Y ogurt prod uctio n ts an exact ing science.Sometimes, it takes the rethinking of an entireline, rather than just replacing one machinewith another. Rather than develop a new unit for cheprocessing line, the engineers at T etra Pak's h eadquartersin Sweden have looked at the entire produ ction solutionand range of equipment needed to produce yogurt. Asa result. Tetra Pak is also able to provide a carbon foot-print for new installations, enabling dairies to control andimprove their environmentai performance.

Dan Bjorklund, manager fermented solutions. TetraPak dairy a nd beverage systems says, "W e can make theseclaims not just on the basis of our research and testingprogramme but also because of our practical experiencewith over 200 yogurt production lines.

"In order to achieve first class yogurt processing solu-tions you need to know the nature of yogurt. Our foodtechnologists work side by side with engineers andautomation specialists, as well as with dairy customers.By sharing details on yogu rt cultures and milk mic robio l-ogy, this helps dairies improve line layout and productquality."

A key element in the production is the Tetra ThermLacta processing unit, a platfo rm based unit for pasteuri-sation of a range of l iquid dairy products. This flexibleunit includes deaeration, separation, homogenisationand a holding cell of 300 seconds. The unit delivers theyogurt milk with an outgoing temperature of S'-iS^Cdepending on the yogurt product.
