may offer a small glimmer of hope with egg
cryopreservation. “We can freeze her eggs
before treatment begins. This program is
conducted under strict investigational pro-
tocol, to gauge its success and ensure that it
works,” Dr. Dickey notes. For couples already
undergoing IVF, cryopreservation offers the
option to freeze eggs instead of embryos.
“We only implant two embryos at a time and
we freeze the extras. With this alternative,
couples might choose to freeze the eggs
instead of the embryos and they will always
have those eggs.”
Because fertility is very much age-related
Dr. Dickey encourages every woman to find
out early about their fertility potential. “Your
eggs will fall off in fertility as they age. We
can do an antral follicle count at almost any
age, to find out how many eggs you actu-
ally have.” The quality and the quantity of
a woman’s eggs drops significantly between
the ages of 25 and 40, and older eggs are
often not as healthy, so the sooner a woman
tunes in to her own fertility, the more likely
she will be to have fertility success. “IVF has
the potential to give you many things, but it
cannot give you good eggs,” he says.
The Fertility Institute has offices in
Mandeville, Metairie and Baton Rouge.
New patients, whether physician, or self-
referred, are welcome at any of the Fertility
Institute’s clinics. Call for an appoint-
ment at 800-375-0048. Visit their website at
www.FertilityInstitute.com.
“For women between 35 and 37, pregnancy rates
more than doubled during the fi rst
few months of this year.”

Shaun Carpenter, MD, FAPWCA, CWSWound Care Specialist
SHAUN CARPENTER, MD, has been voted the
Northshore’s Best Physician three years in a row. He
is a Board-Certified Emergency Medicine Physician,
a Certified Wound Specialist™, and a member of the
American College of Hyperbaric Medicine.
Dr. Carpenter, known in Louisiana as the state’s
“wound care expert,” specializes in the treatment of
all types of wounds, including:
• Venous insufficiency and arterial ulcers, wounds
that develop on the legs due to insufficient blood flow
to and from the heart.
• Methicillin-Resistant Staphylococcus Aureus
(MRSA) skin abscesses, caused by a type of staph
infection that is resistant to certain antibiotics.
• Decubitus ulcers, or “bed sores,” which develop
from constant pressure on an area of skin.
• Diabetic foot wounds, resulting from high levels
of glucose in the bloodstream that causes damage to
blood vessels and nerves in the extremities.
• Post-operative surgical wounds.
• Minor burns or skin tears that are slow to heal.
The longer it takes to heal an open wound,
patients are at increased risk for infection, pain and
amputation. Advanced wound care has been proven
to decrease both infection and amputation rates.
Without good wound care, patients can become
septic from even small wounds, which can lead to
serious illness and even death. “If you are suffer-
ing from a wound that won’t heal, a consultation
with a Certified Wound Specialist™ is a must,” says
Dr. Carpenter.
By using advanced techniques such as Hyperbaric
Oxygen Therapy to treat non-healing wounds due to
low oxygen levels, Dr. Carpenter achieves a 91 percent
heal rate—far exceeding the national average.
Dr. Carpenter doesn’t rely strictly on technology
to treat his patients, he helps them understand the
underlying causes for their wounds. “I don’t just
treat the wound, I treat the whole patient,” states

Matt Slimming—Star Physical TherapyRestore Your Healthiest Self
DURING THE NEARLY two decades that Matt Slimming
has been a practicing physical therapist, he has
embraced a clear-cut truth that every individual has
special roles to fill in their lives. When clients turn
to the expert therapists at STAR Physical Therapy for
rehabilitation, their methods and approach embody
the essence of his philosophy. “We want to bring
people back to their healthiest place. We’re about much
more than just fixing an injury. Our focus is to get our
patients strong so that they can live their best life and
fulfill their special roles,” he says. “Our combination of
amazing, experienced staff, high-end technology, the
finest equipment and programs, as well as our caring,
personal touch are what really set us apart.”
Because STAR Fitness Center is adjacent to the
physical therapy facility, patients have the added
advantage of continued care long after their physi-
cal therapy sessions have stopped. “We are able to
bring our patients next door to continue improving
their health and appearance. We call it a compre-
hensive unified approach. We can train them, guide
them and craft a tailored plan for their progress to
continue after their prescribed physical therapy is
over.” Amenities like group exercise classes (including
the popular “Boot Camp”), child care, secure lockers,
pristine showers, seven personal trainers and seven
certified physical therapists on staff throughout the
three locations, offer patients and members alike an
unsurpassed experience in health and fitness.
Matt simply offers the foremost, all-encompassing
physical rehabilitation and fitness product he can to
the neighbors he has come to cherish. “I really appre-
ciate the deep ties and anchors our family has devel-
oped in this community. The depth of the values here
are huge. This is a great place to raise my children,” he
notes. “And of anywhere in Louisiana, this is the most
health-conscious community I know.”
Physical Therapist Matt Slimming has been practic-
ing on the Northshore for 18 years and owns STAR
Physical Therapy and STAR Fitness Center with facili-
ties in Covington, Folsom and Slidell. He can be reached
at 985-893-2845 or www.StarFitnessCenter.com.

