Roasted Baby Beet Salad

Recipe and Design

Preparation:1. Preheat oven to 400°. Trim beet tops to 1/2 inch; gently wash beets. Place beets in a single layer in a shallow baking pan; drizzle with oil, tossing gently to coat. Cover pan tightly with aluminum foil.

2. Bake at 400° for 40 minutes or until tender. Transfer to a wire rack, and let cool 30 minutes.

3.Peel beets, and cut in half. Gently toss beets with 1/3 cup Brown Sugar Vinaigrette. Arrange lettuces on a serving platter. Top with beet mixture, Gorgonzola cheese, and pecans; serve with remaining Brown Sugar Vinaigrette.

For Vinaigrette: Whisk together white balsamic vinegar, minced shallot, light brown sugar, freshly ground pepper, vanilla, and salt in a small bowl. Add olive oil in a slow, steady stream, whisking constantly until smooth.

Instructions:

1. Collect a variety of colorful buttons. Choose different sizes and styles for a more whimsical look.

2. Hot-glue the buttons to the shade. You can go with a scattered look or create a sophisticated touch by placing buttons in even rows around the shade.

3. For an elegant look, try pearl or metallic buttons with a vintage feel.

We spend so much of our valuable time on work that we don't really take time off to be with our family. In many cases this leads to unhappy marriages and children. The children feel like mommy or daddy don't love them and the partner of the workaholic feel alone and unappreciated. It is very important to spend as much quality time that you can with your family. This goes for those who work outside their homes or our stay at home moms and dads. I know that at times it can be rough with all the work that has to be done to be able to have enough money to live and get our kids the things that we could not have when we where their age. I have said it once and I will keep saying it, Money is not everything! It is not worth losing your family. Honestly, I would rather be poor and happy then rich and miserable. Kids grow up pretty fast. When we know it, they will be already going to college and all those years that you could have spent with them are gone. Also, people that are involved in any relationship need the time to talk and enjoy each others company. Believe me, if the relationship is based on love and if you are the one that is the workaholic and are not spending time with your partner, he or she must not be happy with you. Spending quality time does not always mean spending a lot of money, if this is the case. Here are just a few suggestions that can help you spend quality time without leaving your pockets empty in return:

Time With The Children(Whether you are involved in a relationship or a single parent. These are some fun activities that can be done with your children)

Plan a meal together. Kids love to imitate their parents and many kids will actually love to help you cook up a meal. I guess the simple thought of helping mom or dad and making a mess at the same time is fun for them. Play some video games: This is great especially if it is a the Nintendo Wii. My daughter and I love playing Wii together. We share a lot of laughs and it is a great workout! Go outside in the yard and play some sports: Just like Wii, fun and a great workout! Watch some of their favorite movies or T.V. shows: Believe it or not, a lot of kids shows and movies are worth the watch. Redecorate their bedrooms: Create a cool bedroom theme together. Buy a brand new duvet set, change the color of the room together, etc.

Time With Your Partner In Crime

Watch a Movie Together: Pick up a couple of movies, lets be fair and each one pick a movie that both will enjoy. Candle Light Dinner: Nothing is more romantic then a nice candle light dinner with his or her favorite dish prepared with love. Buy a nice bottle of wine and some strawberries and whip cream for dessert. Massage: Nothing says loving like a nice body massage from the person you love. Many department stores sell pretty cheap body oils. Dance: Have fun and put some songs on and dance. Start with something fun then finish it off with a couple of love songs.

This is just a few ways to spend time with your family without having to spend a lot of cash.Always remember to spend time talking and letting them know how much you love them. Talking is free and you will be getting a lot in return.

Four leaf clovers, such a fun good luck charm. They have been around for a long time. You can find them in song, on jewelry, on clothing if you are lucky enough you might even find one in your own back yard. They can be found just about everywhere. Some people even have them tattooed on themselves. Such a fun tradition to think that having this sweet little plant or a representation of it will bring you good luck. While the most popular time of the year to find 4 leaf clovers is by far Saint Patrick's Day. You really can have one anytime of the year. There are some really pretty jewelry designs that incorporate four leaf clovers like Charms, necklaces and rings. For some people these items are more than pretty jewelry, they are serious good luck charms. They would not consider going anywhere without their lucky charm.

Different cultures have been using four leaf clovers for good luck for centuries. Some cultures even believe that they have the power to ward off evil spirits. This may be one of the reasons that 4 leaf clovers have been made into jewelry. Because this would be a great way to have a charm with you at all times without worrying about it withering and dying. carried them? If you search on the Internet you will find many websites with tons of information about the four leaf clovers. They really seem to be interwoven throughout history.

