The Best Bunny Chow in Durban, South Africa
The sloppy, savory, eat-it-with-your-hands Indian curry dish is a must in this seaside city.
BUNNY CHOW ISN’T for rabbits, and it isn’t made from them either. It’s a popular South African food, a messy (but tasty) serving of Indian curry barely contained in a hollowed-out loaf ofwhite bread.
The dish is a staple at lunch counters in Cape Town and Johannesburg. But in Durban, the seaside epicenter of South Africa’s ethnic Indian community, it’s an essential.
Situated on the country’s eastern coast, about 350 miles from Johannesburg, Durban is Africa’s busiest port, a melting pot that was shaped by British explorers, Zulu chiefs and Indian mer-chants. Today it’s a favorite destination for South Africans of all stripes; during the long subtropical summer they come to sunbathe, swim and surf at the beaches that extend a hundred miles out from the city’s busy core.
Long a workman’s meal, bunny chow has become a popular portable snack for the families and partyers who flock to the warm Indian Ocean shores. Devotees love the price as much as the taste. The standard quarter-loaf overflowing with vegetarian curry can go for as little as 10 rand, or about $1. Made with chicken or mutton, it costs about $3.50. Same for “trotters” or sheep hoofs. A half-loaf, more than enough food for two, goes for about twice as much.
To eat a bunny, you break off hunks of the bread-loaf hull to sop up the curry within. Aficionados debate the merits of succulent mutton versus the vegetarian original, often made with “sugar beans,” a local variety of kidney bean.“It’s a complete meal that you can hold in your hand,” said Deena Naidoo, who last year won the first South African edition of the cook-off television show “MasterChef.” Mr. Naidoo is a Durban native who grew up on his mother’s home-cooked Indian staples. He plans to serve a gourmet bunny, with finer bread and subtler curries than those normally found in the street-food version, at Aarya, his
Johannesburg restaurant.
The best bunnies, he said, contain more meat than potatoes and employ bread that is soft and fresh enough to let the sauce soak deep into the bottom crust. The spice mix—which typically includes cumin, turmeric, fennel and cardamom—should be complex but not so fiery that it sends you reeling. “I don’t want to have to have an ice cream afterward,” Mr. Naidoo said.
During a tour of Durban’s busiest bunny counters and essential spice shops on a muggy afternoon, he acknowledged that bunny chow’s soul resides far from the world of white tablecloths or prix fixe menus. “You can’t scream about crumbs on the table—it’s all part of the experience,” he said.Indeed, whether you’re ordering a bunny to-go wrapped in butcher’s paper or wolfing it down on the countertop of a divey fast-food joint, there appears to be just one rule for eating a bunny properly: no cutlery.“You’ve got to eat it with your hands,” said Ingram Govender, who hosts busloads of tourists at his bunny chow and curry restaurant in Durban’s industrial Umbilo district. “That’s what all that bread is for.”
Like Mr. Govender, most Indian South Africans trace their roots in Durban to the late 19th century, when their forebears arrived as indentured servants to labor on sugar-cane plantations and railroads in what was then Britain’s Colony of Natal. (An attorney named Mohandas Karamchand Gandhi came to work in a law firm, and spent 21 years in South Africa agitating for Indians’ rights.) South Africans took to calling early Indian immigrants Banias, borrowing a term for the merchant class from India’s caste system, said Rajend Mesthrie, a linguistics professor at the University of Cape Town and author of “A Dictionary of South African Indian English.” That eventually became “bunnies,” and the curry they served in loaves of white bread became bunny chow.
The first purveyors were clustered around Grey Street (now Dr Yusuf Dadoo Street), a stretch of tidy restaurants and clothing shops just west of Durban’s beachfront business district. Many of the original eateries have decamped for the suburbs, leaving only a few amid the street’s sidewalk vegetable vendors and minibus taxi traffic. Still nothing speaks to the city’s identity like a finger-staining bunny chow.