AT 23 YEARS OLD, Stephanie Machado was already
a homeowner. The fact that she was a discontented
homeowner may be the exact reason why she is
where she is today—a senior loan officer with NOLA
Lending Group. “My whole buying experience was
unpleasant. I was young and had just graduated
college. Everything that could go wrong went wrong.
I was recommended not to have a home inspection
because the REO company would not repair anything.
My loan officer placed me in a three-year adjustable
rate mortgage, and shortly after I closed on the home
it was infested with termites. Then, 18 months later
Katrina hit—at which point I realized I did not have
enough insurance,” Stephanie recalls. The staggering
reality of the peaks and valleys of home ownership
made Stephanie realize that homebuyers need guid-
ance and useful information if they are going to make
informed and wise purchases. So, instead of entering
law school as she had originally planned, she returned
to school where she earned her MBA. “I really just fell
into the mortgage and loan industry,” she says. “But
when a person is purchasing a home, I put myself in
their shoes, because I have been there.”
Since that first purchase that threw her into hom-
eowner oblivion, Stephanie has purchased and sold
other homes. As a senior loan officer she guides every
homebuyer through all of the crucial aspects they
must explore before making such a significant pur-
chase. “This is one of the most important transactions
in a person’s life. We want to make sure we give them
the support they need.” To that end, Stephanie walks
each client through basic elements of the process
like asking them what kind of house note they are
comfortable with paying. Stephanie is also a stalwart
proponent of educating homebuyers on the necessity
of purchasing suitable homeowner’s insurance.

payment. People should remember to factor insurance and taxes
into the note and decide how much money they want to put toward
the house note each month. One mistake many buyers make is that
they do not gauge the actual costs of buying a house,” she says. “We
have products to guide the customer from start to finish through the
entire process. We can help you purchase the best insurance, find
the right title company, and inspector. We work in tandem and build
relationships with companies to ensure the best service.”
Stephanie has found her home at NOLA Lending Group to be a
cohesive fit, in part because of the unmatched level of service and
accessibility. “We work with clients to get them on the path to home
ownership. We want to give them the tools to get them into it the
right way,” she notes. They help current homeowners find the best
product for their refinance and purchase needs. Stephanie credits
her assistant Courtlin Donner with maintaining seamless attention
to every client’s needs. Their team is always accessible, calls are
answered promptly and clients have minimal waits during what
almost always proves to be an anxious time. “People need to know
that if they have a question for me and it is after hours, I understand
the restless feelings that arise when they are waiting on answers
concerning their mortgage. Myself, or someone from my team,
usually Courtlin, is always there to offer support. I like to build rela-
tionships. My clients are not just the next transaction.”
Because all loans through NOLA Lending Group are underwritten
in-house, clients also have the advantage of someone handling their
transaction locally and personally. “We are not waiting three to five
days for answers—we are sitting in the middle of the operations,”
Stephanie says. “We are able to give better, quicker, more accessible
service to every client. We simply walk over to someone’s desk, rather
than wait for them to call.”

Though she loves her work and thoroughly enjoys doing it,
Stephanie does carve out time to relax with her significant other,
Jason. “We love to travel,” she says. “We are really fond of the beach
and the islands, but this year we are planning something a little
different—a trip to New York.” During the fall, Saints games offer
them a break from the norm and a chance to see Stephanie’s favor-
ite players—Lance Moore and Drew Brees—in action. Here at home,
Stephanie and Jason enjoy working on their Covington home and
dining out at local restaurants. And she always finds the time to play
favorite aunt to her nine-year-old nephew. “We’ve dedicated a room
just for him. When he comes over, he has a place to do the things he
likes to do, like play video games and watch television,” she says. “I
definitely look forward to our time together.”
As for her future, “I definitely see plans for marriage and family
down the road,” she says. But for now, she remains committed to
helping people fulfill their dreams of home ownership. “I am pas-
sionate about what I do and I enjoy doing it,” she says. “We do believe
that knowledge is power. Really, the hardest part is finding the right
home. We want this part to be easy.” Stephanie Machado can be reached at 985-612-2146 or by email at
sm@nolalending.com. NOLA Lending Group has locations throughout the
Gulf Coast region.

