xcuse me. I knowthere wasn’t any wayto warn us. Puttingon a wedding for

ontinued from last month…..my mom’s brotherRichard was a character. Always screwing aroundand making people laugh. He and my Aunt

Louise went to the opening of the Dorothy ChandlerPavilion and my uncle wore his tux but took a disappearing cane and was spoofing the other guests. One day my mother walked into my room when I wasabout 6 or 7 and there I was sitting on my bed being fedbad words (his version of Rosetta Stone) by my UncleRichard. Each summer, I was received by my Aunt andUncle in the beach house in Malibu….I will say an incredible place to be growing up. I must have spent 5summers there. One summer, my Uncle Richard producesa shiny, chromed out, balloon tired purple dune buggy!Wow…were my eyes impressed. He would take me outand we would cruise Pepperdine, the sheriff’s station andall around the hills of the coast. I can tell you, this was theworld’s fair to me. One day, leaving the Sheriff’s station,we made a wide turn onto a narrow road and we wereheaded right towards a road sign, sharply turning thewheel, we avoided a head on crash but were grazed andturned the sign. Not knowing the eminent danger wewere in, I thought this was really cool. I reported to myAunt that “that was the first time I have ever headedtoward a sign and actually hit it!” I would like to have mynephews tell stories of their uncle when I am gone.Maybe not hitting a road sign, but what about cruising thebeach towns in a shiny, balloon tired dune buggy? I foundthe perfect specimen in Las Vegas! I added two seat beltsto make it a four-seater (myself and three nephews) andupgraded the brakes…let the memories begin….and“thank you “ Uncle Richard, you and the brother in law’sbrother really shaped my vision of what uncles should be.

Jim McFerran, one of the foremost viticulturists in Washington, joinedMilbrandt back in 1997 tohelp with the intricacies ofplanting. He was very carefulabout matching the rightvariety to the right site. Hisgoal has always been to bethe best grower in the state. From the start, demand fortheir grapes was immediateand overwhelming.

At first glance, EasternWashingtonis not yourtypical winecountry. It’s ar e m o t e ,windswept ,high desertdotted with

sagebrush and tumble-weeds. But it also holdssome of the most breath-taking terrain, ranging fromdeep river gorges to vastmountain ranges and undulating hills formed byIce Age floods and ancientvolcanoes.

This is a classic ColumbiaValley Cabernet Sauvignon. Itenters with soft, envelopingfruit similar to black cherrywith hints of leather andearth. The flavor gets biggerand more intense and finishes with a flourish component. Try this quietgiant with a prime fillet with a classic béarnaisesauce or red wine reductionand fresh herbs.

e’ve heard ittime and timeagain. Great

wine starts in the vineyard.Great wine is made by greatfarmers. You have to startwith great grapes if you haveany chance of making greatwine. That’s how WhisperingTree started. It is made bythird generation farmers atMilbrandt Vineyards.

Farming is in Milbrand’sblood. Their parents, grand-p a r e n t s ,aunts anduncles allmade theirliving work-ing the land.E a s t e r nWashingtonis in their blood. They camehere as young children andhave always called it home. When they planted their firstvines in 1997, they wereentering uncharted territory. The Milbrandt family hadbeen farming in the areasince the mid-1950s andthey believed the region’smoderate temperatures, lowrainfall and sandy soils wereideal for wine grapes.

Today, they farm 12 distinctestate vineyard sites totalingnearly 2,000 acres. Theirgrapes are purchased bysome of the most prestigiouswineries in the state. Ourown winery, launched in2005, produces highly-individualistic wines fromtheir estate and neighboringvineyards.

performed at the entrance ofthe cellar where the bestgrape bunches are chosenfor vinification.

This attention to detail isvery labor intensive and thusextremely expensive. Itwould be impossible for awine of this quality to bemade like this in Californiawithout it costing at leasttwo to three times as much. This is why today

we are looking to Argentina to provide us withsome of the bestwine values in theworld.

