During the fly-fishing season, which lasts from April through September, Iceland boasts some of Europe’s finest salmon rivers. The Fljótaá is one of them - and its headwaters are at Deplar Farm. CASTING A LINE FURTHER AFIELD

Dedicated fishermen and women may like to take their fishing one step further. The pristine rivers of southern Iceland are clear enough to see the salmon, giving a rare opportunity to learn through watching the behaviour of the fish.

Laxa I Kjos, accessible by road or helicopter from Reykjavik, is the centrepiece of one of the most scenic, glacially forged valleys in southern Iceland and enjoys a prolific salmon run. In summer, extended light means more time fishing - you can be on the river until 10pm to land salmon in one of the many amazing pools.

The attractive wooden lodge at Laxa I Kjos is comfortable with excellent food and is situated on the river looking towards the legendary Laxfoss.

The East Ranga, also in the south of Iceland, is one of the country’s most acclaimed rivers. You might visualise a country of impressive topography, where rugged mountains meet the silky sand dunes of the desert and date palm oases give flashes of green in an otherwise arid landscape. To hook an elusive Indo-Pacific Permit, you will need to hike to remote deserted beaches, potentially running their length in pursuit of your quarry which is often found tailing in the shallows. Africa is truly awe-inspiring. I am lucky that I’ve had the opportunity to spend so much time in a land that constantly overwhelms.

Some of my most memorable experiences have happened on African soil or water – such as living with the noble and inspiring Maasai people or diving through the wake of a whale shark as it gracefully navigates the Indian Ocean.

My wife, Katie, grew up in Africa so we knew travelling this immense continent would become a part of our life. However, I was harbouring a secret desire to fulfil another dream ambition in Africa: to catch a tigerfish. I’ve been a fisherman since I was six years old and longed for the chance to land one of the world’s premier game fish.

We booked to stay at the romantic Sausage Tree Lodge in Zambia, where each room has its own deck and private plunge pool, deep in the heart of the Lower Zambezi National Park. I happened to know the lodge opened out onto the filtered pools of the Lower Zambezi River, famed for its ferocious tigerfish. But between game drives and romantic sundowners, would I have the chance to hook and battle with this powerful predator?

The Zambezi is a beautiful river that snakes its way through scenes reminiscent of the Lion King.

Sand banks provide perfect casting lawns in the centre of the river.

A number of fishing methods can be used – either live or dead bait to spinning; and for purists, large salmon-esque flies. Tigerfish are not delicate feeders and their fearsome teeth will often smash the fly a couple of times before running with the line. Once hooked they frequently jump and will use their teeth and submerged rocks and roots to dislodge the fly. Tigerfish

fight as hard as their name suggests and most hook-ups do not result in success.

Be prepared for a battle! Despite this, Katie managed to land a strong 20 pounder on our first outing, certainly cause for celebration.

In between the excitement of Katie’s victory and my dogged determination to catch a decent sized one on the fly, we spent several hours on and beside the Lower Zambezi. We were joined by a plethora of aquatic birds

such as fish eagles and kingfishers, the occasional crocodile and heard pods of hippo grunt and chortle from afar.

The more time we spent here, the more we began to acknowledge the different personalities of the Lower Zambezi. It is the life blood that flows through this valley and supports the incredible wildlife which makes this such a rewarding safari destination. There are few places in Africa which can offer both top level safari and first-rate fishing in one trip.

THE LOWER ZAMBEZI IS ARGUABLY THE MOST PICTURESQUE STRETCH OF THE RIVER AND IS BORDERED BY MANA POOLS AND THE ZAMBEZI NATIONAL PARK.

From the shoreline the forested slopes of the Zambian escarpment rise into the hills where monkeys leap through the verdant greenery and sounds of exotic birds carry across the water. The Lower Zambezi is rightly famous for its herds of elephant which congregate to drink from the river.

Large numbers of buffalo emerge from the trees and predators are never far away.

Having the tigerfish literally on your doorstep only enhances your African safari experience.

Tigerfish are not fussy about time, so this gave us time to head out on game drives at dawn and enjoy a safari together in the African bush. We watched as lions shook out dusty manes and yawned in the slivers of dawn light while elephant trumpeted to each other as they crossed the plains.

After a morning game drive and a long lazy lunch in the dappled shade of the fig trees, we took to the river. At Sausage Tree, the river is wider and naturally shallower than further upstream making it ideal topography for fishing.

On bush walks we appreciated the big and little details - a column of driver ants or tracking a leopard’s paw prints to the tree where he languished.

After a tough week tussling with the Indian Ocean’s feistiest fish, perhaps

Early risers can experience their first activity of the day as sunlight begins to warm the scented pine trees. Guests are encouraged to grab a rod and stroll down to the gently-sloped pebble beach for fly-fishing. Mornings at Paws Up are a wonderful time of day to enjoy the crystal-clear waters of the river.

Breakfast is served at the camp in the open-sided dining pavilion, accompanied by the gentle warble of the river, where you can expect a twist on all-American favourites such as Huckleberry pancakes, crispy maple-cured bacon and freshly baked bread. Then you’re ready to take on big-sky country.

New Zealand offers some of the finest large trout fishing to be found anywhere in the world and these fabled rainbows and browns are totally wild. Casting and presentation of the fly are therefore of extreme importance. So too are perseverance, patience and the ability to observe and analyse. In some rivers there is a trout every 10 or 20 metres, in others it can be exceptionally difficult, but given a skilled guide, it can be a little easier. Here you will release trout larger than you have ever caught before, hook and lose larger and spook many more, possibly bigger still.

Spring in the southern hemisphere is prime fishing time and whether you choose to fish in the magnificent Lake Taupo area in central North Island, or the rivers and streams which rise in the Southern Alps, the scenery and fishing on crystal clear pools and unspoilt runs is a paradise.

HIKING

New Zealand’s best-known Great Walk covers 54km over four days and will take you through the spectacular Fiordland’s World Heritage Area where you’ll pass through ancient rainforests which open out onto glacier-carved valleys where huge waterfalls tumble.

Head to the coast to explore the Abel Tasman trail, which weaves around wooded granite headlands, arcs of golden beaches and hidden coves. Birdsong will accompany you and you may spot seals, little blue penguins and dolphins.

The Tongariro Alpine Crossing often described as the “best one day walk in the world” allows hikers to step into Middle Earth - an alien landscape of otherworldly lava sculptures, volcanic cones and active geothermal areas that border emerald blue crater lakes. This UNESCO World Heritage Area was the location for scenes in The Lord of the Rings film trilogy.

NATURAL WONDERS AND WILDLIFE

Take a helicopter to land on the active volcano Whakaari or ‘White Island’, walk its moonlike crater and stare in to the hazy depths of one of the most acidic, active volcanic craters on the planet.

Whale-watch in Kaikoura.