I CAN STILL HEAR my mother’s voice every
time I talk to a patient about posture, “Stand
tall! Shoulders back! Stomach in!” I realize
now, that she may have actually had a
point—even if she was unaware of how my
spine would benefit. The growing problem
of slouching today continues to get worse as
we spend more time as inactive adults stuck
in front of computers for work, and as our
children spend their summers in front of the
television playing video games. It is a bad
habit that conveys weakness and insecurity,
and slouching also contributes to chronic
neck and lower back pain.
Slouching puts pressure on your verte-
brae, ultimately causing discs to become
compressed. It makes you vulnerable to back
pain, and pelvic muscles lose their strength
and stability, which makes it even harder
as we age to support a well-aligned stance.
Pinched nerves and tightened muscles in the
neck ultimately cause tension and stress to
accumulate throughout the shoulders and
upper back.
To break the poor posture habit, increase
the strength of your abdominal and back
muscles. No time for stomach crunches?
Simply pull your navel to your spine and
hold it in for 10 seconds. This can be done
almost anywhere. Follow this by squeezing
your shoulder blades together and holding
that position for 10 seconds. Repeat this two
to four times. Consider spending money on
high-quality orthopedic shoes. If those are
not your style, forego the flip-flops, high
heels, and other footwear with no support
except on occasion. Choose shoes that
provide legitimate arch support. Most impor-
tantly, become conscious of your posture
and routinely make an effort to start practic-
ing good habits—today.

Dr. Mary W. Speed is a licensed therapist and consultant.
IN MAY, MY DAUGHTER, Katie and I went to
Guatemala for my son’s wedding. For the first
time we met Rosa, his bride, and her nine
year old daughter, Kimberly. He is serving at
an orphanage, Casa Bernabe, and has influ-
ence—as is evidenced by children wearing
“Who Dat?” shirts, but in greater ways too—
like this one. A little boy came up to me, and
said in Spanish, “Que la madre de David?” (Are
you David’s mother?) I nodded yes and said,
“Si.” This child wrapped his arms around me,
looked up at me, and said, “Gracias.”
I don’t understand how a place so far away
in culture can have captured David so fully,
yet it is so. I do know this—years ago when I
was the director of a local youth ranch, David
was part of that work. When the facility faced
financial trouble, he gave me his piggy bank
and said, “Here Mom. Give it to the children.”
The first summer the facility was awarded
The Safe and Drug-Free Schools Governor’s
Grant, I didn’t have enough children identi-
fied from the community as at-risk to attend,
so I signed David up to go, and frankly
worried about what I was exposing him
to. He went the extra mile. There early, he
helped prepare and serve the other campers
breakfast. He is serving now in a whole
other language. You can follow his work at
www.davidspeedmissions.com.
One hundred sixty children, from eight
houses attended the wedding, and all had
their pictures taken with Rosa, David and
Kimberly. As part of their wedding ceremony,
Rosa and David poured salt from two glasses
into one signifying their unity, their calling,
their destiny.
Adios—la madre de David.
Nature makes fathers.
Nurture makes a Dad.

I SPEND A LOT of time in Home Depot searching
for solutions to home repairs and projects.
Can you imagine if the employees, helpful as
they are, were instead master builders, master
plumbers, master electricians, etcetera? How
much more competently and economically
would my problems be remedied?
In medicine, selecting board certified spe-
cialists is the equivalent to using master
professionals for building projects. Following
completion of medical school, residency
training in a specialty field involves intense
study of only one aspect of medicine every
day for three to eight years or more. After
this focused training, a rigorous test by an
accredited specialty organization must be
passed before the honor of “board certified”
can be bestowed upon the physician. Oddly,
graduates with a medical degree can label
themselves as specialists even though they
are not specially trained by an accredited
residency program.
Two other current issues concerning physi-
cian accreditation are board certified special-
ists who switch to specialties in which they
are not certified and “mail order” certificates
awarded by under-the-radar groups. The
Louisiana legislature is set to pass legisla-
tion requiring physicians who denote “board
certified” in advertisements to state the exact
specialty in which they are certified. Strange
as it may seem in a discipline as important
as medicine, some locales have faux der-
matologists and other specialists practicing
with little or no accredited training or testing.
Many are certainly excellent physicians, but it
is simply a good idea to inquire if doctors are
board certified in the particular specialty they
purport to practice and by which accredited
board they are certified—either the American
Board of Medical Specialties or the American
Osteopathic Association.