Following handharvesting in late March, theg rapes were de-stemmed andgently split open.Fermentation was

conducted in a combinationof open top vessels andclosed tanks with gentlesqueezing. The grapes werethen subjected to extendedmaceration, which is thecontact with the skins and seeds in a colder environment, to build bodyand structure.

This wine is a classic representative of the varietybrimming with spice and redfruits especially plum. Themouth is soft and supple tannins that linger on thepalate. This selection is sensational with a primeaged New York steak seasoned only with salt and pepper.

n Buena Compania iscrafted by FincaEsmeralda, located in

the San Rafael region ofMendoza at an altitude of2,500 feet above sea level. This is an arid climate withwarm days and cool nights, ideal for growing robust red grapes.

The vineyards are located inMendoza, nestled at thefoothills of the AndesMountains. The climate and soilshere allow thegrapes to reach anexcellent maturitylevel due to the year-roundsunshine whichhelps the fruit toreach its optimumlevel of quality.

The i r r igat ionwater comes fromthe Andes Mountains. Thesystem that distributes thiswine was structured toobtain small berries and alow production per vine. Inthis way, the results arewines of great complexity, high fruit concentration andcapable of aging well. As aresult, Malbec finds its clearest expression here.

The harvesting is made byhand at dawn when thetemperature is cool. The firstselection process is carriedout in the vineyard. Grapesare harvested in low-heightboxes with a capacity of only30 pounds each to avoidcausing any damage to theberries. A second selection is

began a 20 year tenure thatproduced award winningwines including being honored in Wine Spectator’sTop 100 Wines of the Year, twice! Jim has beenextremely successful withwine projects for Mondaviincluding, La Famiglia andthe storied Luce projectinvolving Mondavi andMarchese de’ Frescobaldi, the legendary Italian estatein Tuscany.

Vermentino ist rad i t i ona l l yg r o w n i nLiguria, Toscana,Corsica and inparts of south-ern France. Itthrives well inhigh tempera-tures similar to

Lodi, California. Most of thecooler coastal regions maybe too harsh to produce an outstanding example of Vermentino.

The Vermentino grape is alate ripening variety thatcan’t be grown in a marginalclimate or it won’t ripen sufficiently. This varietal iswell-known on the island ofSardinia, off the coast ofItaly. The 2010 Vermentinohas received huge accoladesfrom the press for its livelyflavors and crisp, engagingfinish. It has an engagingpassion fruit componenttamed with some lime zestand would be awesome with seared scallops inbeurre blanc.

vaggio is the resultof two guys whorepresent a triple

threat: too much experience,a low threshold for boredomand a desire to do somethingunique, which is why theymake wines in Californiawith grape varieties indige-nous to Italy. In the past, they have tackled Arneis,Nebbiolo, Sangiovese, evena Vin Santo. Their currentportfolio includes Barbera,M o s c a t o ,Primitivo andVe r m e n t i n o .Their theory is simple; ifCalifornia has aclimate perfectfor growingMediterraneanvarietals, whynot take advantage of it?

Based on that theory, theygrow the right grapes in theright place and manage toget by with their respectivedegrees in psychology andgeography. If one of us getslost then the other can figure out why. However, when you grow grapes in thewrong place, you probablyneed a Master’s Degree fromUC Davis to make the winetaste good (if you are lucky). They have found the rightplaces in Lodi for growingtheir grapes and this selection proves it.

wines truly over-delivers forthe price and has garneredmany Best Buys and BestValues from top U.S. Winepublications.

The French wines of TortoiseCreek include many of theprincipal varietals grown inthe region, such as Syrah and Grenache, but in addition, they also producenewer varieties successfullyintroduced to the region suchas Sauvignon Blanc and Pinot

Noir. In 2008,Mel and JanieMaster joinedforces with theSager familywho own then a t i o n a li m p o r t i n gc o m p a n y ,Winesel lers ,L t d . , a n dtogether they

have extended the TortoiseCreek range to include asuperb range of sustainablygrown Californian winesfrom the Lodi region.

