Volume 9, Issue 1, January 2017 A Message from our Co-President ~~~~~~~~~ ‘Tis the season for citrus, and this time of year I’m always looking for clever ways to use our backyard’s bounty. My husband doesn’t like to water anything he can’t eat, so much of our yard is landscaped in edibles, including many citrus and other fruit trees. So it seemed like January would be a great month for our resident expert, Jan Fetler, to enlighten us on the choosing, planting, and care of fruit trees. This is the time of year to protect citrus from frost. Our deciduous fruit trees are all skeletons now and I can see how much they need a proper pruning. “Pruning stimulates new growth, controls the tree size, and improves the size and quality of the fruit,” says the National Gardening Association. I think it makes the fruit easier to pick and makes the tree nicer looking, which is important when fruit trees are your choice for landscaping. This time of year citrus fruit is beginning to ripen. We’ve been picking limes and dutifully making margaritas to use them up. The Meyer lemons are ready to pick and lemon curd is fun to cook and makes a great gift. This recipe (see page 6) that I’ve been using it for years comes from the Cooking Light website. It’s lighter and much less rich than traditional lemon curd, and it tastes great on scones. Cranberry orange scones served with Meyer lemon curd might just be our first breakfast of the New Year! I hope to see you at our meeting on January 2nd! A Message from our Co-President ~~~~~~~~~

SoitseemedlikeJanuarywouldbeagreatmonthforourresidentexpert,JanFetler,toenlightenusonthechoosing,planting,andcareoffruittrees.

Lemon Curd Yield: 1 ½ cups

Ingredients• 3/4 cup sugar • 1 tablespoon grated lemon rind • 2 large eggs • 2/3 cup fresh lemon juice (about 3 large lemons) • 2 tablespoons butter or stick margarine

Preparation Combine the first 3 ingredients in a saucepan over medium heat, stirring with a silicone spatula. Cook until sugar dissolves and mixture is light in color (about 3 minutes). Stir in lemon juice and butter; cook for 5-10 minutes or until mixture thinly coats the back of a spoon, stirring constantly. Cool. Cover and chill (the mixture will thicken as it cools).

Note: Lemon Curd freezes nicely. If you over-heat the curd you might get a little bit of scrambled egg looking bits in it- just strain it and it will be lovely.
