Wow Port Coquitlam! Thank you for the amazing response to our Premiere Issue!! Even though the What’s On magazines have been very successful in Maple Ridge/Pitt Meadows and Mission, we really had no idea how it would be received in a new community where most people had never heard of it before. But we have
received nothing but positive feedback from so many of you. We keep hearing over and over how much the City needed something like this. So now our second issue is complete and we are successfully on our way. This issue covers many of the fun outdoor activities that everyone looks forward to in the summer including Music in the Park, Cinema Under the Stars, Village Vibe and even the opening of the outdoor pools. Summer Party Fun!
Ingredients1 kg/2 lbs chicken wings2.5 cm/1 inch fresh ginger, peeled and sliced4 cloves garlic, peeled and roughly chopped8 tablespoons soy sauce - 3 tablespoons sake or dry sherry2 tablespoons sugar - 225g/8oz plain all purpose flour
Method: First make the marinade. Mix the ginger, garlic, soy sauce, sugar and sake or cooking sherry in a bowl. Marinate the chicken wings in this sauce for at least 30 minutes. Make sure all wings are coated and turn a couple of times during the marinating process.Preheat oven to 200C / 400F / Gas Mark 6. Cover a large tray with baking parchment. Place the flour into a shallow bowl then drain the wings of the marinade. Dip each wing carefully into the flour, shake off any excess then place the wings on the prepared tray.Bake skin side up for 15 minutes. Then turn the wings over so that the skin side is down and bake for another 15 minutes. Finally turn skin side up again and bake for a final 15 minutes to make sure they are crispy. Serve with salad on a bed of lettuce leaves.
Makes about 8-16 chicken wings depending on size.Preparation time: 10 minutes plus 30 minutes marinating time - Cooking time: 45 minutes
Healthy Asian-style Chicken Wings
Sweet Chilli Coconut SkewersServes 4 - Preparation time: 1 hour - Cooking time: 20 minutes
Ingredients165ml can coconut milk1 tablespoon brown sugar1 tablespoon sweet chilli sauce1 teaspoon ground cinnamon1/4 teaspoon ground cardamom2 garlic cloves, crushed1 teaspoon fish sauce800g / 1.5lbs beef rump steak, trimmed & cut into 2cm cubes
Method: Combine coconut milk, sugar, sweet chilli sauce, cinnamon, cardamom, garlic and fish sauce in a non-metallic bowl. Add beef. Toss to make sure the beef is coated with the marinade. Cover and refrigerate for at least 30 minutes, longer if time permits.To make the coconut chilli sauce combine the peanuts, coconut, coriander, chilli, sweet chilli sauce and 3 teaspoons cold water in a bowl. Heat a greased barbecue plate or griddle on medium-high heat. Thread beef onto skewers. Season with salt and pepper. Cook for 3 to 5 minutes each side or until browned and cooked through. Drizzle with coconut chilli sauce. Serve with steamed rice, salad and lime wedges.

Farmers’ MarketPortCoquitlam
As part of the goals of the Recreation Division’s business plan to strengthen Port Coquitlam’s downtown centre through arts, cultural and heritage programming, a local Farmers’ Market that includes artists and artisans has been implemented and delivered in partnership with the Haney Farmers Market Society of Maple Ridge.
The Society was created in 2004 to encourage a healthy community. It operates a local farmers’ market in Maple Ridge to stimulate and support local economic initiatives providing an opportunity for community groups and individuals to inform and work toward ecological and community health. Six principles guide the Society: locally grown or produced natural products, education, sense of community, opportunities, inclusiveness/diversity and ambiance. The Society is managed by volunteers and a Market Manager.
Using the expertise and solid experience of the Haney Farmers Market Society, the Farmers Market at Port Coquitlam will promote awareness and appreciation for farm fresh produce, local eating which supports the economy and increase the capacity of small businesses (farmers and artisans) and non-profi t organizations in the community.
A very successful thirteen week pilot market supported by local farmers and prepared food vendors was held in 2009 and has now grown to seventeen weeks with over 35 vendors. It is held every Thursday from June to September, from 3 PM to 7 PM in Leigh Square in the Community Arts Village by City Hall.
