T ruly a vagabond on the long, sarcastic, and not-so lonesome road of gastronomy, Adam Richman holds fast his fork and

knife, fighting off the bland and the light. A native of New York City, Richman captured the hearts and palates of the country with his first show on the Travel Channel, Man Vs. Food. He traveled the nation taking on food challenges at various restaurants boasting gut-busting portions, monolithic sandwiches, and wings so hot their sauce could remove rust. Before the challenge takes place, Adam visits other local restaurants eating signature dishes each one more savory and succulent than the last. “I think it’s the closest I’ve ever come to being a professional athlete, you know. You walk into a room and people are cheering you on and giving you high fives and you are the people’s competitor. So this kind of competing and having the whole crowd behind you, that was certainly amazing,” said Richman. Since then he has been a part of two more Travel Channel productions Man Vs. Food: Nation and Adam Richman’s Best Sandwich in America. Nation is similar to Man Vs. Food in that it focuses on food challenges, but instead of Adam in the spotlight it is a local man or woman who steps up to the plate. In the show, Adam becomes one part coach, and one part culinary cheerleader using his intoxicating enthusiasm and zany humor to excite and relieve the challenger and the crowd. “The thing that I really hold on to the most is watching the competitors being cheered on by their peers and watching them become heroes in their own hometown, watching their kids looking around the room and seeing strangers cheer on their dad was pretty great,” said Richman. In Best Sandwich in America Adam takes on the rock n’ roll lifestyle, jumping constantly from one city to the next tasting some of the best sandwiches from the amber waves of grain to the purple mountain majesties. By utilizing a bracket system, narrowing them down by region, each step brings him closer to finding his ‘soul sandwich.’ “I like the repetition of how we shot it. At first I really hated this because of the pace we were going you couldn’t really appreciate the city, but I got to be in so many cities in such a short period of time. And I loved the fact that the same food stuff could be interpreted so many very different ways,” said Richman. Adam was immersed into food culture at an early age through his family and the culinary diversity of New York City galvanized this passion by opening the door to a spectrum of different tastes.

While studying at Emory University in Atlanta, Adam began writi ng a food journal to record all of the culinary hot spots in the region. Although his chosen major was Internati onal Studies, Adam’s interest in food remained sharp and immediate. He built up quite a culinary resume working in various restaurants and positi ons from the front of the house to the back. Without any formal training, it was this raw experience that gave him his knowledge, appeal, and staying power. While beefi ng up his culinary chops and never letti ng his passion for food die down, he earned a master’s degree in Fine Arts from Yale University’s School of Drama. His performances in many theatre producti ons paired perfectly with his culinary experience to create a delectable meal of Host a la Man Vs. Food. Since his success on the Travel Channel, Adam has writt en his fi rst book America the Edible and is putti ng the fi nishing touches on his newest work ti tled Quest for the Best, which will be available in stores in Fall 2013. He is also a regular contributor on the Today Show, a board member on the Armed Services Foundati on, and a popular lecturer on the college circuit. Away from his many ventures Richman is a normal chap who cooks for his family and friends when he has the ti me. “I just grilled for 4th of July, so it was kind of fun. [My] go to dish, may be sushi. Really good sushi. I do a great spicy salmon [roll] with spicy

salmon, avocado, and tobeko, which is fl ying fi sh roe. That tends to be a crowd pleaser,” said Richman. With the amount of miles Adam has accumulated over the years there are a few places that call out to him like culinary sirens. “I love Austi n for dining, there’s a tremendous use of local products and a variety of cultures. I love Charleston, South Carolina. [It is] aff ordable, and very progressive in its food scene. I love San Francisco. I think a very educated dining populace is a much more

informed culinary industry. So I think [of] big fl avors and the usual preparati on, but because it is San Fran, it is usually quite expensive. Chicago is really blowing me away every ti me I go there. I keep having bett er and bett er food,” said Richman. The miles aren’t the only thing that had added up over the years. The amount of calories Richman has consumed would be staggering even for a full-grown Clydesdale but he does take measure to combat this.

