Coconut Curry Chicken withIndian Style Basmati RiceZucchini FrittersCarrot Gingerbread MuffinsAlmond Brownies

Dairy Free & Gluten Free

Coconut Curry Chicken3-4 Chicken breast (boneless skinless)

1 Onion, Diced

¾ C. Celery, Diced

1 Red bell pepper, Diced

1 T. Garlic, minced

3 T. Fresh Ginger, minced

1 T. Curry powder

1 T. Garam Masala

3 T. Thai red curry paste

2 Cans Coconut milk 15 oz.

1 lime juiced, Fresh Cilantro or Basil to Garnish

Salt & Pepper to Taste

Cut the Chicken in to bite size cubes , season with 1 t. of curry,1 t. Garam Masala, 1 t. Red curry past, ½ t. salt and 3 T. Coconut oil

Heat a skillet and add coconut oil, Brown the chicken careful not to overcrowd the pan. Remove and set aside.

In a large pan, brown the onions in the coconut oil, once the onions are tender, add the garlic and spices, bloom for a minute more.

Add the peppers, celery and ginger. Sauté for a few minutes , add about a cup of water so the vegetables can stew and get tender.

When the vegetables are tender stir in the coconut milk, add the lime juice and cilantro, season to taste with Salt and pepper.

Indian Style Basmati Rice

1 ½ C. Basmati rice2 T. Coconut oil or Ghee1 Onion small diced1 Cinnamon stick 2 inch piece2 Green Cardamom pods2 Whole Cloves2 Star Anise1 T. Whole Cumin seeds 1 t. Salt2 ½ C. Water

Zucchini

Zucchini Fritters Low Carb-Dairy Free

2 C. Zoodles (zucchini noodles)

2 Large Eggs

¾ C. Almond meal

2 T. Sesame seeds

¼ C. Sliced Almonds crushed

2 T. Parsley chopped

½ t. Mustard powder

½ t. salt

Coconut oil to fry

Make Zoodles, Lay out a kitchen towel covered in paper towels. Sprinkle the zucchini with salt and roll up in the towels allowing them to lose liquid about 20 minutes.

Mix together the Almond meal, mustard powder, sesame seeds, salt, parsley and crushed almonds. Set aside. In another bowl Whisk the eggs.

Take a small mound of the zucchini and dredge it in the eggs. Then place in the almond flour mixture coating well. In a skillet add the coconut oil and fry the fritters until done about 4-5 minutes.

Almond Brownies

Almond Brownie Dairy Free

2 C. Almond flour½ C. Almonds sliced or Pecans toasted (Optional)½ C. unsweetened Cacao powder2 t. Baking powder1 C. Coconut sugar½ t. Salt¼ C. Coconut oil melted2 Eggs½ C. Unsweetened Almond milk2 t. Vanilla extract pure1 C. Chocolate chips ( dairy free)

In a large mixing bowl, mix together the almond flour, cocoa powder, baking powder and saltIn a separate mixing bowl , whisk together the warmed coconut oil, coconut sugar, eggs, almond milk and vanilla extract.Pour the wet ingredients into the dry ingredients and stir to combine, adding ½ the chocolate chips to the batter.

Rub an 8 x 8 baking dish with coconut oil ,pour the batter in and top with chocolate chips. Bake at 350 for 30-40 minutes
