Characteristics:A i i iA ripen red berries can convert a sour taste into a sweet taste. Forexample, lemons taste sweet, like oranges, after chewing the pulp ofthe red berries. Due to this unusual property, the berry has beenp p y, ycalled the “miracle fruit”. The active ingredient in the berry,miraculin, causes citric acid, ascorbic acid, and acetic acid, whichare normally sour to be perceived as sweet after being held in theare normally sour, to be perceived as sweet after being held in themouth. The African native has ate this berry before drinking palmwine and eating corn bread to give a sweetness to these foods.
