THE HISTORY OF ADEGA DO CANTOR

The Algarve, in the south of Portu-gal, has a terroir that projects its enigmatic characteristics onto the wine grown here.

Sir Cliff Richard has known and loved the region for over 40 years and despite having dominated the popular music charts for over 50 years, setting a new goal to produce a quality wine in an unknown region of Portugal was a brave move. Farming wine grapes in the Algarve is a far cry from the hustle and bustle of his iconic music career.

Sir Cliffs idea to plant a vineyard at his property Quinta do Moinho provided the genesis point for the Vida Nova range of wines. With the help of Nigel and Lesley Birch, owners of Quinta do Miradouro and Max and Michelle Birch, owners of Vale do Sobreiro, his idea came to fruition in 2003 with the production of our first wines at the Adega do Cantor our bespoke 200 tonne winery.

Our first range of wines was named “Vida Nova” – New Life; and signifies a new chapter in the life of Sir Cliff and a new life for the Algarve as a wine producing region.

Adega do Cantor, Lda is situated at Guia, a few kilometres northwest of Albufeira in the heart of the Algarve. Our vineyards cover 25,5 hectares of prime Algarvian terroir with the winery centrally located and nestled amongst undulating rows of vines overlooking the silvery Atlantic ocean.

Our philosophy is to produce wines to the highest possible standard using a combination of traditional and innovative modern winemaking techniques.

The wines of the Vida Nova and Onda Nova ranges aim to set a new level of excellence for wines created in the Algarve.

THE WINEMAKING TEAMAT ADEGA DO CANTOR

DAVID BAVERSTOCK Consultant Winemaker

Since Vida Nova's inception, the grape ripening, harvest, fermentation and wine maturation has been overseen by our consultant winemaker, David Baverstock.Renowned for the range of wines he produces at Herdade de Esporão in the Alentejo, David was Portuguese winemaker of the year in 1999, the first foreigner to win the award. His Esporão Touriga Naçional 2001 took the trophy for best Portuguese red wine at the London International Wine Challenge in 2002.

MAX BIRCH Winemaker/Resident Viticulturist

Max comes from a long line of farmers from the north of England but has been a resident of the Algarve all his life. He began his training academically in 2000 at Plumpton College (Brighton University) where he completed their Diploma in Viticulture and Oenology with Distinction. He oversaw the planting of 16 Ha of vineyards and project managed (with Castle Rock Logistics Pty. of Australia) the design and construction of the Adega do Cantor winery, cellars and cellar door. Max oversees all the day to day winemaking and has been responsible for growing the wine range to include over ten wines.

RUBEN PINTO Assistant Winemaker

Assistant Winemaker Ruben Pinto joined the Adega do Cantor in 2008. Originally from Bombarral, he successfully concluded his degree in Agronomy at the Instituto Superior de Agronomia, and held traineeships in Portugal and Brazil.

DAVID BOOTH Consultant Viticulturist

David trained in Viticulture at UC Davis, USA and worked with one of the world’s foremost vineyard consultants, Dr Richard Smart, celebrated Australian author of Sunlight into Wine. David champions the highest professional standards in viticulture to realize the quality and economic potential of every vineyard. His scientific approach reflects his ‘New World’ schooling; however philosophically he identifies most closely with other European micro-producers, discovering and respecting the natural capacity of the best vineyard sites to produce truly authentic wines that express grape variety, origin and climate.

QUINTAS / FARMS

QUINTA DO MIRADOUROEstablished in early 2001 along much the same lines as Quinta do Moinho. The vineyard consists of 3 Ha Syrah; 4 Ha Aragonês; 1 Ha of Alicante Bouschet, and 2 Ha of Viognier totalling 10 Ha under vine. Miradouro is also the first vineyard in the region to experiment with Dr. Richard Smart’s innovative seven wire Smart-Dyson trellis system which vertically divides the vine canopy making for a vastly increased total leaf surface area and improves the light conditions in the fruiting zone.

