M.A.D. GreensEMERALD

M.A.D. Greens specialises in healthy, flavoursome, Micro Activated Dynamic baby and leafy greens which are supplied fresh to the community.

17-year-old founder Digby Dunbar pitched his winning concept of growing micro greens at HACKCQ in 2018, and has progressively developed the business with this family while balancing his final year of secondary school studies. The combination of our unique land and cattle herd, built up over almost 200 years, plus the experience of our people creates the heart of AACo. It’s magical and something no one else can do.

Australian Agricultural Company (AACo)

COMET

The Australian Agricultural Company is in many ways the quintessential Australian story – a cattle company founded in 1824 that has grown to become Australia’s largest integrated beef and cattle producer. It is the oldest continuously operating company in Australia. AACo manages around half a million head of cattle at its stations, feedlots and farming operations, which are spread across pristine outback in Queensland and the Northern Territory.

Central Highlands is a strategic location for the AACo supply chain, in breeding and growing, background and finishing cattle; and for growing grains and

fodder crops to support cattle production.

AACo now has one of the largest Wagyu herds in the world. Our cattle are born wild, free to roam and raised on huge tracts of native Mitchell grass, then finished at the Goonoo Feedlot, Comet on propriety grain blends that include wheat, sorghum and molasses. AACo beef is served at some of the world’s finest restaurants. Rich marbling throughout the cut, delivers a signature juicy

tenderness that offers a timeless experience, every time.

CQ Golden PigsPENROSE STATION, VIA ROLLESTON

With years of experience breeding and growing wagyu beef cattle and with the knowledge of meat quality attributes derived from the family’s wagyu business, Baden and Sheena Crittle decided to seek the same superior meat qualities for a pig that would be suitable for the Central Queensland environment. Started in 2016, CQ Golden Pigs has focused on improving the genetic potential of their pigs by developing a four-way cross from commercial Landrace/Large white/Duroc lines combined with

high-marbling Berkshire heritage pigs.

CQ Golden Pigs are free-range, and ethically raised on natural pastures and grain. Baden and Sheena partner with Piggy in the Middle, a certified free-range farm with on-farm accredited Butcher House operated by her brother Mason Mayne and cousin Dean Mayne’s families. This partnership

supplies CQ Golden Pigs with a true farm-to-plate pathway.

What started as a small project to cross breed pigs and share quality pasture-raised pork with family and friends has evolved into a passion to

create a superior breed of pig with exceptional eating quality.

Water2019 marks another dry year for the Central Highlands region; after the area south of the Capricorn Highway was drought declared in May, the full Local Government

Area was declared on the 3rd of June.

The intermittent and reduced rainfall has emphasised the incredible asset in the Central Highlands that is the Fairbairn Dam, which continues to support the billion-

dollar agricultural industries from the region.

Established in 1968, the Fairbairn Dam is the second largest water storage in Queensland with a capacity of 1,301,000 Megalitres (ML). It supplies water to the Nogoa-Mackenzie Water Supply Scheme (WSS) which is now locally-owned and

operated by the Fairbairn Irrigation Network from 1 July 2019.

The scheme provides agricultural irrigators, mining and urban water users of the Central Highlands with secure, reliable water allocations.

2019 marks 20 years since the Nogoa-Mackenzie WSS water allocation security objectives have been regulated by the Queensland Government ensuring adequate environmental flows, confidence in water markets and the supply of water. This has supported the strong growth of high value irrigated crops such as

citrus, table grapes and macadamia.

Page 13: 2019 Farm to Fine Dining - CHDC To Fine Dining Menu Bo… · Our region is home to fabulous producers of table grapes, citrus, beef, grains and legumes, figs, garlic, potatoes and

The recorded annual Announced Allocation for the 10 year period from 1988-89 demonstrates the high reliability and security of water in the region even during

periods of extended dry conditions:

• 100 per cent every year for High Priority; and • 100 per cent for Medium Priority for every year bar 1998-99 (90 per cent)

and 2006-07 (80 per cent).

In March, Fairbairn Dam levels dropped to below twelve per cent triggering Level 2 restrictions for the urban communities. A total of 180ml rainfall received at the end of March and April demonstrated the resilience of the system; restrictions have been lifted and the Dam capacity now sits at 20% or 264,259 ML at the end of June. (This is still greater than the water currently held in other Queensland water supply scheme storages with only four exceptions: the Burdekin Falls Dam, Tinaroo

Falls Dam, Fred Haigh Dam, Bundaberg and the Peter Faust Dam, Proserpine.)

Our farming communities continue to defy the dry with best practice cropping techniques and reduced stocking rates, celebrating with events such as the Agricultural Shows, and preparing infrastructure and their businesses for the return

to normal seasons.

Unique products and a driven focus on “right fruit, right box, right time” to ensure quality, makes 2PH one of the well-recognised citrus brands in Australia and Asia.

Bindi PresslerCo-Owner, 2PH Farms

“ “EMERALD

The orchards are supported by world-class automated citrus and table grape packaging facilities. The company invests in a comprehensive on-farm research and development program to meet specific consumer demand, cultivating new citrus varieties and developing unique ‘seedless’