“If I’m not running than I do hit the gym, or do something physical on a daily basis. My diet generally speaking, I try to keep it lighter. So not a lot of cheese, nothing fried, a lot of fi sh, a lot of chicken, a lot of water, a lot of natural juices and stuff , not a lot of liquor, just to give my body a rest when I’m not fi lming,” said Richman.

I n a capitalisti c society that currently places convenience on the top of the economic pillar, Evansville’s River City Food Co-op is a lighthouse in a dense fog of detachment.

The River City Food Co-op is a fairly rare and very benefi cial breed of business. “[We] are the only food cooperati ve around here, there are several other natural food grocery stores and diff erent places that off er some organics but the closest food co-op [to Evansville] is in Paoli, Indiana,” said Jessica Jones, the General Manager of the co-op. There are three main points that make this quaint establishment mighti er in an existenti al way, than the enti rety of the Walton estate. The co-op is member-owned, so as opposed to the rigidity of big business, members of the co-op have an ability to voice their opinions and thoughts on the administrati on of the co-op. The meekest member’s voice is heard and membership is completely open to the public.

Secondly, the co-op operates with social ethics in place. Their produce, meats and even miscellaneous items are chemical free. Products from abroad are obtained by fair trade and by purchasing in bulk to co-op cuts down on the waste of product and containers. Lastly, the co-op partners with and supports businesses and producers to off er the consumer the most fresh and local products, in turn contributi ng directly to the well-being of the local economy. All the righteousness aside, the River City Food Co-op off ers products for its customers that give them all the ingredients they need to provide an ideal culinary experience for their families and friends. Although it is largely a matt er of opinion, meals comprised of ingredients that are fresh and local are the lifeblood of some of the most successful, unique,

and knowledgeable chefs the world over. “When you look at a plate of produce that you just picked from your garden and prepare it with the herbs and spices and meat that you got down the street you are not only taking pride in what you are putti ng in your body, you are taking pride in your community, you are taking pride in craft smanship to create those dishes,” said Jones. This mentality may seem a bit grandiose when applied to a simple family meal but the concept remains the same no matt er how complex or how simple a meal is. Whether you are cooking a classy meal to impress prominent dinner guests or to simply provide nourishment for your family local, fresh ingredients will achieve their purpose. “It’s really grounding and centering to grow something myself and then prepare it for my family, or to have a relati onship with a farmer and know that while I’m feeding myself and nourishing my body, I’m also nourishing their families’ bodies by supporti ng their livelihood,” said Jones.

The co-op boasts a cornucopia of local and fresh products. They off er a variety of secondary ingredients such as grains, beans, nuts and nut butt ers, dried fruit, herbs and spices, coff ees and teas, pastas, ethnic foods, wheat and gluten free products, and naturally-sweetened juices. Their stock of primary ingredients includes fruits, vegetables, locally-raised beef and poultry, meat alternati ves, local eggs, and dairy products. Next ti me its ti me to go on a grocery run, don’t solely think about the distance and the ti me it will take you to get there. Consider travelling a bit further to access fresh, local foodstuff s at River City Food Co-op for the makings of supremely sati sfying meals.

Madison Spond is a jovial woman of Norwegian ancestry with a smile as vibrant and entrancing as the Summer Solstice, a woman whose creative thinking blends with

her egalitarian entrepreneurial spirit to bring a fresh take on food and beverage vending to the tri-state area. “I’ve been working in the food industry for almost 14 years and I’ve had this entrepreneurial spirit since I was in elementary school. I used to bake and sell brownies or cookies at school to make money for things I wanted that my parents couldn’t afford,” said Spond. Aside from her enthusiasm and charm, Spond is on the brink of an important culinary movement, she stands as the one person in Evansville that flirts with the line and has been successful in doing so. The ‘line’ is a local, creative, and mobile approach to food and beverage vending that is sweeping the country. Food trucks, stands, stalls and, carts are becoming a more popular trend in cities all over the U.S. While Spond is not specifically striving for this ideal, her success could very well light the fuse to the powder keg that will blow the tri-state area wide open to these types of vendors. “On the upside of being very rare, it makes people excited and surprised. [People say] ‘We want things like this here!’ I’ve even had people give me money without buying anything because they were so excited about how happy and friendly I was,” said Spond. These trucks, stands, stalls and carts typically set up shop in high traffic areas of a city, outside big businesses at lunch hour, or even at sporting events. Some of the vendors boast full kitchens