QUINTA VALE DO SOBREIROEstablished in February 2004 along the same lines as the above two vineyards, Sobreiro is the latest vineyard. It consists of 3.5 Ha of Syrah. For the first time the variety was clonally selected to produce the highest quality fruit from its environment. The remaining 2 Ha are planted with our first white variety, Verdelho, an indigenous Portuguese variety that is being vinified with great success in Australia.

QUINTA DO MOINHOSir Cliff Richard's vineyard was planted in 1997 and 1998 having had detailed studies carried out by the eminent Australian viticulturalist Dr. Richard Smart. The plantings consist of 3.5 Ha of Syrah or Shiraz, a native of the Rhône valley in France; 2.5 Ha of Aragonês, indigenous to the Iberian peninsula and known as Tempranillo in Spain; 1 Ha of Arinto and 1 Ha of Antão Vaz. Moinho was established using modern viticulturalprinciples including canopy management, a vertical shoot positioning training system and drip irrigation.

GUIA, ALGARVE

The Algarve has excellent conditions for producing fruit driven wines in a modern style. Cooling on-shore breezes moderate the heat of the southern sun while the poor limestone soils limit water, providing an ideal environment for maturing high quality wine grapes.

The winery is situated at the top of Quinta do Miradouro from which stunning views of the surrounding vineyards and coast line can be enjoyed.

Advice from our consultant viticulturalists, David Booth and Dr. Richard Smart, helped select the grape varieties, the rootstocks and vineyard management system, enabling Adega do Cantor to optimise the quality potential from each vineyard.

Most of our vineyard operations are done by hand. We manage the vineyards in a sustainable manner using only the mildest agricultural products in a programme designed to prevent the onset of any vineyard diseases rather than a more aggressive curative approach. At harvest we pick and process all our fruit gently by hand. This is fully consistent with our policy to produce only the highest quality wines.

The winery is combining new technol-ogy and traditional winemaking tech-niques, hence the use of open fer-menter and cap plunging which effec-tively copies the traditional winemaking techniques that can still be seen in the Douro and Dão further north. Further-more, a modern version of the tradi-tional basket press is used, and although much slower than more modern designs, it is still considered to be one of the gentlest ways to press grapes.

Adega do Cantor was the first winery outside of Australia to install Castle Rock Logistic's patented mechanical plunger which is consid-ered to be excellent for gentle extraction of fruit flavours without over-extraction of some of the more bitter elements of the grape.

The winery features a combination of static tank-style fermenters and open fermenters.

The design had to allow for gentle han-dling of the fruit, which gives the win-emaker more options in winemaking style. This is consistent with the gentle nature in which the fruit is picked and processed.

All fermenters and stor-age vats are made from food grade stainless steel and each of them has their temperature con-trolled by computer.Where possible gravity is used to move the grapes around the winery and this again allows the grapes to be treated with the utmost care.

The Adega do Cantor is a 200 tonne boutique winery built to a bespoke design in collaboration with Castle Rock Logistics, a company specialis-ing in winery design and project man-agement and based in Western Aus-tralia.

It took 18 months to design on computer and 10 months to build. The winery is modular in design in order to be easily expandable to its capacity of 300 tonnes.

Our cellars have a capacity of 150 bar-rels and will be used mainly for barrel and bottle maturing our Reserve wines. The barrel cellars are also tem-perature controlled.

Adega do Cantor is the biggest private commer-cial producer of wine in the Algarve region with a pro-duction of 150.000 to 200.000 bottles/year.

Vida Nova Tinto was the first Algarvian wine to be exported from Portugal.

Adega do Cantor was the first winery from the Algarve region to win a medal at the “International Wine Challenge” (IWC) in London – For Vida Nova Tinto 2004.

Adega to Cantor was the first winery from the Algarve region to win a silver medal at the International Wine and spirits Competition in London – For Vida Nova Tinto Reserva 2004.