WHEN REPORTING SYMPTOMS of meno-
pause to your practitioner, it is not unusual
to immediately hear that you need a pre-
scription for synthetic hormones such as
Premarin, Prempro or Provera. Although
these drugs may relieve symptoms, they are
manufactured drugs which are not made to
conform to your exact body physiology.
Because many individuals are uncomfort-
able being on hormone replacement therapy
through a patented or manufactured drug,
they may decide to try herbals or over the
counter medications which claim to relieve
symptoms. These medications often do give
moderate relief, however, the goal is to bring
your body back into balance and not just try
to mask symptoms. A reputable compound-
ing pharmacist will not try to squeeze thou-
sands of women into four different strengths
of medicine. They will specialize in custom-
izing medicines specifically for your body.
A natural, individualized approach is
through Human-identical hormone replace-
ment therapy (BHRT). To begin this process
you must first discuss with your physi-
cian your desire to approach treatment in a
more balanced way. Recently, BHRT has been
brought to the forefront on popular daytime
talk shows as well as in several popular
books on the subject. Many physicians who
have rejected BHRT as a viable treatment
plan in the past, have a newfound interest.
Your compounding pharmacist should have
relationships with many local practitioners.
They are usually happy to work with any
physician who would like to learn more
about this treatment.
Remember that any of the symptoms
mentioned can be a sign of other medical
problems. Always report any changes in your
health with your physician.

BOAT RIDES, POOL PARTIES and trips to the
beach are just a few of the summertime
activities we all enjoy. Here are some tips to
help you keep cool, and to help you look and
feel your best.
Summertime is the perfect time for putting
on your swimsuit, but if you’re like most of us,
we worry about being the right size or having
some extra love handles where they don’t
belong. To help get rid of the extra inches you
need the “winning edge” that comes with a
seaweed slimming body wrap. These wraps
have been around for ages and work very
effectively at helping the body shed toxins
that are located just below the skin to help
you achieve a smaller size. Thalassotherapy
(the name comes from the Greek words thala-
ssa or “the sea” and therap or “treat”) is the key
to losing multiple inches in just one session.
A cellulite massage is recommended with this
wrap to make the inch loss more noticeable.
Those pesky dimples on the thighs can be
minimized dramatically. This massage incor-
porates unique tools and additional products
to increase the body’s circulation in order to
reduce adipose (fatty) tissue and increase
flushing of wastes through the kidneys and
liver. Most of our clients will notice great
results after just one session; but two or more
sessions are recommended to maintain the
results and your new smaller size. It is impor-
tant to remember that every person responds
differently to this type of treatment. The
results can be fantastic and it is not unheard
of to see 20 to 25 inches lost in one session.
The best parts of the body wrap and cel-
lulite massage are results, inch loss and how
much better your clothes fit. Your energy
levels will soar and your metabolism will
thank you. No more needless worries about
being too big to wear the perfect outfit.
So relax and try a body wrap on for size.