and full menus with an array of savory, creative meals to eat on the go. Others take a more simple approach, they may utilize nothing bigger than a traditional hot dog cart (like Spond) to vend their own twist of classic to-go food or other type of culinary creation unique to their cooking background or style. “I like to make people really happy, I like to give them something they’ve never experienced…I want to make people excited,” said Spond. In addition, a large majority of these vendors use fresh, local ingredients to construct their dishes. Spond is no different. She regularly uses produce, herbs, and spices from local gardeners to support the local economy and has the freshest ingredients to work with.

Spond is officially permitted to vend but her culinary involvement goes beyond the mobile vending scene. She has her hands in multiple projects from operating the food and beverage stand, to catering events, baking, and has eventual plans to have another cart equipped to make and sell her signature crepes out of. Her signature crepes include “The Norseman” with sausage, cream cheese, and chives, “Hearts & Smarts” with berries, oats, and walnuts, and “The Snowy Maple” with classic maple sugar and a tree-shaped dusting of powdered sugar. Her cart boasts small offerings such as the pepperoni pepper jack half-sandwich, the curry chicken or mini spring chicken salad, and homemade potato and pasta salad. Other mentionables are “The Birdy,” a hearty cookie packed with nuts, oats, and seeds, as well as “The Bunny,” a variety of garden vegetables and dressing. Her menu of drinks is even more unique and can be customized by Spond herself at the request of the customer.

You can find Madison on Fridays at 2nd & Sycamore until Sept. 28th, Saturdays in the Edgewater Grill parking lot in Newburgh until Oct. 13th, Thursdays at St. Mary’s Famer’s Market from July 13th – Sept. 13th, and Top Spot Outdoor’s Customer Appreciation Day on Oct. 13th.

Program chair Watez Phelps shares his experiences in the culinary and hospitality industries, including the many goals and opportunities present within the program at Ivy Tech. Phelps first entered the culinary world at age 16 as the lead busser at the French Lick Resort, seating between 800 to 1,200 people. Soon after, Phelps joined the military and served as a chef from 1975 to 1978. “I had this great regional American experience and training process in that I was able to engage with these older gentlemen who were retired military and civil service workers. I have never seen it duplicated very often in terms of an individual being exposed to that type of talent so early on in their career,” said Phelps. Watez believes it was this enlightening experience that made him a well rounded professional for the rest of his career. His position of leadership in the military ultimately gave him the supervisory skills that he feels are fundamental to possess as an educator. Phelps became most inspired to turn his history in hospitality into a teaching career while watching his instructors at the Culinary Institute of America and developing an appreciation for ‘formal instruction.’ Today, Watez strives to maintain professionalism in his classrooms with a combination of demonstration-based and hands-on teaching styles. He also stresses the importance of the research process, explaining, “It can influence the intuitive learning process whereby they’ve read something and are then able to emulate those concepts.” Phelps believes the education process truly comes together when studies and practice are combined, even in a tactile kitchen environment.

Watez feels that Evansville is at a crossroads. Like many, he believes the city needs to become attractive to the surrounding regions and find ways of developing professionals to help local industry growth. Phelps envisions an Evansville with hospitality services that grow from the city’s education system and benefit the economy, creating a cultural community experience. Ivy Tech hopes to provide an outlet to make this vision obtainable and economical. “We try our best to make sure that students are having a real world experience. We talk with a lot of professionals in the community, we talk with Casino Aztar, we talk with the new Ford Center,” illustrates Phelps. “We have students working at restaurants throughout the city, at hotels and non-profits. . . You get a professional experience in the classroom that could typically take you ten, fifteen years to get in the real world,” said Phelps. Students can also look forward to receiving in-depth training in hospitality business management. been sharing his passion, experti se and hand-made bread products with the Tri-State. Inspired by a trip to Europe, Lorenzo realized that there was something more to life then the current path of sales he was pursuing. “I spent the center part of my life as an insurance

salesman. The best part of the job was that it aff orded me the opportunity to travel. My life was completely changed. I wanted to live simply and pursue my passion of bread,” said Minor. Freshly grated Parmesan cheesePinch of NutmegPinch of Chicken base

Thinly slice eggplant, potatoes, and zucchini. Flash fry all vegetables until golden. This will help them retain their appearance and crispness when the dish is complete.