“If you don’t go to Table Mountain, you haven’t been to Cape Town,” said Nelson Nundoo, whose family has operated Oriental, a local Indian restaurant, for three decades. “If you don’t eat a bunny, you haven’t been to Durban.”
VICTORY LOUNGEFor decades, the Moodley family presided over a second-floor dining room allegedly frequented by Durban’s gangsters and racketeers. Traffic at the restaurant slowed as the neighborhood changed, said Kanagee Moodley, who runs the 67-year-old business with her husband, Billy. Four years ago, they rented the room to an Ethiopian dry-goods merchant. Today Victory is a takeaway counter and a few plastic stools under the stairs that once led to the restaurant. Mr. Moodley remains behind the counter, serving piping hot bunnies of braised mutton (above) as well as South Indian pastries that they ship to stores and special events across the country. Succulent chunks of lamb on the bone,
light gravy and the subtle heat of Victory’s bunny make it one of Durban’s best.
ORIENTALThis traditional Indian restaurant sprawls across two levels of a former railroad-engine repair depot (now a shopping center) at the edge of Durban’s city center. Aficionados swear by the mutton bunny (far right), with its overflow of rich, mild gravy. Oriental is as close as bunny chow’s stalwart eateries come to fine dining, with a dimly lighted sit-down restaurant in a converted pub in addition to the original food-court counter (shown here). The mutton is tender and the gravy is satisfying, but what really sets Oriental apart is what comes at the end of the meal: a finger bowl of warm water and lemon slices, to clean your curry-drenched hands.
PATEL’S VEGETARIANREFRESHMENT ROOMThe Patels opened their lunch counter on Grey Street more than 80 years ago, and theirs is one of two restaurants often credited with perfecting the form. Manilal Patel, 70, still tends the spot founded by his father, whose portrait, decked with a flower garland, hangs behind the counter. Mr. Patel and his staff arrive at the spare shop, wedged between an electronics and a handbag store, each day at 4 a.m., to cook enough curry to make 500 bunnies. Customers come from as far as Johannesburg to scarf down a quarter loaf brimming with the signature medley of red bean, sugar bean, mixed vegetable and lentil curries (left).
ASIAN
GOUNDEN’S RESTAURANT & TAKEAWAYSouth African Indians often say a century out of India has tempered the kick in their sub-continental cuisine, but you wouldn’t know it from the bunny chow at Gounden’s. Devan Gounden recently moved his shop from a space next to a sheet-metal fabricator in Umbilo, a blue-collar industrial district, to a lounge with yellow walls and halogen lighting on a busier corner two blocks away. The austere décor hasn’t deterred legions of devotees. The mutton bunny (pictured below), is a fiery jolt of tender meat and thick gravy. Even the achaar, a blend of diced carrots and onions in vinegar that is tastier than the competition’s, is packed with fresh green chilies.
CAPSICUMIn the shadow of a highway overpass stands the Britannia Hotel, built in the late 1800s by a liquor company. Today the 27-room hotel shares the colonial-style building with a gritty sports-betting bar and Capsicum, a top draw for office lunches and no-frills family dinners. The most popular bunny here is the mutton, but the consistent crowds may have pushed Britannia’s chefs back on their laurels—on a recent evening the meat was tough and chewy. Fortunately, the broad menu of South Africanized Indian favorites like butter chicken and crab curry also includes a selection of “exoticbunnies” concocted by proprietor LinkeyMoodley’s mother more than 30 years ago. The best are the prawn chutney and chops chutney bunnies, heaps of freshly caught shrimp (above) or tender on-the-bone lamb chops marinated in mild tomato curry.