This is a classically styledwine of the Southern Rhone, particularly Chateauneuf du Pape. The richness of flavors from both grapes ismesmerizing. You have the deep color and gameyblueberry components of the Syrah held in check bythe luscious, grapey spicecomponents of theGrenache. It really doesn’tget much better than this. The wine screams for something charred overmesquite like a prime tri-tipwith just a hint of garlic.

ortoise Creek wascreated by a Britishcouple, Mel and

Janie Master, who livedmuch of their lives in thewine business in the Southof France and California.During their time in France, they developed close relationships with many of the top growers and w inemaker s i n theLanguedoc and have beenproducing wines from thisarea since 1990.

The nameTortoise Creekcomes fromM e l a n dJanie’s timespent in thecountryside ofProvence andtheir fondnessfor feeding thesmall tortoisesliving in a creek alongsidetheir home in the region ofFrance.

The concept with TortoiseCreek was to work more with the individual growerand less with the large cooperatives as they under-stood that the key to anygood wine, whether it isfrom the Languedoc,California or any other wineregion, was “low yields.”With that in mind, TortoiseCreek wines have beenselected and blended fromgrowers who understood this philosophy. They workclosely with their growers inCalifornia and France to handcraft their selections. As aresult, the Tortoise Creek

Throughout the decades andwith gains in the science ofNapa Valley viticulture, thewines of Stonegate havenever suffered a downturn inquality even with a series of ownership changes.Caretaker of the Stonegatebrand is the newly formedRobin Hood, LLC.

optimized farming of outstanding vineyards from Stonegate’s past andnew discoveries, closelymonitored winemaking andnew packaging to uphold thebrand as a classic.

Classic is certainly the wordwe would use to describethis blend of CabernetSauvignon, Zinfandel, andMerlot. It offers elegant tannins with flavors of baked cherries, mocha, and plum. The dense, chocolateand berry essences aboundin a whirling sensationdepositing flecks of intenseflavors within its realm. Not to be missed withossobuco or chicken frieds teak smothe red incaramelized onions and crimini mushrooms and adash of balsamic.

he mid-1970s saw aboom of determinedwinemaking families

staking new ground in theNapa Valley as more winedrinkers demanded wines of greater distinction.Stonegate Vineyards, synonymous with legendaryNapa Valley Cabernet andMerlot, was one such leader. Founders James and Barbara Spaulding, considered charter membersof Napa Valley’s modernwine revolution, recognizedand cultivatedsma l l sub -regions withinthe valley.

T o t h eSpauldings, itseemed thatg r a p e s o fi m p r e s s i v eintensity andgreat depthshould grow there. In the’70s and ’80s, these microregions’ potential, untappedfor the most part, capturedthe imagination of wine-makers with drive and grit. The Stonegate winery, situated between St. Helenaand Calistoga along NapaValley’s famed Highway 29,was a proving ground forwines originating in vineyardgems in such places as Diamond Mountain,Rutherford, and Oakville.

Along with son David, whoheads up winemaking, thefamily was the first to own the entire winemakingprocess from growinggrapes, harvesting, crushing, fermenting, and aging totasting and observing howwine drinkers reacted to the wines. The result wasuniversally heralded wine.

This wine has an intenseruby color. It’s a fine example of a complex winewith ripe fruits and hints ofhazelnut and chocolate. It isa powerful and concentratedwine with tannins that areripe and elegant. It matchesred meats, beef, roast beefand strong cheeses.

unquestionably the finestVermouth in the world. When carefully matured in the town of Taranto, however, this imposing drywhite wine can rival many of the new darlings ofSouthern Italy, of whichthere are many.

Taranto is a coastal city sitting right on the IonianSea coast. It is the capital of the Province of Taranto

and becauseof where it issituated; it isan importantco m m e r c i a lport, as it hasbeen for sev-eral millenea. It also servesas the mainItalian navalbase. It datesback to the

8th century BC when it wasfounded as a Greek colony. Now the modern city hasbeen built over an ancientGreek necropolis. Later onthe Romans connected thecity to Rome with an exten-sion of the Appian Way.