Most people think of the four leaf clover as coming from Ireland. It is true that Saint Patrick used a clover to demonstrate about the Holy Trinity but that would have been a regular 3 leaf clover. And this may be true but there are some legends that suggest the 4 leaf clover may have been around since the beginning of time. Some say that Eve brought a 4 leaf clover with her when herself and Adam were cast out of Eden. We have no real way of knowing if this true or not but it does prove the fancifulness of the four leaf clover.

Four leaf clovers are popular that is for sure. I have seen places where you can buy live 4 leaf clover plants. You can even find them laminated and on a card. My personal favorite is the charms and I think that a 4 leaf clover necklace is a great gift for someone special in your life and really would we not all want to be able to give someone the gift of good luck? There are so many different ways to have a four leaf clover made into something special for you to treasure always. Necklaces, earrings, charms, rings the list goes on and on, we all seem to have our own favorite.

You Are What You Eat!Traditional Irish Foods To Try

When people visit Ireland it is to see beautiful

scenery, experience a culture of music, poetry

and literature, and enjoy the renowned

hospitality and brews that have made the

Emerald Isle an ideal vacation destination.

However, beyond the everyday scones and

mashed potatoes, many visitors do not know

what to indulge in during their meals. Next time

you are in Ireland or find yourself at a restaurant

featuring true Irish cuisine, try some of these

traditional Irish dishes.

Irish Stew

One of the quintessential dishes in Irish cuisine is

the peasant stew. Traditionally made from lamb,

potatoes, onions, and parsley, the stew would be

used to feed large groups of people, such as a

large family, as the stock could be watered thinly

and spread among many bowls. These days, a

variety of stews can be found throughout Ireland,

many of which have stouts or other flavorings

added to create a unique taste.

Bacon and Cabbage

While roast beef and cabbage is a traditional dish

in America to celebrate St. Patrick's Day, its

origins go a little further. While corned beef is a

meat that was readily available to Irish

Americans, in Ireland the meat of choice was

bacon. This type of bacon does not refer to the

form that we usually fry, such as with rashers,

but is actually Back Bacon, which is boiled with

cabbage. Turnips or potatoes are served with this

dish, and spiced with sauces and parsley.

Fish and Chips

Popularized in the United Kingdom in the mid

1800s, this fast food dish consists of fish such

as cod or haddock, battered in breadcrumbs and

deep fried, and served with a side of deep-fried

potato slices, or chips. Giuseppe Cervi, an

Italian immigrant, brought the dish to Ireland

when he started selling fish and chips from a

handcart. The Dublin slang "one and one" refers

to how Cervi's wife Palma would ask each

customer, "Uno di questa, uno di quella,"

meaning "one of this, one of the other.

Traditionally served in newspaper, fish and chips

can still be purchased on the street, but one can

also find fancier, four-star versions at

restaurants around the country.

Shepherd's Pie

Originating in England, this traditional casserole

is made with a lamb mince, potatoes, spices,

and other vegetables such as carrots, peas and

corn. A traditional peasant dish, this dish was

similar to Irish stew, as it was made to be able

to feed a large amount of people on very few

ingredients. The name "Shepherd's pie" replaced

the term "cottage pie" in the 1870s and was

ideal for making new meals out of leftovers.

Shepherd's pie has become a staple in Irish and

Irish-American households.

Soda Bread

Dating back to 1840, Irish soda bread can range

from a cake-like consistency to a hard loaf that

needs a sharp knife. This type of bread uses

sodium bicarbonate, or baking soda, to raise the

bread rather than yeast. While some bakers

choose to keep the ingredients to the traditional

flour, bread, soda, salt, and buttermilk, other

ingredients, like raisins or nuts, can be mixed in

for flavor. When baking, a cross is cut into the

top of the bread to allow air circulation, serve as

a guideline for cutting, and ward off evil fairies.

Irish Breakfast

Commonly found of the menus of Irish pubs in

America, the Irish breakfast is a hearty meal

that is meant to keep you energized and full for

a good portion of the day. There are many

variations to this meal, including the Ulster Fry,

but one will usually find on his/her plate bacon

rashers (a thicker version of American bacon,

almost like Canadian bacon) sausages, fried

eggs, white and black puddings, toast, fried

tomato, and sautéed potatoes. This can also be

served with a cup of hearty Irish tea, such as

Barry's Tea of Lyons Tea. This is a must try

when visiting in Ireland, and most Bed and

Breakfasts will host this type of breakfast.

Irish fare today has experienced throngs of rave

reviews and new respect as prominent chefs

take local ingredients and traditional dishes and

add new flavors and cooking styles to the menu.