reciPe І food
It may be hard to believe, but three quarters of American
households own at least one barbecue grill, and that number
continues to grow.
THE RENOWNED WRITER Brillat-Savarin
once said—“It has been established that a
succulent, delicate and careful diet delays
the ravages of old age.” Proof of that might lie
in the ageless beauty of Sophia Loren, who
credits her diet (which includes much olive
oil and spaghetti) for retaining her youthful
good looks. Science tells us that wrinkles
are caused by poorly nourished skin and
muscles that do not have the necessary
resiliency. So it would seem only reasonable
to conclude that those of us who eat proper-
ly will look younger than those who do not.
Italian food is extremely varied, and offers
something different, and indeed something
unusual, every day of the year. Italians have
been wonderful cooks for many centuries.
In fact, it was an Italian woman who first
won the coveted Cordon Bleu. But for all good
reasons, Italian cuisine is without compari-
son. And while July is the bearer of probably
the most celebrated holiday in America,
following are some recipes that can make
an everyday meal something to celebrate.
Madonna! Ciao, and Buon Appetito.
Insalata di scampi e funghi(Shrimp and Mushroom Appetizer)
1 lb baby portabello mushrooms
1/2 cup olive oil
Juice of one lemon
1/2 tsp freshly ground black pepper
1/2 tsp minced garlic
Bang-up Dishes
1 lb cooked and cleaned shrimp
1 1/4 tsp salt
2 tbsp minced parsley
Wash and dry the mushrooms. Remove
the stems and slice the caps thinly, then
add the oil, lemon juice, pepper and garlic.
Marinate in the refrigerator about two hours.
Thirty minutes before serving, mix in the
shrimp and salt. Taste for seasoning, and
sprinkle in the parsley.
Vongole in Bianco Alla Marinara(Clams in White Sauce)
36 small hard clams
1 1/2 cup white wine
1/4 tsp thyme
2 crumbled bay leaves
1 tbsp flour
1 tbsp butter
3 tbsp minced parsley
Scrub the clams under cold running water
and remove any beards. Combine the clams
in a saucepan with the wine, thyme and bay
leaf. Cook over high heat until clams open.
Remove clams and keep hot, discarding any
clams with unopened shells. Strain the stock
into a small saucepan. Knead the butter and
flour together and add to the stock in small
pieces, stirring constantly over medium heat
until thickened. Mix in the parsley, add
clams and heat one minute. Serve clams and
sauce over cooked linguine in deep plates
for an unforgettable meal.

FACED WITH LOANS and with an eye toward owning a
car or a home, many twenty-something women think
saving for “old age” can wait. But the need is more
urgent. Any woman who wants to secure her future
needs to begin today by taking time to consider invest-
ments and retirement planning. Here are basic steps
that can move you closer to financial self-reliance.
Establish solid goals. Concrete objectives give you
something tangible to strive for and make it easier to
assign a price tag to goals. Establish your goals, set a
time frame, list the steps you need to get there, and
implement your plan. Start now.
Assess your financial position. Take a critical look at
finances. Consider asking a financial professional for
help in calculating where you stand. Know what invest-
ments you have and how much they are worth. Estimate
how much you will have saved by retirement and how
long that will last you based on your lifestyle.
Create a solid portfolio. Young investors should start
as soon as possible to research financial information
and start saving. Even seemingly small amounts
of saving now can help build future stability and
eventual wealth.
Team up with a financial professional. Women who
are unfamiliar with the financial products available
should team up with a financial professional they
can trust.
For both women and men, it pays to create a clear
vision of one’s financial future. 1. Statistical Abstract, 2009; www.census.gov. Printed copies avail-able upon request.

IN LOUISIANA, the word “Succession” is analogous to the
word “Probate” in other states. Basically, a Succession is
the process of changing title of the deceased person’s
assets to his heirs or legatees. If the decedent died
“intestate” (without a Will), he will have “heirs”; if he
died “testate” (with a Will), he will have “legatees.” As
an example, if a husband and wife purchased a home
together and husband dies with a Will that leaves all
assets to his wife (assuming there are no forced heirs)
then she must initiate her husband’s Succession in
order to change the title from her husband’s name (his
one-half) into her own name as the full 100% owner.
This must be done before she could sell or refinance
the home.
Normally, this process is through a “judicial”
Succession (meaning it must go through the Courts).
However, in rare circumstances, it may go through a
non-judicial procedure called an “Affidavit of Small
Succession” (see my March 2011 article).
If a decedent dies intestate, the laws of the State
of Louisiana direct where the assets will go. To clarify
a very common misconception, the assets will never
go to the State unless the decedent has absolutely no
relatives (even very distant cousins come first). Intestate
laws are very strict and always vest with the closest
family members first, so a decedent may never leave
any probate assets to friends, charities, or more distant
relatives without having a Will. If the decedent dies
testate, then assuming the Will was drafted properly (to
be discussed in more detail next month), the assets will
go to the named legatees.
A Succession also makes sure all of the creditors of
the deceased have been paid before transferring title to
the heirs or legatees. To clarify another common mis-
conception, you may not merely accept the assets of the
decedent; if the decedent had debts you must accept
them too. However, heirs or legatees are never required
to accept a Succession. If the decedent left significantly
more debts than assets, his heirs or legatees may simply
choose to not accept his Succession at all.
What is a Succession?

