The February 2013 event, even larger, attracted in excess of 7 500 delegates to the Cape Town International Convention Centre. Being mandated by the Tsebo Group to grow footprint in Africa, it was imperative that Fedics Site Services (FSS) should be there too. Together with representation from Servco Catering Limitada (Servco), FSS successfully hosted a stand at the 2013 Indaba, with Andrew St Clair-Laing, Denis Hourquebie and Siyanda Ndlovu representing FSS, while Tim Makin represented Servco. Lately, you will have seen a refocusing of our branding, ranging from the Tsebo mother brand to the client-facing brands of Fedics, Drake & Scull, etc. Now, as we move into our ‘living the brand’ phase, we’ll be involving staff more closely in activating our brands!

The stand promoted our services to many major organisations that could benefit from them; improved awareness and visibility of our remote-site solutions; grew our pool of target clients and opened dialogue with new contacts and decision makers among big potential clients. Interest was high; just imagine how FSS’ demonstrated ability to quickly set up and maintain ‘base camps’ in even the remotest locations could help mining exploration ventures (often these companies are out in locations lacking even basic infrastructure, meaning FSS’ ability to install things like water purification, security, air-con and a supply chain would prove invaluable).

Special thanks go to Royce van der Zwan (Marketing Director - Tsebo Group), who spent time working the hall with the team, as well as Ken Fussell (Chief Operations Officer -Tsebo Catering Solutions) , who come through to provide corporate support and motivation.

The Indaba team came back feeling very positive about the time spent at the CTICC, during which they made contact with numerous delegates, while walking around and introducing FSS to companies and fellow exhibitors. Insight was gained about a number of mining-related projects where there could well be an immediate requirement for our services, and a record number of 154 business cards were collected – marketing gold! We are currently following up with intensive processing of the many, many leads generated and anticipate the announcement of brand new contracts – and new horizons for FSS – in the months to come. Watch this Africa-wide space…

Skills development among staff being a priority at Tsebo, managers from across the group successfully completed a Tsebo-funded Gordon Institute of Business Science Leadership Development Programme (LDP), at the end of 2012. The course enabled participants, many of them from Tsebo Catering, to share knowledge and ideas with managers from other Tsebo Group divisions. It also tasked them with an Action Learning Project (ALP), in which teams had to strategise and present

solutions to tricky business challenges at the end of the course – with the best solutions going on to become real projects at Tsebo. Well done to our GIBS graduates and, in particular, top students Rina van der Merwe (Tsebo Group Financial Manager) and Kathy Myhill-Muller (DSFM – BCX contract) pictured (above left) with Clive Smith (Tsebo Group CEO), during their graduation ceremony (right).

Doing the LDP through GIBS was like anything really worth doing: hard work!

A skills audit released by the Departments of Environmental Affairs and Tourism has found that the hospitality sector is experiencing a skills shortage, particularly a shortage of qualified chefs and managers.

To motivate more young South Africans to consider becoming chefs, the Tsebo Group’s Rosebank coffee shop recently hosted a media breakfast prepared by Fedics Executive Chef Kieron Reynolds, who captained the South African Junior Culinary Team at the Culinary Olympics in Germany this year. Like the Olympics, the Culinary Olympics are held every four years, a flaming torch is lit and medals are awarded. The only difference is that Germany is always the host nation!

According to Reynolds, “It was a great learning experience for us as none of the current team had competed in the Culinary Olympics before. SA chefs need more international exposure in order for our country to compete.” The SA team ranked 14 out of 42 nations and won two bronze medals – proof that South Africans can take the heat in any kitchen!

While Reynolds discussed the Olympics, attending journalists were treated to mouthwatering breakfast frittatas with creamed cheese and chives topped with Malay pickled fish; sautéed potatoes and basil pesto with caramelised onion; and pistachios and Brie topped with a cranberry relish. Mmmm.

Filling the gap If you have a budding chef in your family, studying hospitality could be a great career choice for them.

fresh lemon juice;• 2 tablespoons chopped fresh dill;• Salt and freshly cracked black pepper.

DIRECTIONS: In a medium bowl, whisk together the yogurt, cucumber, garlic, lemon zest, lemon juice and dill. Season with salt and pepper. Chill. For some extra flavour, add some olive oil and some coarsely chopped fresh mint.

Foodheroes

The wine estate Vergenoegd has been owned by the Faure family for six generations. Its name, meaning “satisfaction achieved”, is apt for the venue that hosted 100-odd potjie maestros in November 2012, when they stirred and simmered their way through Fedics’ popular annual potjie competition.

The 30 teams of 3, together with Fedics staff, clients and suppliers, family and friends, added up to a small army of 1 000 who had just invaded Vergenoegd (although the only weapons around were soup ladles, peelers and a few secret recipes). After a feast of a lunch from the ‘Fedics Big Pot’, entrants’ pots were judged by chefs from the South African Chefs’ Association, with the overall top 5 ‘Best Potjies’ being awarded. Competition was biltong-tough, but in the end, Team Ma Se Pumpkin walked away with 1st prize.

This event was made a reality through the hard work of Fedics Ops Manager for the Western Cape, Ian Pursch, and members from the Operations team. It took extensive teamwork, with roughly 70 helpers on the day making sure that everything ran smoothly. “Thank you to my amazing team” said Ian, “You all rallied together to serve up a success, and there were so many people who worked behind the scenes. Thank you all!”

After 25 years with Fedics, Ian Pursch retired this past March, and we wish him all the very best. We asked Ian to share a short farewell message:

“It has been a privilege to work with the great people in Fedics, and to have made so many special friendships. Although I am looking forward to a busy retirement, I’ll stay in touch. There may even be a ‘Fedics Oldies’ team at the next Potjie Competition!”
