Dr. Jay Kalous } PNW Wheat Breeder
Jay earned his doctorate in Genetics and Plant Breeding from Montana State University, where he worked in both spring barley and spring wheat breeding programs. Jay’s experience has focused on plant genetics, genomic selection, field breeding and wheat and barley quality.
Jeron Chatelain } Research Associate
Jeron assists with all aspects of the PNW breeding program. He grew up on a dryland wheat farm, has a master’s degree from Washington State University and has worked with the Oregon State University and USDA-ARS breeding programs.
Craig Bohan } Research Assistant
Craig assists in all aspects of the PNW breeding program. He graduated from Oregon State University with a degree in Horticulture. Prior to joining LCS, Craig worked for the U.S. Forest Service and assisted Dr. Jim Myers in the vegetable breeding program at OSU.
Dr. Mike Flowers } Product Development Manager
Mike manages U.S. seed stock production and the LCS trait platform. He holds a doctorate in Crop Science from North Carolina State University. Prior to joining LCS, he worked as an associate professor and extension cereal specialist for Oregon State University.
Dr. Jim Peterson } Vice President for Research
Jim oversees all U.S. breeding operations. Prior to joining LCS, he led public sector wheat research, including time as a professor of Wheat Breeding and Genetics at Oregon State University and Chair of the National Wheat Improvement Committee.

released by the University of Idaho. The top-end yield potential of UI

Calculating wheat qualityThe LCS Quality Laboratory utilizes a comprehensive set of data, compiled
over multiple years, to determine the end-use quality of wheat varieties we
release. The quality tests described on the next page are performed in our
lab to determine the scores assigned by our Quality Manager. Overall end-
use quality is classified in our technical literature in one of four categories:
Most Desirable, Desirable, Acceptable, Less Desirable.
Most Desirable. Varieties typically have a superior combination of milling,
baking and dough properties — with excellent intrinsic (kernel) properties,
including high test weight and appropriate levels of protein; elite varieties.
Desirable. Milling, baking and dough properties of these varieties range
from good to very good. While not considered elite, these varieties have
strong intrinsic qualities and are in high demand from end users.
Acceptable. Milling, baking and dough properties of these varieties range
from acceptable to good. One or more quality parameters may have minor
flaws. Overall, these varieties are acceptable to end users.
Less Desirable. Varieties in this category exhibit one or more key quality
parameters that are less than adequate for current end user standards.
A single critical flaw can also warrant a rating at this level.
Hayley Butler } Quality Manager
Hayley evaluates milling and baking quality for LCS. She has served as the chair for the AACC PNW section, is active in all U.S. wheat quality councils and is on multiple wheat quality improvement teams in the United States and Canada. She is passionate about science.

These characteristics are weighted and combined into a single score: baking quality (30%), dough properties (20%), milling quality (40%), test weight (5%) and flour protein (5%).
Baking qualityLoaf volume and cookie diameter are key attributes in measuring baking quality. Dough is related to baking in the same way yield is related to profit. Measuring dough rheology, or the strength of dough when water and energy are added, is accomplished using several industry-approved methods: mixograph, farinograph, extensograph or alveograph.
Milling qualityAll wheat varieties yield di�erent quantities of flour. Higher flour yields equate directly to increased profitability for commercial milling companies. The LCS Quality Lab is able to determine protein loss from grain to flour, which helps millers meet the flour protein specifications of their customers.
Flour proteinWheat and flour purchasers apply discounts when protein specifications are not met. Water absorption and gluten strength a�ect the production costs of end users, and both are related to the percentage of protein content. Common methods for testing protein are near-infrared reflectance (NIR) and combustion nitrogen analysis (CNA).

scores. Quality data are obtained from the LCS Quality Laboratory. The
results presented in this guide may not be an indicator of results you may
obtain in your individual location, as local growing conditions — including
soil type and weather — may vary. All growers are advised to evaluate data
from multiple locations and years whenever possible.