West Chamber Goes AbroadIN THIS EVER-EXPANDING global economy, Chambers
across the U.S. are now offering members first hand
learning opportunities about international economic
cultures. These trips to foreign lands are not only a
great way to educate business leaders about cultural
differences among other countries, they also offer an
opportunity to open doors for potential trade and busi-
ness relationships.
The time has come for our Chamber to get on this
bandwagon. A March survey of our entire membership
proved significant interest in both our offering, and
potentially traveling, on an international Chamber-
sponsored trip. Italy was the first choice destination
of respondents. So, after more research and in coop-
eration with ABC Destinations, an experienced tour
company recommended by chamber counterparts, we
are pleased to present our first ever international trip
November 9–17 to Tuscany, Italy.
For less than $2,400 per person, the package includes
roundtrip airfare from New Orleans, first-class hotel
accommodations for seven nights in historical
Montecatini Terme, daily breakfasts and dinners, and
full day deluxe motor coach tours to Florence, Siena
and San Gimiganano. Optional tours to Pisa, Chianti
and Cinque Terre and a Rome two-day extension are
also available.
Tuscany, located in the heart of Italy, is an incredible
place with perfectly preserved hill towns, fabulous art,
top quality restaurants and food, culturally rich cities,
and a beautiful countryside. Chamber membership is
not required so we invite everyone interested to consid-
er joining us on this first Chamber-sponsored journey.
For more information on this outstanding value,
please email, michelle@sttammanychamber.org for
complete details. As always, a complete listing of
our business support activities can be found on our

FREDDY DRENNAN,
MAYOR OF SLIDELL
Stay in the Know During Storm SeasonI ENCOURAGE EVERYONE to prepare now for the
coming storm season. Reports indicate that the 2011
hurricane season is expected to be an active year, so
please plan ahead. If a storm does head our way, I
encourage everyone to stay informed and act promptly.
I can assure you that the City of Slidell is prepared
should a hurricane come our way. We will continue
to use every means at our disposal to reach you with
information about evacuation orders and instructions.
As in years past, we will post all information to our city
website, www.slidell.la.us.
In an effort to provide information directly to you,
we will continue to reach beyond typical web updates
and press conferences and incorporate the use of
Twitter, Facebook and Slidell TV on YouTube. Twitter
enables subscribers to receive instant updates via
email or their cell phones anytime an update is posted.
For a free subscription, simply sign on to twitter.com to
establish your account, then click the “follow” link at
www.twitter.com/SlidellSOS, which is the city’s emer-
gency news account.
We will also be posting information on the City of
Slidell’s official Facebook page, which allows people
to receive news updates and view photos and videos.
To join Facebook and create a free account, go to
www.facebook.com. Members can search for the offi-
cial “City of Slidell” page and click the “like” button to
subscribe. To ensure that you receive all official notices
and updates, please subscribe to the “City of Slidell”

This year, we will continue to post video updates,
so that citizens who have evacuated will be able to
tune in to Slidell TV on YouTube for the most current
information. To access Slidell TV, visit www.youtube.
com, search for “thecityofslidell” and subscribe to the
channel. Slidell TV links will be posted on the city’s
website, Twitter and Facebook pages. All of these
services can be accessed from virtually anywhere,
whether it’s a cell phone, laptop or tablet device. Even

Flood Insurance Premiums Will be Lowered I AM PLEASED to report that citizens of the City of
Mandeville will be receiving a reduction in their flood
insurance premiums. FEMA has agreed to allow the
city its own community-based map, which has an
effect of lowering the base flood elevation from one to
three feet, resulting in significant savings.
We are well into hurricane season, so please stay
prepared. We will remain with the city during a storm
event, so if you must evacuate, keep in touch with our
website or call the office at any time, day or night.
Please sign up for hurricane notifications on our
front webpage. The Mandeville Seafood Festival will
be held July 1–4 at Fontainebleau State Park. Seniors
65 and over, active military personnel and children
ten and under (when accompanied by an adult) are
admitted free. For a complete itinerary of events, go to
www.seafoodfest.com.
The city contracted with landscape architects Regan
Contois and Kathy Stites to spruce up the gazebo area
with new landscaping and brick work. The gazebo will
now feature an eight foot garden around the base with
colorful and hardy plant material. Two small garden
beds will line the walkway from the street to the
gazebo, bordered with old St Louis Brick.
We are also refurbishing the capped well head into
a fountain area. The boxwoods that once lined the
area were incorporated into the new design. In addi-
tion to a few live oaks, there will be a simple walkway
lined with old St. Louis brick to connect the seawall
to the new fountain area. Information on items in
this article and information on the current hap-
penings in Mandeville can be found on our website,