Irish seafood, especially shellfish, has become

one of the dishes to try when visiting Ireland.

Whether you are at a 5-star restaurant or

standing in queue at a fish and chip shop, trying

Ireland's cuisine will add a bit of spice to your

vacation.

Saint Patrick's day is a religious feast festival of Catholic christians having its roots in Ireland with the celebrations gaining significance in other countries, particularly America and Britain. Just like St. Valentines Day, St. Patrick's Day (i.e, 17th March) commemorates the demise of the revered patronized Irish saint St. Patrick. So, what is the legend behind St. Patrick which led to the association of a festival in his name and how is the day celebrated ?

The story goes like this...Originally born (in later half of fourth century) to Roman parents in Scotland or Roman England (there are conflicting opinions regarding the place of birth), he was previously known by the name Maewyn Succat. He was given a Romanticized name Patricius leading to him being known as Patrick.Patrick was originally a pagan ( a non-believer of Christianity ). During his childhood, he was kidnapped and sold as a slave to the Celtic Druids who then ruled Ireland. It was during that stage of life that his attitude and beliefs towards God started changing. After six years, he escaped from slavery when he dreamt of God giving him instructions for the same. He was taught priesthood in France. When he became a bishop, he again dreamt of Irish people calling him and requiring his services.So, he returned to Ireland with firm belief of converting pagans to Christians. Despite being arrested by the Celtic Druids several times, he always managed to escape and was not deterred. He actively baptized and preached Christianity. He even used diplomacy like gifting people in kinglets and gifting lawgivers. For 20 years he had traveled throughout Ireland, establishing monasteries across the country. He also set up schools and churches which would aid him in his conversion.

How is the Patrick's day celebrated?As a part of the celebration, Many Irish people wear a bunch of shamrock on their lapels or caps on St. Patrick's Day, while children wear tricolored (green, white and orange) badges. Girls traditionally wore green ribbons in their hair (many still do).A three-leafed Shamrock clover was used by St. Patrick to represent the trinity, like father, son and holy spirit; also shamrock was considered lucky by Irish people. The shamrock was used by the Irish as a mark of nationalism when the English invaded the Celtics. Thus a shamrock is given lot of reverence in Ireland. Leprechauns or Irish

fairy people are also associated with St. Patrick's festival. In Irish mythology, a leprechaun is a type of elf said to inhabit the island of Ireland.In recent times, the St. Patrick's Day celebrations in Dublin have been extended to a week-long event called St. Patrick's Festival, encompassing a spectacular fireworks display Skyfest), open-air music, street theater and the traditional parade. Over one million people attended the celebrations in 2004.St. Patrick's Day is celebrated worldwide by the Irish and those of Irish descent. A major parade takes place in Dublin and in most other Irish towns and villages. The three largest parades of recent years have been held in Dublin, New York and Birmingham England. Parades also take place in other centers, London, Paris, Rome, Moscow, Beijing, Hong Kong, Singapore and throughout the Americas.In the United States, St. Patrick's Day would not be St. Patrick's Day unless the Chicago River is dyed green. Also, St. Paddy's Day has little religious or historical significance. Established in Boston in 1737, it is essentially a time to put on a "Kiss Me I'm Irish" button, and parade drunken through the streets singing a mangled version of "Danny Boy" in celebration of one's real or imagined Irish ancestry.Thus in a nutshell, it can be seen that the legends revolving around St Patrick have been inseparably combined with the facts. The day invariably evokes the "I am Irish" sentiments along with patronizing St. Patrick for his services towards Ireland. And together they have helped us know much about the Saint and the spirit behind celebration of the day.

Although some don't agree, alcohol should be looked at as a drug, though a very popular drug . People have always loved the effects of alcohol. Many people have refrigerators filled with beer, many others are wine connoisseurs. But no matter what your preference may be, alcohol can still be very dangerous when combined with the operation of an automobile. If you can remember only a few things from this report remember this: driving drunk is unsafe to you, and everyone else around you. The driver's of other cars, pedestrians, etc... Driving drunk can also be very, very costly: insurance overcharges, insurance rates, tickets, fines.

You should understand what alcohol can do to you. Alcohol is in fact a downer, and actually often heightens your temper. If you're angry, after a couple drinks you may be quite possibly angrier. Whenever you are sad, you probably will feel sadder after some beverages. It is also not good to drink and drive when you are in a good mood. Your driving is also determined by your mood. It can make you drive faster, pay attention to a lesser extent, etc... Analyses have shown that the combination of anger, and drinking is responsible for much of reckless driving. Not only can alcohol enhance your mood, but it has been proven that it can quickly modify your mood. While alcohol is consumed, it is not digested momentarily. It infiltrates your stomach and small intestine straight into the bloodstream and is conducted to all parts of your body. It arrives at your brain in microscopic amounts. When alcohol is absorbed in larger amounts, it numbs the region of your brain that command inhibition, assessment, and self-discipline. Hopefully you can consider how this could be damaging to your health when driving. Drinking.