Founded in 1849, Africa’s oldest surviving botani-cal gardens houses one of the world’s top collec-tions of “living fossil” plants. These pre-dinosaur cycads (seed-producing plants extending back 250 million years) face possible extinction in the wild. The Wood’s Cycad species is named for founding Durban Botanic Gardens curator and botanist John Medley Wood, who, in 1895, discovered a single, surviving cycad plant in a Zululand forest. Walking through the Gardens’s cycad forest is a bit like stepping onto the set of Jurassic Park. No dinosaurs here, but the pink-backed pelicans sitting in the trees do look eerily like pterodactyls.

A walk around mini town will give you an opportunity to view excellent models of some of Durban’s most interesting buildings. UMGENI RIVER BIRD PARK
Designed and built by Dr. Alan Abrey in an old quarry site, the Umgeni River Bird Park was opened in April 1984. The park was owned private-ly by a group of bird lovers who wanted to educate others about birds from around the world. It was run by Alan Abrey until his retirement in 1997, and in those years the artwork for the park (guidebook illustrations, park maps, and so forth) were done by his daughter Robyn Abrey.
Set in a land filled and landscaped former quarry, the park includes several natural waterfalls. Paths for visitors wind through three aviaries and past other aviaries and open exhibits. A viewing window in the nursery lets visitors see how the birds are hatched and raised.
Construction of the Free Flight Bird Show arena was started in 1995, with the venue staging its first show in 1996.
The Free Flight Bird Show, opened in 1996, fea-tures birds from North and South America, Africa,
Indonesia, and Australia, and emphasizes conserva-tion. Birds in the show includes a owls, cranes, hornbills, macaws, kookaburras, toucans, vultures, in an open air auditorium. The show is staged twice daily, weather permitting.
The park breeds 17 of the 24 threatened bird spe-cies in its collection. The park is involves with the South Africa Crane Working Group in breeding and then releasing the Wattled Crane. The birds are hand-reared using a glove puppet, and are then released near Dullstroom. Wattled cranes are listed as Vulnerable by the IUCN Red List, and there are only about 8000 in the wild.

MITCHELL PARK ZOO
Every day of the year could feel like a holiday, especially if you make your way to Mitchell Park. Named after Sir Charles Bullen Hugh Mitchell, the park was established in the early half of the previews century as an ostrich farm. That venture did not go as well as planned, so it was transformed
into a zoo instead. Back then, a large variety of animals, including lions, leopards, crocodiles and many varieties of bird, occupied a large part of the zoo. The remainder consisted of beautifully landscaped gardens. One of the most memorable animals at the zoo at the time was Nellie, an Indian elephant.
Today Mitchell Park has a whole host of small animals and birds for you to visit, including crocodiles, buck, raccoons, cranes, flamingoes, wallabies, monkeys and tortoises. There is a walk-through aviary that allows you to get close-up views of many beautiful bird varieties.
A sand-filled playground allows small children to enjoy playing on jungle gyms, swings, slides and other equipment. Paraplegic facilities make sure that even physically challenged visitors have a great time. While you play, mom can relax and enjoy tea or a meal at the Blue Zoo tea garden,
nestled among trees and attractive flowerbeds. Carefully tended lawns are perfect for family pic-nics, and even skottle braais are allowed. Mitchell Park’s staff members take an interest in educating children on the animal and plant worlds. They teach visitors how to preserve our natural wonders so that future generations may also enjoy them.
ON THE WATER
A cruise to the harbour of Durban, the largest har-bour in Africa, combined with a deep sea cruise is a great way to get a unique perspective to your visit in Durban. With knowledgeable and experienced guides you are sure to learn something new and discover facts and secretes only mariners can share.
Isle of Capri Cruises (084 206 4585) and Sarie Marais Cruises (031 305 4022, www.sariemarais-cruises.co.za) embark fromWhilson’s Wharf and offers both Harbour and Ocean cruises.

Durban’s CBD in partnership with Metro Police, South African Police (SAP) and Tourist Protection Unit, have made a considerable effort to safeguard tourists against crime. Surveillance cameras and improved lighting have been installed on the beachfront, and security guards watch over most shopping centres and large businesses. Nonetheless, visitors to our city should take the sensible precau-tions they would in any major city. Avoid carrying large sums of money,

Advertorial revised : when on holiday
1923-2013
Powering your world Issued by Eskom Integrated Demand Management September 2013
Eskom Holdings SOC Limited Reg No 2002/015527/06
Less air-conditioning... more airYou’ve worked hard all year long; the time has arrived to unwind, switch off, recharge, and give your electricity usage a break too when you check into your favourite hotel or lodge or B&B.
Help keep South Africa powered up this holiday season by doing the following in your room: l Switch off electrical appliances such as televisions, cell phone
chargers and laptops when you are not using it.l Switch off appliances in standby mode – ‘standby’ uses almost 50%
of the energy an electrical appliance would normally use.l Switch off all lights when you leave your room.l Switch off the air-conditioner when you don’t need it; open
windows to allow cool air coming in from the outside - if it’s necessary to switch on the air-conditioner, a temperature setting of 23° is sufficient.
l Shower instead of taking a bath; it uses less hot water.
l If you need hot water plug the basin; don’t leave the hot taps running.
l Don’t open the bar fridge unnecessarily or leave the door open too long; if you do, warm air flows in and causes the fridge to use more electricity to maintain the correct temperature.
l Only fill the kettle with as much water as you need for your morning cup of tea or coffee.
For more energy saving tips this summer visit www.eskom.co.za/idm
Less is more... the less electricity you use the more energy efficient your holiday will be.
