Buttermilk Biscuits

Ingredients:½ cup vegetable shortening2 ¼ cups flour2 ½ tsp. baking powder½ tsp. baking soda1 Tbsp. sugar½ tsp salt1 ¼ cup buttermilk

Directions:1. Preheat oven to 425°F. Grease baking sheet. Wrap shortening with

wax paper and place in freezer.2. Tear off 2 pieces wax paper about 12 inches long. Sift flour, baking

powder, baking soda, sugar and salt onto one sheet of wax paper. Place empty sifter on other sheet. Sift mixture back and forth 4 more times and into a large mixing bowl at the end.

3. Cut shortening from freezer into small pieces, and scatter over dry ingredients. With fingertips, lightly rub shortening and flour together. Occasionally toss mixture so all particles of shortening are coated with flour. When mixture is flour-covered, begin adding buttermilk. Use a fork to lightly mix with dry ingredients.

4. Cover work surface with dusting of flour. Gather up sticky dough, and place on floured surface. Dust your hands with flour and knead the dough gently, adding only enough flour to make it manageable.

5. With a floured rolling pin, roll the dough into a disk ½ inch think. Using a 2-inch biscuit cutter, cut our biscuits and place them on baking sheet. Bake for 12 minutes or until golden.

Sausage Gravy

Ingredients½ lb sausage¼ cup all-purpose flour2 cups milkSalt and black pepper to taste

1. Crumble and cook sausage in a large skillet over medium heat until brown.

2. Stir in flour until dissolved. 3. Gradually stir in milk and cook gravy until bubbly and desired

thickness.