THeraPY І health
EYE MOVEMENT DESENSITIZATION and
Reprocessing (EMDR) is a treatment that can
resolve long-standing and recent trauma.
During EMDR, the client is asked to hold in
mind an image of the trauma, a negative
self-cognition, negative emotions and related
physical sensations about the trauma. While
doing so, the client is instructed to move
his or her eyes quickly and laterally back
and forth, following the therapists’ fingers
or scanner, which desensitizes the troubling
material and allows positive cognitions to
replace the negative cognitions. Theoretically,
EMDR evokes a mind-brain state that enables
traumatic memories to be effectively pro-
cessed, and become integrated with more
adaptive information.
While there is no well-supported account
of how eye-movements or other forms of
bilateral stimulation alter clients’ experience
of traumatic memories, this bilateral stimula-
tion can reduce the vividness, emotionality
and completeness of unpleasant or traumatic
memories, therefore driving improvements
in how individuals experience these events.
One theory is that this dual-task component
of EMDR disrupts a memory image in the
working memory, which then leads to the
client feeling a greater distance from the
associated traumatic experience. As trau-
matic memory is desensitized, the general
functioning of the client is improved, resulting
in less anxiety and depression, fewer somatic
symptoms, and improved self-esteem.
Though we do not fully understand how any
form of psychotherapy works, EMDR appears
to be a viable treatment option for trauma.
The U.S. Department of Veterans Affairs and
Department of Defense Practice Guidelines
highly recommend EMDR for the treatment
of trauma, and is also highly endorsed by the
American Psychiatric Association as well as
the National Institute of Mental Health.

BOOMSDAY IS A rollicking novel, which sati-
rizes a serious problem. It describes the inev-
itable conflicts in the United States between
the “baby boom” generation and the young
adults of the fol-
lowing generation.
The young adults
realize that they
are supporting
the self-absorbed
Boomer’s retire-
ment and eventual
dotage with their
Social Security
payments. In the
words of the novel,
“20 year olds will
be paying for 30 years of incontinence.”
The main character, Cassandra is a like-
able, sympathetic, Red Bull-swilling, twen-
ty-something who becomes an influential
blogger. Along the lines of Jonathan Swift’s
“A Modest Proposal,” she suggests that the
government give the Boomers incentives
to kill themselves at retirement age. The
proposed “voluntary transitioning” package
includes supplying copious amounts of drugs
to bring “the wrinklies” peacefully to the end.
Although Cassandra’s voluntary transition-
ing strategy is a dramatic ploy to highlight
the government’s problem of financing 70
million baby boomers in retirement, there
are many people who like the idea and take
it seriously.
Author Christopher Buckley ridicules
duplicitous politicians, the advertising indus-
try, the culture of spin, old people, young
people and the U.S. culture in general. He
also lampoons the American presidents and

of always inappropriate four letter words.

I HEAR IT ALL the time—clients joking about
their “muffin tops.” Just what is a muffin top?
Well basically it refers to LOVE HANDLES! Call
it what you will, but no matter, it is located in
the area of the suprailiac. It is most common
in teenagers, but you can spot on people of
any age. People who do have a muffin top
are not always obese or overweight in fact,
they may actually appear somewhat tone.
So, what’s the paradox here?
Studies show that this area and fat storage
are directly associated with an over abun-
dance of carbohydrates. Americans are car-
bo-fanatics! Unfortunately, that’s why love
handles and muffin tops are becoming so
common here in the good ol’ USA.
Why are carbs the culprit? Blame it on
insulin. You see, the body actually wants to
use fat as energy. However doing anything
that causes insulin levels to rise rapidly,
causes the body to shuttle blood sugar to the
liver, muscle tissue and most importantly, to
the adipose tissue (aka body fat). Insulin, in
essence is a storage hormone.
So, now that you know, here are some
guidelines to help you lose the muffin top.
Eat organic protein. Eat tons of green veg-
etables, lightly steamed. Eat fruits that are
low on the Glycemic Index such as berries.
If it is packaged and processed don’t eat
it! Supplement with a great quality fish
oil. Look into insulin stabilizers like herbal
products such as fenugreek and gymnema
sylvestre. Consume only complex carbo-
hydrates from brown rice, sweet potatoes,
quinoa, legumes, Ezekiel bread and plain
steel cut oats. Soon, you will notice the fat
melting away in no time!
How to Lose Your Muffin Top
Eat tons of green vegetables,