Arrange the vegetables in the following layer order in your 9” by 13” greased pan: potatoes, eggplant, and then zucchini. After layers have been properly placed, add a generous handful of freshly grated parmesan cheese.

Brown 1 lb. of ground beef. Drain off excess grease and add onions, white wine, and tomato paste. Simmer mixture over medium heat for about 10 minutes. Drain off excess liquid then add mixture over top of the vegetable layers.

Beat 3 eggs then mix with 3 cups of cold milk and 2 t. butter, simmer over medium heat. While the mixture is nearing a boil, add the additional cup of milk that has been mixed with 5 t. of flour. Let the mixture simmer until it begins to thicken. Once it has come to the consistency of thin ‘mashed potatoes’ remove from heat and add as final layer of mousaka.

Top the pan of delicious mousaka with anothergenerous handful of freshly grated parmesan cheese. Place pan in a preheated 350 degree oven for 35-40 minutes.

Let dish stand for at least 10 minutesbefore serving. Enjoy!

Cavanaughs Lobster ThermidorAmount Ingredient 2 ea 8oz lobster tails 4 oz Shitake and oyster mushrooms ¼ C Mild cheddar cheese 3 Tbl Canola or Vegetable Oil TT Salt and Black Pepper

1 cup Thermidor Base Sauce (ingredients below) 1 cup Heavy cream 1 cup Clam Juice

2 ea Bay Leaves 2 tsp Tarragon 3 Tbl Dry Sherry 2 Tbl Roux (ingredients below) ½ cup Flour ½ cup Melted butter

PREPARATION:

With shears cut lobster tails lengthwise, clean lobster tail by removing the vein.Remove tails from shell and cut into 5 or 6 pieces. Set the lobster meat aside.Cook shells in boiling water for four minutes, reserve for plating.

Clean mushrooms by removing stems and reserve for later

Make roux by combining flour and melted butter in a small sauté pan, mix well.Cook over medium heat until golden brown in color, reserve. This will be used for thickening the base Thermidor sauce.

Make Thermidor Base Sauce by combining heavy cream, clam juice, bay leaves, tarragon, and dry sherry.Cook on medium high heat until reduced by half. Thicken the broth with approximately one Tablespoon of Roux by adding and whisking vigorously. (Sauce will be thick) Be sure to simmer sauce on low heat for several minutes – watching carefully so not to scorch the sauce.In a sauté pan over medium heat, add the oil, lobster meat and mushrooms and sauté until lobster is almost cooked.

Add one cup of the Thermidor sauce and the cheddar cheese to the sauté pan with the lobster and mushrooms. Stir until cheese is completely melted

For presentation, lay the lobster shells on the plate, and fill them with the Thermidor SauceTop with Buttered, Toasted Bread Crumbs if desired.

Rinse & dry Mahi Mahi. In a small bowl, marinate fish in 1/4 cup of coconut milk for 30 - 45 minutes.In a small mixing bowl combine coconut flakes, breadcrumbs, black pepper, sesame seeds, and sea salt.Pan fry Mahi Mahi in sesame oil in a medium hot non-stick pan. Let brown on both sides. Be careful not to overcook. Remove from pan and let rest.In a small mixing bowl combine fresh pineapple, mango, cilantro, one tablespoon of coconut milk. Seared Scallops with Orange and Vermouth

Be sure to dry the scallops thoroughly before cooking so they’ll brown nicely.

2 tablespoons cooking oil2 pounds sea scallops½ teaspoon salt1/8 teaspoon fresh-ground black pepper3 tablespoons butter2 scallions including green tops, chopped½ cup dry vermouth1 teaspoon grated orange zest

1. In a large nonstick frying pan, heat one tablespoon of the oil over moderately high heat until very hot. Season the scallops with the salt and pepper. Add half the scallops to the pan and cook until browned, about one minute. Turn and cook until browned on the second side and just done, about 2 minutes longer. Remove from the pan. Add the remaining tablespoon of oil to the pan and repeat with the remaining scallops. Wipe out the pan.

