withpapertowelsandspreadtheeggplantonasinglelayerevenlyoverthepapertowels.Microwaveuntildryandslightlyshriveled(8-10minutesdependingonmicrowave),tossonceduringthecookingprocess.

3. Heat2Tablespoonsofoilinadutchoven(orotherlarge,deeppot)overmediumhighheatuntilitstartstoshimmerandaddeggplantandonioncookinguntiltheyaresemi-translucent(about2minutes).Pushtheseveggietothesidesofthepotandadd1Tablespoonofoilandthetomatopaste.Cookforanother2minutes.

4. Add2Cupsofwater,tomatoesandtheirjuice,stirringfrequentlyandscrapingthebrownedbitsoffthebottomofthepan.Reducetheheattomedium-lowandgentlysimmeruntiltheeggplantistotallybrokendown(20-25minutes).

5.