But how does alcohol effect driving? To build up upon this, drinking increases your self-confidence, and inhibitions but brings down your driving execution (reaction times, stopping distance). You may sense like you can do anything behind the wheel of a car after a six-pack. Only you can't. Numerous accidents come about because of boozing. Most of these accidents affect only 1 car, but extra people are killed by drunk drivers. There is a method to protect yourself from boozed drivers. First, all of the time wear your seat belt. Second, keep your distance from anyone that may seem to be under the influence. Anybody who is swerving, or going too slow are good examples. But it is unachievable to prevent all of these accidents. For this reason people have to be educated about drinking and driving so that the number of accidents could be at least lowered to the reasonable number.

So how much alcohol is safe? No amount of alcohol in your body is as safe as having none. But certain amounts of alcohol are

less hazardous than others. There is no dictated limit of how much is too much, because there are too many factors in drinking. Body weight, quantity of drinks, and how fast you drink are all factors in how alcohol affects you. Even the amount of food in your stomach can be an element in how fast the alcohol gets into your blood flow. You cannot always tell by looking at someone if they've had too much. Some people can hold their alcohol real, others cannot. The only real way to measure the amount of alcohol in your body is with a breathalyzer. A breathalyzer measures your BAC; blood alcohol concentration. Your BAC is how much of your blood is alcohol.

How do is sober up? Eating, taking aspirin, drinking black coffee, deep breathing and cold showers are not effective at all in sobering up. The only way to sober up is time. This is crucial to remember, do not let anyone tell you differently. If you do drink, you can be smart about the actions you make. If you have any reconsiderations about driving, don't. Have a friend drive you home, call a friend, or call a cab. Don't worry about your car, it is not as significant as human life, and will probably be in better condition if you don't drive it drunk. Also, don't let friends drive drunk either, if they are stubborn, take the keys from them. It is a good idea to make arrangements with your friends about not letting each other get in a car intoxicated. If you have a party, and someone who gets intoxicated at your party is involved in an accident, it may involve a lawsuit.

Everything about drinking and driving is bad. If you are driving drunk, there is a really good chance of you getting pulled over. Indications of drunk driving are speeding, a drinking driver sometimes thinks he/she can drive safely at high speeds (superman). Wandering, even if a drunk driver stays in the right lane, sometimes they have trouble steering straight. Slow driving, when a driver

knows that they are intoxicated, they may drive slower than the flow of traffic so that they do not get in an accident, this can be unsafe in itself. Sometimes drunk drivers have jerking motions because of short intellectual lapses and may not keep a steady speed.

Another indication of an intoxicated driver is quick stopping, which causes many accidents. Police officers have seen drunk drivers many times, and know how they drive. Don't be a fool a try to beat the system, because it is you that is going to get screwed. It is sad but true that there are people who drive drunk all the time and get away with it, and never get caught. But the odds are not with you. If you do get pulled over and the police officer thinks that you are intoxicated, they will ask you to perform a field sobriety test. The sobriety test consists of you walking the line straight, following the police officers finger with your eyes, and touching your nose with both index fingers while having your eyes closed.

Depending on how you do with this test, the police officer will normally conclude whether or not to perform a breathalyzer test. The cop may skip the sobriety test, and go directly to the breathalyzer if he/she feels like it. It depends on the assessment of the police officer what happens to you. But in New Jersey and some other states in the U.S. there is the implied consent law, which says that if you refuse to take the breathalyzer test you will be considered under the influence, you will lose your license for six months if it is your first offense, and for two years for repeaters, and a charge from $250-500. There is also a mandatory insurance surcharge of $1,000 for three years, plus court imposed fines and penalties. It can be quite costly being a drunk driver. Failure to pay insurance surcharge will result in indefinite loss of driving privileges.

Driving while intoxicated does not make sense. It is very serious, costly, and stupid. It's painless to avoid it if you are educated. If half the people who have their licenses experienced the penalties for getting caught and possible health consequences that emerge in traffic accidents, many people would not do it ever again. As with many other problems, education really is the key to stopping traffic accidents and human tragedies.

Helping The Community Year Round

For volunteers with the American Red Cross’ Adams County chapter, giving back to their fellow man doesn’t just happen at Christmas — it’s a 365-day-long endeavor.