2. In the same pan, melt the butter over moderate heat. Add the scallions and cook, stirring, for one minute. Add the vermouth and orange zest. Cook until the sauce thickens slightly, about two minutes. Add the scallops and warm until just heated through, about one minute. Serves four.

Spinach Tortellini Soup

32 oz. of Chicken or Vegetable broth14 oz. can of Italian style diced tomatoes9 oz. Cheese Tortellini6 oz. Fresh Spinach

Bring broth to a boil. Add tortellini and tomatoes with their juice, heat on medium until the pasta is tender. Turn down heat to low and then add the spinach. Cover with lid. After roughly two minutes, stir so that the spinach mixes throughout and it is ready. Lastly, top with fresh grated parmesan cheese.

6 cloves garlic, minced 10 baby carrots, thin-sliced1 bunch of green onions or chives, chopped poultry seasoning1 bunch Italian flat-leaf parsley, chopped 3 tsp. Italian seasoning1 tsp. sugar 6 oz. dry white wine12 oz. sliced mushrooms

3 Tbsp. tomato paste2 bell peppers (prefer orange and red), roasted and diced1 can (15 ½ oz.) tomato sauce28 oz. can of diced tomatoes 3 tsp. red pepper flakes1 yellow onion or 4 large shallots, finely chopped 16 oz. chicken stockGrated parmesan cheese smoked paprika, to taste

Season chicken with poultry seasoning and season the flour with salt and pepper. Heat butter with an equal amount of oil in a pan over med-high heat. Lightly dredge chicken in flour, and brown in pan, adding more butter and oil as necessary. Set chicken aside. Add a bit more butter and white wine to the same pan and sauté onions, carrots, and peppers until they begin to soften, then add garlic and mushrooms. Cook for another minute or two, until the wine reduces by half, then add tomato paste and stir quickly to incorporate. Add everything to a large pot.

To the pot, add tomatoes, chicken stock, tomato sauce, Italian seasoning, pepper flakes, sugar, paprika, salt, and pepper. Stir together then add chicken to the pot and bring to boil over high heat. Then, reduce heat to medium-low and simmer for about 25 minutes. When chicken is cooked through, remove pot from heat, and remove chicken from pot. Stir in parsley and green onions and cover to keep warm. In the meantime, boil the fettuccini and let the chicken cool a bit. There are two options here; either serve the chicken on the side of the pasta and sauce, or pull the chicken off the bones into pieces and stir into the sauce. Then serve over pasta. Either way, top the pasta and sauce with grated parmesan.

Green Dip Sauce

1 bushel of Cilantro7 leaves of Mint3 oz. of Feta cheese1 small potato (boiled)1 can of Evaporated milk1 small Jalapeno1/8 teaspoon of black pepper1/4 teaspoon of salt

Put the evaporated milk into a blender adding the cilantro and leaves of mint, the blend. Next, add the feta cheese and the small boiled potato, taste to judge salinity because the brand of feta cheese you use will affect this. Lastly, add the jalapeno and black pepper, and then blend again.

Korean Hot Pork

Chicken Saltimbocca

Ingredients

1 (7oz) boneless chicken breast1 thin slice of prosciutto ham5 button mushrooms1 cup of heavy cream1 teaspoon of butter1 tablespoon of canola or olive oil1 small bag of fresh spinach1 cup of water2 slices of provolone cheeseSalt and pepperDirections

Lightly salt and pepper chicken and place in oven, cook for 12-14 minutes at 350 degrees or until the fattest part of the chicken temps at 165 degrees or higher.

Cut or chop mushrooms, sauté in pan with 1 tablespoon of olive or

canola oil for 2 to 3 minutes reduce heat then add 1 cup of heavy cream, dash of salt and pepper let simmer (extremely low heat) on stove till thickens.(usually time chicken is done)

Add 1 teaspoon of butter, 1 cup of water, and a handful of spinach to sauté pan over medium heat. Sauté spinach till it wilts down then add prosciutto.