The Strength is in the PackBORN AND RAISED in Covington, the elder sibling of five
children, I learned from my parents the importance of
strong leadership, devotion to family, and an apprecia-
tion for public service. Watching my dad, Ernest J. Cooper,
serve Covington as Mayor from 1967 to 1991, I learned
early on the significance of community service.
A graduate of St. Paul’s High School, our respected
team motto “the strength of the wolf is in the pack”
serves as an incredibly practical life lesson. Since the
April 2 election, I have been preparing for a smooth
transition with outgoing Mayor Candace Watkins and
current, and newly elected Council members. My team
pledges to be that strong “pack,” as we join with our
City Council to continue to move Covington onward.
I am fully committed to maintaining and enhancing
the quality of life in Covington, where people are proud
to be and to call home. A focus on business develop-
ment, ease of traffic flow and neighborhood policing
efforts are part of my initial goals. Working to expand
relationships with federal, state and parish govern-
ments to ensure funding and cooperation, are vital to
my vision for Covington.
I look forward to an enterprising initial term in
office, diligently serving my hometown. Please join
me for “Coffee with Mayor Cooper” at the Covington
Trailhead on Wednesday, July 27 at 9 a.m. Forming a
“partnership in progress” with each of you and speak-
ing candidly about our city will only strengthen our
“pack.” I sincerely appreciate your support and enthu-
siasm as Covington embraces the future.

Flag Raising Ceremony—An Event Not to be MissedOUR SECOND annual Citywide Yard Sale in June, was
a success of gigantic proportion. Well planned and
executed by chairperson, Brenda Ernst and her hard
working committee, over 60 addresses were posted on
a map provided to shoppers, who bought up bargains
from 8 a.m.–3 p.m. Free water stations kept shoppers
hydrated during the hot day. People from far and near
also lunched in our restaurants, filled our shops to the
brim, and then hit the yard sales again until every-
thing was sold. Habitat for Humanity kindly took away
any leftovers.
Our Summer Brown Bag Series was also a huge
success. Guest speakers Janna Mashburn and Elsbet
Smith spoke from a leadership perspective about the
abundance of business and community resources
available to our parish. Held at the Rotary Hut, each
guest was treated to a bag lunch and drink.
We hope you will join us at 8 a.m. on Monday, July
4 for the annual flag raising ceremony at the flag pole
near the alligator cage. In a tradition started in 1985
under Ronnie Perrin’s direction, the “Minutemen,”
maintain sole responsibility to keep the flag flying
and gather for a formal raising of our 30 by 50 foot
American flag. It’s an event too spectacular to miss.
Immediately afterward, Mayor Zabbia will orchestrate
the burial of the time capsule, filled with pertinent
items collected from our citizens and officials. This

ONE OF THE MOST beautiful and exotic plants
is the orchid. Not only are they extraordinary,
but they are diverse. The orchid is so highly
developed that it can adapt to almost any
environment. They exist at sea level, across
deserts and marshes, and are even found upon
high mountain ridges. This is a plant that
even a novice can grow and enjoy. About five
hundred years ago, orchids were unknown in
the western world. The British brought them to
the new world and named them Epidendrum
(meaning upon a tree). During the Victorian
era, these beautiful, exotic plants became a
status symbol and quickly graced the estates
of the very wealthy.
Today, the orchid is easily obtained and
easily sustained. The graceful blooms last
longer than those of any other plant. The
leaves are not plentiful but neither are
their demands. It loves to grow in a simple
osmunda fiber surrounded by chopped bark.
Orchids also enjoy low light and a good
misting. This adaptable plant reproduces
through the help of insects. The purpose
of the beautiful blooms is to attract moths,
bees, flies and other flying insects—even
Experiencing the Exotic
though we like to think the showy blooms
are strictly for our enjoyment. Orchid roots
will hang over the side of its pot and crawl
above and under its bark foundation.
Outside, an orchid should be placed under
trees or in very shady areas. Natural misting
will occur each day from the orchid’s tree
companions as photosynthesis occurs.
Orchids love the humidity we have here.
Water the base once a week, but mist often
whether inside or out. This plant does not
need to be near a window. A simple contai-
ner filled with rocks and then the special
orchid loam and bark works well inside or
out. Change the soil and repot every year,
otherwise just water sparingly and keep the
plant out of drafts and away from fumes.
When the blooms die, you may trim the stalk
halfway back or remove it completely. It will
take a little time for the orchid to go back into
its bloom mode. During that period, give the
plant a little more light and some fertilizer
and wait patiently for its next burst of glory.
Living with an orchid is like traveling to an
exotic place and being in the company of a
true wonder of Nature. Get one today!
