Exclusive

Hello and welcome to our second annual beer and gin festival. We have selected beers and gins from a range of styles, with a range of strengths. We have a few exclusive brews, first pours and some old favourites. You will also find a few award-winning beverages in amongst the line ups. Be sure to get your tongue in a twist with our sour beer tap take over on the main bar.

This year we got together with Wishbone brewery over in Keighley and brewed a beer inspired by the red bricks of our largest auditorium; Red Brick. The name Titus Red 1772 was selected, after Titus Knight being the first Pastor of Square Chapel and 1772 being the year it was built. This beer is available in both cask and keg.

You will find a selection of Grab and Go food available from our kitchen with food pairings by beer sommelier Annabel Smith at the back of this programme.

We also have the guys from Vinyl Tap in Huddersfield DJ’ing for us throughout the weekend, feel free to dance should the mood take you.

Festivals would be nothing without the people involved making them happen, so a big thank you to everyone who has contributed towards making this festival happen.

Festival Food Pairings by Beer Sommelier, Annabel Smith

Annabel Smith is a freelance Beer Sommelier, trainer, writer, consultant and public speaker to both the beer industry and consumers.

She has worked in the beer industry in one form or another for almost 30 years. After 12 years of serving beer in pubs all over the UK, she branched out, and was employed by Guinness. She trained over 35,000 publicans worldwide how to pour the perfect pint of the Black Stuff. Her love of all things beer continued and she spotted a job for a fledgling organisation called Cask Marque who required a beer taster and a training manager.

She is a founder member and director of Dea Latis, a group formed to change women’s perceptions about beer and encourage more women to consider beer as a drink of choice. Annabel is also a member of the British Guild of Beer Writers, and was shortlisted for a BGBW Award in 2017.

Sweet potato, pecan, cranberry and okra casserole With avocado salad and Jamaican coleslaw

We don’t want to overpower the delicate flavours of sweet potato, okra and avocado, so keep your beer clean, crisp and sharp. The lagers I’ve listed are grassy and herbal, but if ale’s your thing, the Siren Hazy Pale Ale delivers the same clean flavoursnative to Switzerland and include clover blossom, blackcurrant leaves, bee balm and more. Beautifully presented, too.

Runaway Bay chicken Kiev- spicy marinated chicken covered in panko breadcrumbsServed with Jalapeño jacket potato wedges and mango chutney.

All spicy foods match well with wheat beers. These beers are creamy, and quench the heat of chilli in the dish. The cinnamon and nutmeg will bring out any clove flavours in the wheat beers, whilst the Pilot Blond is simply a stunning thirst quencher.

Jerk chicken with rice and peas served with mango coleslaw

We’re going fruitaholic with these two matches. Jerk chicken is fragrant and ferocious, and combined with the mango coleslaw we want a big juicy beer. Think Um Bongo in a beer!

Jerk roasted butternut squash burger, served in a brown brioche seeded bun with mixed lettuce leaves, beef tomato and avocado salad(mint, avocado, dill weed, water-cress, toasted almonds, mint and mango)

Time to break out the fruity IPAs. Big and bold, massive tropical fruit flavours but with a hefty malty backbone to complement the brown brioche

There are no ‘rules’ to beer and food matching in my world. Everyone is different: what suits one person’s palate, might not suit someone else’s. This is why I love experimenting with beer and food. Sometimes, the most bizarre combinations work best, even if in theory they sound odd. This is your chance to play around with food and beer combinations. Double beef burger and Yorkshire blue cheese with Jamaican coleslaw(red and white cabbage, coriander, lime, lemon, spring onion and Jalapeño peppers)

Nothing goes better with blue cheese than a rich chocolatey porter or mild. The sweetness of the beer contrasts fantastically well with the saltiness of the cheese, and the smoky caramelised malts in these beers that complement grilled red meats.
