Dear Valued Customer,So it looks like another year is drawing to a close and a new
one is just about to begin. 2015 has been another great
year at Butcher at Home, largely thanks to you. With the support of our customers we have seen
major growth in our product offerings, as well as a
revamped website and improved services. There of
course is still more work to be done on our end and
we would like to take this time to say thanks again for
all of the support and guidance you have given to help
us become the organisation we are today.Now as we have entered the main gift giving time of
the year, we have loaded this round of specials up with
plenty of goodies to give as gifts. Check out the range
of Mad Millie products we now have in stock, as well
as our ever increasing range of Beerenberg products.
Sure some of these products don’t follow the
traditional flow of Butcher’s products, but who doesn’t
like a cold beverage with their steak in summer? Or
what about including jams or jellies with some of your
meat creations.While we are on the subject of food, we better also let
you know that the meals for this season have also not
been forgotten. Need products for the Christmas Roast,
check out the stuffing mixes, chicken loops and netting.

Method 1. Day 1 - Mix the water, salt, honey and pepper to make a brine.
2. Day 1 - Remove the chicken’s backbone and flatten (this will
enable to chicken to cook more quickly).3. Day 1 - Submerge the chicken into the brine and refrigerate
for 24 hours.4. Day 2 - Pre-heat your Hark gas smoker to MED (approx.
110°C).5. Day 2 - Drain the chicken and pour boiling water over the
skin.6. Day 2 - Pat the chicken dry and rub with oil.7. Day 2 - Place inside the smoker at 110°C for 2 hours or until
the internal breast temperature reaches 83°C (180°F).8. Day 2 - Rest the chicken for 10 minutes before serving.

MAKING CIDER WITH MAD MILLIE.What do I need to make cider? All you need is the Mad Millie cider starter kit, water from your tap and a kettle to boil water to make your first batch of 12 x 750ml fruit ciders.
Is it easy? It’s incredibly straightforward with no previous experience required (see our 5 minute youtube video for easy instruction).
How long does it take?The cider needs 1 week in the fermenter, and 2 weeks in the bottles to mature before drinking.
How long does the cider last? The cider is recommended to be consumed within 6 months, if stored in a cool dark place.
Can the sweetness be changed? Using only part of the sweetener sachet (or non at all), will give a drier cider
What happens when I have made my first batch? A “next batch” kit in varying flavours can be purchased to make your next batch of 12 x 750ml bottles of cider, using the equipment from you cider starter kit.
Is the cider Gluten Free?Yes, all our ciders are currently gluten free, but if we do bring out a cider that does contain gluten this will be carefully labelled on the allergen list on the back of the product. We highly recommend to refer to this to ensure you are not affected.
Can I make the cider non-alcoholic? No unfortunately this cannot be made non-alcoholic, our cider kit will produce alcohol.
MethodAsian Chicken Patties1. Put the mince, egg, breadcrumbs, lemongrass, coriander leaves, water, vegetable oil, sliced spring onions, salt and pepper in a bowl. Mix all the ingredients very well using your hands.2. To shape the patties, I used a 7.5 cm – 3 inch round cookie cutter. Make the patties about 2 cm – ¾ inch thick, press them well and keep them aside.
Sriracha Mayo1. Mix together the mayo, Sriracha sauce, lime juice and salt and keep aside.
To Assemble1. Cut open the buns and lightly toast them. Keep them aside.2. Sauté the chicken patties in a pan with vegetable oil and cook them until done. Remove the patties from the pan, cover them loosely with some aluminium foil to keep them warm.3. To assemble your sliders, spread a little Sriracha Mayo on the buns, then start your layers with some lettuce, the chicken pattie topped with Sriracha Mayo, the slice of tomato and the sliced red onion.4. Top with the other half of the bun and serve immediately.
Asian Chicken Patties• 500 gms – 1.1 lbs. chicken mince• 1 cup breadcrumbs• 1 egg• ¾ tbsp lemongrass paste• 2 tbsp coriander leaves, chopped• 1 tbsp water• ½ tbsp vegetable oil• 2 spring onions, thinly sliced• Salt & Pepper
Sriracha Mayo• ⅓ cup mayo• 1 tbsp Sriracha sauce• 1 tsp lime juice• 1 pinch of salt
To Assemble• Asian Chicken Patties• Sriracha Mayo• Buns• Tomatoes, sliced• Lettuce• Red onion slices• Vegetable oil to cook patties• Salt

Closure
Following a recent board meeting with the man in the red suit, the decision has been made that retail sales will need to come to a close on Monday December 21 in order to ensure his elves on their honda reindeers and his fleet of red and white sleighs can get your products to you in time for Christmas. We did ask if we should go a day or two longer, and he said Ho Ho Ho, No No No. This is because even if we sent orders express to the North Pole on Wednesday or Thursday, the likelihood of these hitting the workshop before the sleigh takes to the skies is pretty slim.
After this date we will close to all retail trade until Monday January 4. This is so we can all enjoy a break, try out our new Mad Millie Kits, Smokers, or what ever great gifts Santa brings us from Butcher at Home, and be ready to hit the ground running in the New Year.
So to ensure you receive your Order prior to Christmas, get your order in early. This is our busiest time of year, and as such we have a large movement of stock. Items that go on Back Order early in the month are more likely to make it out for Christmas delivery as opposed to those ordered on December 21.