Remove chicken when cooked place prosciutto then spinach onto chicken cover with 2 pieces of provolone cheese place back in oven just long enough for cheese to melt then remove and place on dish. Top with mushroom sauce and serve.

CORNED BEEF AND CABBAGE6 weight oz. Sliced House Brined Corned Beef 6 weight oz. Mashed Potatoes 4 weight oz. Blanched Cabbage 2 volume oz. Irish Parsley Sauce Pinch of Chopped Parsley

Heat a sauté pan with reserved corned beef cooking stock. Add blanched cabbage and cook until just soft, then add sliced corned beef and heat through. Pipe mash on large round at 11:00 then pile drained cabbage next to the mash. Lay corned beef up against mash and cabbage then ladle sauce over corned beef. Lastly, garnish with chopped parsley.

In a pan sauté garlic and onion with butter. Add flour and form roux, should be very thick. Mix base, water, and cream and slowly whisk into roux. Bring to simmer and boil for 10 min.

New England Clam Chowder

2 pounds of potatoes (peeled and diced)1 jumbo onion (diced)Half a head of celery (diced)3 oz. of butterHalf a teaspoon salt1/3 teaspoon of white pepper1 dash of cayenne pepper1 ¾ cups of flour40oz. canned, chopped clams (total amount of liquid and clams) 1 qt. heavy cream or half & half (interchangeable)

In large pot bring water to a boil, add potatoes, and cook potatoes until just when you can get a fork through them. Any longer and they will not hold their shape in soup. You may start the potatoes the day before, just cool them in cold water and chill over night in a bowl.

Drain clams, saving the liquid for later in the recipe. In another pot, melt butter over medium heat, when melted add celery and onions. Cook over medium heat

until the onions are translucent. At this time, turn off heat, add seasonings and mix. Then add flour, mix thoroughly and when combined, add drained clams and mix.

All the previous steps in the recipe may be done the day before, just chill till next day.

In a large pot, place the clam and flour mix with two cups of cream. Then, stir to loosen and mix together. Over medium heat, stir while making sure to scrape the sides and bottom and when soup starts to simmer and get thick add one and a half cups of clam juice. Again, stir until a simmer, then soup should thicken again.

At this point, add cream and clam juice little by little, until the right consistency is reached. Between each addition bring to a simmer. The soup only thickens at the simmer point, if you miss this important step your soup will be to runny.

When your soup is at the right thickness, serve hot and steamy. Don’t forget the oyster crackers.

Beer is a great compliment to a variety of foods, from steak to pizza. For your next dinner party or restaurant visit, remember that beer also pairs

nicely with chocolate and desserts. “Some people assume that only wine pairs with chocolate. I think beer makes a better pairing than wine because of its broad range of aromas and flavors,” said John-Michael Holas, a member of the North American Zone Quality team who has organized beer and chocolate pairings. “In addition, beer’s carbonation helps cut through chocolate flavors, refreshing your palate,” said Holas. “Beer is a great match for dessert,” said Gaspare Bonventre, Zythologist for the Fort Collins Brewery. “With a range of flavors and styles, it can be served alone as an after-dinner drink or paired with anything from fruity desserts to chocolate,” said Bonventre. Typically a beer with a light flavor such as a Bud Light will compliment simple, lighter desserts, such as pies, pastries, tarts, or even fresh fruit. “A lighter beer makes a wonderful palate cleanser, a perfect alternative to the typical sorbet,” said Adon Allen, Zythologist for the Baldwinsville Brewery. So keep that in mind when a loved one breaks out their special apple pie after the family holiday dinner. In general, when pairing beer with dessert, it’s best to select harmonizing flavors to ensure the dessert does not over power the beer. Zythologists suggest trying different beers and chocolate pairing to see how the flavors work. If chocolate is what you crave, consider trying a darker beer, such as Michelob AmberBock. A chocolate dessert, however, can pair well with a number of beer styles. Stella Artois, in particular, pairs nicely with a variety of chocolates.

Pairing Suggestions:

For rich desserts consider AmberBock, Budweiser American Ale, Beck’s Dark, or Michelob Porter. For a sweeter dessert consider Michelob Ultra.