“All year long what we do is help families in times of disaster,” Chapter Executive Director Debra Davis said. “We help meet families’ needs if they experience a fire or flood or any damage from a storm such as hurricanes or tornadoes.”

Serving five counties in southwest Mississippi — Adams, Jefferson, Franklin, Wilkinson and Amite — the Adams County chapter has the opportunity to help many people.

But the organization cannot do the work without the generosity of the communities it serves.

“We’re trying to increase funds for the chapter,” Davis said. “That’s how we operate and help people — through donations.”

Armed with bags of clothes, foods, toys and hygiene products, the Red Cross uses the donations it receives to bring normalcy into the lives of people who experience the loss of their homes.

During these times, the Red Cross also offers money and hotel accommodations for people who have lost all their belongings due to natural and man-made disasters.

But not only does the organization offer a few of the comforts of home to people who need them most throughout the year, it also helps bring people home when they are most needed.

“We handle a lot of military calls where (people) need to contact their family member who is located overseas or at one of the military bases around the county if there is a death or illness in their family,” Davis said.

Aside from helping people get through personal losses, the Red Cross also teaches people how to survive and save lives.

“We have the health and safety classes for CPR, first aid, baby sitting training and life guarding, too,” Davis said.

This season the Red Cross is focusing on keeping people informed about how to prevent house fires and have a safe holiday season.

“At this time of the year there are so many fires,” Davis said. “What we want to do is send flyers out to all the counties in our area with fire and safety procedures that people need to be aware of.”

“Since I started in September, we’ve had a fire every week and a half, and now between the five counties, it has increased to where we have two fires a week,” Davis said.

Davis said tips such as turning off space heaters when sleeping and out of the house and keeping heaters away from forms of cloth such as curtains and blankets are just a few things to remember to stay safe.

In the last five months she’s worked with the Adams County chapter, Davis said she has seen over $7,000 spent out of the organization’s disaster fund from assisting at fire cases.

Davis said helping people on a daily basis is tiring, but the rewards of working at disaster sites is a rewarding experience that she hopes to share with new volunteers.

“The thing that gets me the most is the reaction you receive from the client,” Davis said. “I get the most from how appreciative they are. You are able to make a type of bond with (the people you help.)

Davis said at this point in the year, monetary contributions and donations are the most appreciated forms of giving and the most useful, as well.

However, starting in January, she hopes to see people volunteering their time with the chapter.

In January, we plan on having a live remote to solicit our volunteer base so we can start getting those individuals trained by the time our storm season begins in February,” Davis said.

Monetary donations can be made to the Red Cross by stopping by the office located at 211 N. Union St.

Office hours are 9 a.m. to 5 p.m. on Monday through Friday, but volunteers can be reached any hour of any day by calling 601-446-9910.

“The thing I always say is look at donating to the Red Cross as an insurance policy —it’s always good to have it there for when you least expect it,” Davis said. “You or your loved ones might be on the receiving end later.”

This months random fact brings to our attention the lovely herald of the coming spring months: The Daffodil. There

are two derivations of the name. One is that of the youth of Greek mythology called Narcissus, who, in at least one

of many variations of the tale, became so obsessed with his own reflection as he kneeled and gazed into a pool of

water that he fell into the water and drowned. In some variations, he died of starvation and thirst from just sitting by

the edge of the pool until he gave out, gazing at his reflection until he died. In both versions, the Narcissus plant first

sprang from where he died.

The other derivation is that the plant is named after its narcotic properties (narkao, "to grow numb" in Greek).

Narcissus 'Geranium' There are several plurals in common use: "Narcissuses", "Narcissi", and "Narcissus". This last

is common in American English but is very rare in British usage. The American Webster's Third New International

Dictionary gives plurals in the order "Narcissus", "Narcissuses", and "Narcissi", but the British Compact Oxford

English Dictionary lists just "Narcissi" and "Narcissuses".

The name Daffodil is derived from an earlier "Affodell", a variant of Asphodel. The reason for the introduction of the

initial "d" is not known, although a probable source is an etymological merging from the Dutch article "de," as in "De

affodil." From at least the 16th century "Daffadown Dilly", "daffadown dilly", and "daffydowndilly" have appeared as

playful synonyms of the name. The name jonquil is sometimes used in North America, particularly in the South, but

strictly speaking that name belongs only to the rush-leaved Narcissus jonquilla and cultivars derived from it. Flowers

of the tazetta-group species Narcissus papyraceus are commonly called paperwhites.

So next time you spot one of these lovely heralds of spring, be sure to remember it's many different names!
