Mochi Mugi Barley Greek Salad• 1c Mochi Mugi Barley• 2c Chopped tomatoes (red and yellow cherry).• 1/2c Pitted olives, chopped• 3tsp Chopped mint• 1 Green bell pepper• 1 shallot minced• 3tsp fresh lemon juice• 2tsp extra virgin olive oil• 1/2c Feta cheese or fried tofu• Black cracked pepper to taste
Combine the barley, 3 cups water in a medium-size sauce-pan. Pour Mochi Mugi barley into boiling water, reducing heat to medium and simmer until the barley is tender- about 15 minutes. Rinse. Drain in a colander.
Combine the tomatoes, feta, olives, mint, bell pepper and shallots in a bowl. Add the cooled barley.
Whisk together the fresh lemon juice and olive oil in a separate small bowl. Season with salt and pepper. Dress the salad and toss. Cover with plastic wrap and place in the refrigerator until ready to serve.
TIP: Prepare 3hrs in advance to let flavors mingle.
