Weekly Schedule
A typical week involves: Monday:
GLADIC or FCS 591B Class with Dr. Frank
Tuesday-Friday: Rotations (32 hrs/week)
Additional coursework throughout the week Planned Experiences (PEs), Thesis/Directed Project
GLADIC Greater Los Angeles Dietetic Internship Coalition
On some Mondays (typically ~8:00am-3:00pm)

Purpose: Provide participating dietetic interns with additional seminars on various
topics in the dietetics field Provide networking opportunities between fellow dietetic interns and
presenters

Rotation: School Nutrition ServicesDI: Christine Gilbert
Daily Schedule: I was fortunate to work with two other Interns during my rotation. Although each day was different, we normally went to a school in the district and conducted foodservice and meal observations.
Main Duties: Performed nutrient analysis on Nutrikids Developed menu ideas Standardized recipes Gave nutrition education lesson plans Performed taste tests.
Best part(s) about the rotation: Developing a chocolate zucchini muffin bread
recipe that ended up being implemented within the school district for breakfast!
We attended a school presentation promoting milk consumption. We were just as excited as the kids to see the cow!
Facility: Long Beach Unified School District
Rotation: Community/APLA DI: James Childers
Daily Schedule: 8-5pm T-Th.
Main Duties: Provide client education Work in the food pantry Counsel clients
Best part about the rotation: Counseling and exposure
to a diverse population
Facility: APLA (AIDS Project Los Angeles) Health
Rotation: FoodserviceDI: Yi Min Teo
Daily Schedule: Event menu planning, attending safety committee meetings, helping with lunch trayline/ cafeteria
Main Duties: Helping out with food preparation and serving Developing and updating food and
nutrition-related protocols Performing monthly and annual food
service audits
Best part(s) about the rotation: The people!!! Everyone in the kitchen is so warm,
welcoming and give great hugs! Being creative and making healthy food! Learning skills needed to manage a kitchen
and incorporating nutrition at the same time
Facility: Little Company of Mary Medical Center
Rotation: Head StartDI: Caitlin Peterson
Daily Schedule: My day typically started at 8am. After arriving at the OCHS main office, I would check in with my supervisory RD, Isabel Simard. Next, I would get ready to head over to various school sites, where I would meet with parents of HS children, counseling them on nutritional issues. This would be followed by delivering “food experiments” to some of the classrooms, where kids would get to learn about a new fruit or vegetable and taste it.

Best part(s) about the rotation: Interacting with the Head Start students
through nutrition lessons and activities
Facility: Orange County Head Start
Rotation: PediatricsDI: Audri Atencio
Daily Schedule: I was normally at the hospital from 8-4:40 pm. I would begin each day by attending rounds, and then I would spend the rest of my day assisting the RDN with patient-related work.
Main Duties: Attending rounds Assisting with initial assessments and follow-ups Giving patient education to parents and children.
Best part(s) about the rotation: Attending presentations and workshops Being exposed to a wider variety of conditions Working with the pediatric population Spending my self-select rotation here in addition
to my pediatric rotation helped to solidify that pediatrics is where I want to work in the future!

Rotation: BurnsDI: Linh Le
Daily Schedule: 9am-5pm
Main Duties: Shadow RD Conduct patient

Best part(s) about the rotation: Very unique population This facility is a specialized
burn center with many resources
Facility: UCI Medical Center
Rotation: Head StartDI: Joey Medestomas
Daily Schedule: Attend variousintra/interdepartmental meetings with Supervisory RD, Conduct site visits, Menu planning, Complete Planned Experiences
Main Duties: Work closely with SRD to gain a better
understanding of their role in Head Start Increase knowledge of CACFP guidelines Gain experience providing nutrition
services to the community served with consideration to cultural preferences or special diets
Best part(s) about the rotation: Safety and Sanitation Checks at different
Head Start locations Watching the kids enjoy their meals!
Facility: Long Beach Head Start
Rotation: Nutrition Therapy DI: Kelsey Kinnier
Daily Schedule: Arrived at UCIMC at 8:30-9:00 am and reviewed the days patients with the RD. With RD supervision and independently, I would see patients for an initial or follow-up nutrition assessment, proving appropriate nutrition education as needed. The RD would review my work each day and provide me with feedback. I would attend any meetings or luncheons with the clinical staff.
Main Duties:
Assist clinical nutrition team with patient list daily
Conduct initial and follow-up nutrition assessments
Provide nutrition education for various conditions
Staff relief for 1-week (working independently)
Attend meetings with clinical staff
Best part(s) about the rotation: Getting to learn from each RD, and then apply what I learned with supervision and during staff relief. I really enjoyed getting to work independently with patients, conducting interviews and assessments. I enjoyed working on my case study as well. I feel that I learned so much from this rotation and grew professionally.

Rotation: Nutrition EducationDI: Megan La Rose
Daily Schedule: 8:30-5:00
Main Duties: Create lesson plans with food
samples and handouts Present educational materials
to children, parents, employees Visit school sites to observe
meal times, food safety practices, and talk to students
Develop recipes for new menu items
Best part(s) about the rotation: Watch students taste new
products!

Rotation: OutpatientDI: Stephanie Detoya
Daily Schedule: 8:30 a.m. -4:00 p.m.
Main Duties: Observe & assist in counseling sessions Educate clients & practice MI techniques r/t:
Weight management Physical activity Pre- diabetes & diabetes management Nutrition-related chronic health diseases
Create diabetic meal plans Monitor labs, medications, glucose testing
Best part(s) about the rotation: Best part about the rotation was working with two
amazing dietitians, Jacqui and Kathleen, who are truly passionate about their job and make a difference in their clients’ lives. They are great nutrition educators to learn from.
PIH provides a lot of resources to use in preparation for the RD exam.
Facility: Presbyterian Intercommunity Hospital - Whittier
Rotation: Community/WIC DI: Nicole Alai
Daily Schedule: 8:30am – 5:30pm (Two 15-min. breaks and One 1 hour lunch)
Main Duties: Counsel clients on breastfeeding, age
appropriate foods, pick eaters, recipes and serving sizes
Perform anthropometric measurements
Assist the lactation specialist with co-teaching lactation classes
Participate in team meetings
Best part(s) about the rotation: Clients really appreciate and are eager to
implement the nutrition advice.
Following up on a client and seeing that they applied the nutrition advice given to them from the previous session.
Learning different counseling techniques from the WNA’s and RD’s
Improve my Spanish speaking skills
Facility: Long Beach WIC
Rotation: Disordered Eating DI: Francis Dizon
Daily Schedule: varies, 8 hours total. Usually 9am-4:30pm
Main Duties: Observe Ds presenting bariatric class Provide discharge education to bariatric
patients Perorm chart reviews Discuss bariatric surgery with interdisciplinary
team Provide in-services on Glucerna
supplementation Observe bariatric surgeries
Best part(s) about the rotation: Lots of autonomy Watching bariatric surgeries Working with another CSULB DI, Audri Atencio