The color has a greenish tintwith a yellow, transparenthue. The nose has floral perfumes and delicate notesof citrus. The palate is fresh, long and weighty. The finale is persistent withflavors of almond and apple. This is great with shell fish or linguine withclam sauce.

igne E Vini translatesto Wines & Vines.Cosimo and Maria

Teresa Varvaglione have built a team of dynamic andmotivated collaborators, creating a company inspiredby the tradition of three generat ions of theVarvaglione family in thewine sector. A good wine isfirst of all in the country andreaches its optimal goal onlyif it is treated in a constantand assiduousin the cellar.

The quality oftheir wineslies in them e t i c u l o u sselection ofthe grapes, the meticulouscontrol of thewinemakingprocess andunrelenting research in perfecting the techniques of cellar. Quality wasn’t associated with Puglia, located at the heel of Italy’sboot, for hundreds of years.Like most of Southern Italy, itfinally learned that makingmountains of ordinary wineat prices below their costwasn’t going to get themanywhere but in the poorhouse. Little by little, theytrimmed production andspent more time in the vine-yards to improve the winesto where they are today.

In 1861, Lake County wascreated from parts of Napaand Mendocino counties andhas since been well knownas a farming community. Inthe 1870s, vineyards wereplanted and by the early1900s the area was alreadyearning its reputation forproducing “The world’sgreatest wines”.

Prohibition forced an end to the Lake County wine

production in1920. Many ofthe vineyardswere removedand replacedwith walnutand pea rorchards. Thecomeback oft h e w i n e industry began

in the 1960s when a fewgrowers rediscovered thearea’s grape growing potential and once againbegan planting vineyards.Lake County now has close to 10,000 acres of plantedvineyards and is among the fastest growing regionsin California.

The 2012 vintage was one ofthe best ever here. The long, slow and relatively coolgrowing seasons allow perfect maturation of thegrapes and thus the resultingwine. Notes of lemon, grapefruit and guava hit thenose and infuse with thetropical flavors of kiwi andmelon. Great with a greatcheese plate or challengingseafood dishes like shrimpDiablo or fish and chips.

wner, Paul Manuel, started working for the family

construction company whilehe was just in junior highand stayed with it for 30years. He worked his wayfrom laborer to project foreman to controller wherehe managed over $98 million in total sales.

His blood and spirit, thoughfirmly rooted in family, arealso rooted inthe earth andconnected withthe hard rockminers, hisforefathers ofC h a c e w a t e r,E n g l a n d .Therefore, hehas alwaysappreciated hisown home land.

In 1988, he and his wifeKellye began designing andbuilding a vineyard on theirproperty. In 1993, they negotiated what turned outto be a ten year relationshipselling their grapes to Fetzer Vineyards in Hopland,California. In 2004, Paul andKellye began taking theirgrapes to Lake County forcustom crush processing.Ready to try his hand at running a different sort ofbusiness, one more rooted inthe land. Paul acquired a 10-acre Olive Mill property inLake County in 2008 andbuilt a 10,000 square footwinery adjacent to the OliveMill. In 2011, they releasedtheir first professionallymade wines.

Q

A. Thanks for such a great question. We have been doing this

for so long that at times we take these kinds of issues for

granted. It’s nice to get a question like this to bring us

back down to Earth. Like so many other factors, the

elevation of a vineyard is an important aspect of its

ability to produce great wine grapes. What’s interesting

is that its importance varies based on where the

vineyard is. For instance, in South America, which is

close to the equator, if vines were planted at, or near,

sea level, the temperature would be so hot and humid

that the grapes could not produce anything even

approaching great wine. The higher elevation, such as

those found in Chile and Argentina, is the most critical

factor in ameliorating the temperature. Heat collects at

the bottom, but passes through at the top. Therefore,

the heat summation in the higher elevations is not

even close to that which is on the floor. In more

temperate climates at sea level, elevation is

important because that elevation was caused by a

geological occurrence which forces rocks and

limestone into the soil. That rock and limestone

provides proper drainage and supplies nutrients that

are essential to a vine’s health and its ability to

produce great grapes for making great wines.

“Paul, you have talked several times about elevation as being a good thing in growing wine grapes. Why is it so important?”
